Great suggestions Ken. Only thing you lost me on is the use of the food processor it's true making dough is therapeutic and I just love the way it feels in my hands... And also admittedly if I used a food processor I would feel like I were cheating lol everything else you said here I am absolutely going to implement! Thank you so much again! You are my pie guru❤️

Love my food processor makes things so much easier and saves my bad shoulder. I like to make up many pie dough and put in the freezer great for surprise gathering's

Hello. Your videos are inspiring. Im tryna bake mini small pumpkin pies. How thick should the pie crust be? Because my crust is kinda thick. And do i bake them as long as a normal standard pies? Do you have any suggestions on books for mini pies? Thank u for ur videos.

Hi Tamara - The thickness of the crust should be more or less the same as for a "regular" pie...like 1/8-inch thick. Baking times will vary, depending on the type of pie, but generally speaking they'll take 1/3 to 1/2 the time of a full size pie. I know there are a couple of books out there on mini pies, but I don't own one and so I don't have a pick for you. Be sure to subscribe to our channel because I have a class on mini pies coming up in the next six weeks and I'll announce it here.

Would it be a good idea to measure flour (or any of the ingredients for the crust) by weight vs volume?

Hi Maureen - You can measure by weight, and some bakers do, but I'm always a little hesitant to mention it because I don't want home bakers to think that a scale is required. Pie making already strikes fear in the hearts of many, and I'm afraid mentioning a scale can create another mental obstacle. That said, a scale can indeed come in very handy when you're measuring flour, especially if your goal is ultra precision.

I was wondering if there would be a problem using flour that has been in the freezer to prevent weevil? Also would old flour cause your pie crust to be really dry or is that a fat distribution problem on my part?

Hi Karen - Keeping flour in the freezer is a good idea; it will keep there almost indefinitely. The fridge is great, too. As for the dryness, that's probably not enough fat distribution and perhaps too little water.

I have a question about apple pies. I like them full and they do cook down. How can you fill an apple pie but not have all the juice dripping and burning in the oven? I really like your videos, your tips are all tried and true. I love the measured bags idea because flour is so messy, and usually in a big cumbersome container. Thankyou!😀

Hi again Northern Girl - There's not a lot you can do about the apples cooking down. They just do, and it does indeed create a lot of juice. If you watch other videos here, you'll notice that I typically put fruit pies on a parchment-lined baking sheet. I'm not big on spending the weekend scraping good off my baking sheets. Lacking parchment, foil works well too. Remove the pie from the sheet as soon as it comes out of the oven or all the good will make it stick to the foil/parchment as it cools down. Hope this helps. I just keep it in the fridge. Crisper drawers tend to be more humid and that's not necessarily ideal.

Hello my friend and thanks for your comment. That depends on what type of pie you're talking about, but my best advice is this: if you absolutely need to save a pie before baking, I would keep the shell and filling separate and refrigerated until just before baking. Again, depending on the pie, this would only require 5 to 10 minutes of assembly time before putting the pie in the oven - just enough time for the oven to preheat. If you assemble the pie the night before, your bottom crust is going to absorb moisture and become soggy. Ken
