Thanksgiving is right around the corner! If you are on a budget this is a great flavorful meal to make! This menu includes chicken and cornbread dressing, gravy, chicken breast, corn pudding, greens, blackeye peas, and apple tart or apple pie.

Note: This budget assumes that you will have some items in your house like pantry staples like flour, sugar, vanilla extract, spices, garlic, bouillon power, and onion. Basically things that you don't buy every time you go to the store. Considering that this meal includes very common items, you may even have a few items in the meal already in your house beyond pantry staples. Planning early and shopping at store like Aldi, discounts stores, or sales can greatly decrease the cost.
Feel free to add turkey or ham to this meal. Closer to the holidays stores practically GIVE AWAY hams and turkeys.
I used 3 bundles total of kale and turnip greens b/c they were only $1.24, but collards greens can be used. The collard greens were $2.50 per bundle, so this was cheaper.
I mostly purchased store brands to keep the cost low, but I at times can get name brand on sale and will purchase that. I live in NC. Grocery prices will vary. I spent $39 at the store for the groceries. Then used a few items I had at my house to make this $50. By eliminating things like cheese ( like in Mac and cheese) you can indeed get this meal for this price (give or take a couple dollars) in certain areas. This could feed a family of 5 ( 2 adults 3 kids) comfortably.

Corn Pudding
1 can cream corn
1 can kernel corn drained
1 1/2 tbsp cornstarch
2 eggs
1 tsp vanilla
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 cup sugar ( add up to 1/2 cup for sweeter corn pudding)
4 tbsp butter
1/4 tsp salt
1/4 cup evaporated milk or cream
Ingredients
Cornbread
3 packages cornbread mix
2 eggs
1/4 cup oil
2 cups milk
Broth
chicken- back and leg quarters
onion
carrots
celery
bay leaf
herbs- rosemary, thyme, sage, parsley
chicken bouillon
peppercorns
1/2 tbsp chicken seasoning
Dressing
cornbread
2 3/4 -3 1/2cups broth (adjust depending on how dry your cornbread is)
chicken meat
2 eggs
salt/ pepper to taste
1/2 tsp chicken seasoning
1/2 tsp chicken bouillon
onion
1 celery rib
1/2 bell pepper
herbs- sage, thyme, rosemary
2 cans cream of mushroom or chicken
Pie pastry
2 1/2 cups all-purpose flour, plus more to dust, 300 gms
1 Tbsp granulated sugar
1/2 tsp sea salt
1/2 lb COLD unsalted butter, (2 sticks) diced into 1/4" pieces
8 Tbsp ice water
Note: Even though I made a tart, there is enough apples for you to make an apple pie. The other crust is there to use for an apple pie with lattice top if desired

Forgot to give you a recipe to clean your air fryer. You can use it on large ovens also mix 1/4 cup vinegar half a cup of dawn detergent one and a half cups baking soda. Just mix it up let it sit a while and just clean. It works. Wonders on my big oven and my countertop oven. Try it. Let me know if it works. Your dinner looks wonderful.

I still clean my greens the old school way my mom & grandmother showed me with salt. It’s really easy with my double sided sink. I pick & trim first. Then submerge, layer in salt, rub and agitate, rinse and repeat until the water runs clean and the greens are squeaky clean.

You did great and you don’t have to be in the kitchen all day or prepping weeks in advance. This could easily in done in two days with an hour’s + kitchen’s work. Day 1: Crusts, cornbread, pressure cook chicken, clean/prep/cook greens Day 2: Pressure cook Peas, Finish corn pudding, dressing, and tarts

I have advised people to cut back on all of that weeks-long preparation for holiday meals. Your family will work you into the nursing home and/or an early grave with all that work. Then most willl not visit you in the nursing home claiming they can't stand to see you ill. Others will visit you on rare occasions. Then they will cook their own food or find someone else to slave for them. If you are very wealthy and have household servants, have at it. I simply refuse to keep cooking things that must be stored and saved weeks ahead of time, as well as cook all day the night before, as well as right up to the time my meal is served on the holiday. Take care of you.❤️🙏🙏🙏

Definitely my grandmother’s caramel cake, banana pudding & sweet potato pie have always been my favorites. Nothing beat homemade caramel made in her cast iron skillet even after stirring until my muscles cried.

This looks so delicious. I could eat this anytime. My birthday is at the end of October. I have had a Thanksgiving meal for my birthday dinner. Then turned around and had it again on Thanksgiving. I usually soak and agitate my greens in a large stainless steel bowl with salted water!! And then, I lift them out of the water and boy-- you should see all the sand and dirt! Never just pour the water out back over the greens because you'll defeat the purpose of washing them-- and let tell ya, sandy, crunchy greens-- are the worse😝! Thanks for an inspiring video! I don't do the swine, so this was very exciting for me!

Everything looked so good. Glad someone else is using whole nutmeg, taste so much better. You should try a little bit in mashed potatoes, as well as in roasted or fried Brussels sprouts. But add it at the end, nutmeg can burn easily. A lottle goes a long way. And I love the addition of the bay leaf as well. I like to add a little hot sauce on the greens, Louisiana style or Texas Pete. My favorite desert would be pecan pie. But that apple tart looks very good. My contribution to Thanksgiving has been banana pudding for a few years now.

Thanks for such a concise, fun to watch, down to earth cooking video!!! Everything looks REALLY good!!! I love seeing how people in other places cook and the kinds of sides they have for holidays, especially Thanksgiving. I live in south Louisiana, so I grew up eating Zatarain’s products and Camellia beans--especially Camellia red beans EVERY Monday --since both are local products. 😉 I also grew up eating my mother’s oyster dressing on Thanksgiving--which I loved, but sadly have never been able to duplicate--and never had cornbread dressing till it was served on our school lunch tray, WAY back in the day when the cafeteria ladies actually COOKED real food!!! 🤷‍♀️ I fell in love with it and begged my mother to make it, but she never did because she said she had too many other things to make. 😭 She made so many other sides I liked that I got over it. 😂 I also never had corn pudding till a few years ago when I tried Michael Symon’s Almost Famous Corn Pudding and got hooked. My mother was an incredible cook, but not a baker--she didn’t like having to measure things to be exact--so her go-to dessert was always bread pudding--we always had pieces of French bread loaves leftover, so she’d save them up to make the pudding-- and serve it warm with whiskey or rum sauce. My mouth waters just thinking about it!!! So bread pudding is still my favorite, though I do love me some pecan (“puh-cawn”) pie. Thanks again for the video. I’m going to go back and catch up on all your other ones!!! Happy Thanksgiving!!!

mariemarie, I enjoyed the comment you made concerning the correct pronunciation of pecan ("puh-cawn") pie because when I first moved here-- I was saying it incorrectly! I cracked a huge smile when I saw how you put in parentheses!, LOL! I'm actually a city girl, with a country girl appetite. And it was here in South Carolina that I was introduced to 'okra' by my pastor's wife! I would never touch the stuff, because it just was too slippery for me-- however she fried hers-- and I was hooked! Now I eat it all kinds of ways the tender baby ones raw in salads, Fresh ones with Olive oil and a little butter with onions and garlic. Takes the slippery texture right out! And with some delicious corn bread-- yum!

I sauté the sliced sweet Vidalia onions and raw sliced garlic, with fresh or frozen okra, in a high wall 10 inch stainless steel skillet. I use either 2 tablespoons of Olive oil or Grapeseed Oil, and two tablespoons of Salted butter, and let it cook on #3 for 5-8 minutes flip, and season it with herbs da Provence and celery seeds and fine sea salt

I LOVE your videos! My family isn’t as close as we use to be but these videos always make me feel like I am in the kitchen with the family like how it use to be. My favorite thanksgiving dessert is peach cobbler and sweet potato pie. I love how close ur recipes are to what I saw ppl around me use. I KNOW the food is good. Happy holidays!

Camirra, you are SO fun and informative. No one gives the inside skinny like you. One thing I always include in holiday meals are mushrooms. Budget-friendly canned. Into the dressing and in the gravy. And for a few dollars more? Dry sherry to de-glaze and cook out for the gravy--unbelievable w mushrooms. And those walnuts you mentioned: I love crunch and toasty into the dressing. Or canned water chesnuts.

Yes, I have heard about greens being cleaned via a washing machine, especially a top loader washing machine. It sounds crazy but it works, especially when there’s multiple pounds of greens to be wash. The washing machine is cleaned via a disinfectant wash before greens are put into it for cleaning. Yeah it sounds crazy but folks have done and do it.

I'm going to give you a good holiday laugh!!! When I was newly married my insurance agent came by and saw I was loaded down with a pile of greens to put up! My mom never cooked greens much less put them in the freezer. He told me I could wash them in the washing machine so to save time I went for it!!! Needless to say,I was picking green bits out of the tiny holes for a week lol! Lesson learned!!!

Try wrapping your chicken initially in the foil for the first 20 or 30 minutes then uncovering it to brown and base. The fat should render and it’ll steam in its own juices the first few minutes.

The absolute best collards I’ve purchased have been from Walmart. They were fresh, crisp, huge greens and I got 7 bunches, cooked all of them, and froze half for later in the year.

Ive found that at 350 degrees for 40 minutes in the air fryer, it makes the best whole chicken. Maybe just 30 minutes for only the breast and wing part. The skin comes out crispy and the meat is super tender.

Chef Camirra. This was great fun for me. When you said 'cook til you can't walk no more', I smiled big, because I cant walk no mo' (arthritis) but I still cook 😇. I'm 71 this year and have been cooking since I was 12, and my own mom was a good cook but nothing was magical. So (a bit like you) I slowly took over the cooking chores. With the Picayune Cookbook and Sandra Otto's Homemade (both 19th century recipes) and Julia Child on 1960s tv I learned how to cook. now Saving Money. I hope these tips come in handy for somebody out there. The liquid in canned food is perfectly edible and has the same nutritional value as the solid bits. I would have put it in my chicken stock. for Pie crust to taste good it should be at least half butter. the other half can be suet (beef fat) or lard (pork). I save all the fat trimmings from pork and beef and render them down. Bacon fat I use in savory cooking or for half the fat in biscuits. I also save all the veggie peelings cores and herb stems and collect it in the freezer til it fills a bag the size of my stockpot along with any leftover bones skin etc. when I make my own cornbread I like to put corn kernels in it and if I have canned corn I mix the liquid with dry milk powder for the liquid. I like to make Dutch apple pie for dessert! Similar to a normal pie but with a strussel topping of brown sugar, butter and flour on top. So good! I also like to use golden delicious apples. They break down so beautifully and give you that awesome “goo” that makes pie so good.

You can add beans straight from the bag to the pot if you want to but you may be needing a dentist before you finish your meal.... dry beans and peas may contain dust, dirt or even stones. I wouldn't want to bite down on a rock for the Holidays. Loved your video, my dear. You have a knack for instructing others. Would make a great cooking instructor.

A couple of suggestions for variety: You can add a couple thick slices of ham or bacon to the peas and let it simmer together for flavor and remove it after or leave it as a surprise gift for a guest 😂😂

Not a fan of corn pudding but that looked good! I like dressing but since I'm alone and almost 72, I use Pepperidge Farm cornbread stuffing and freeze portions for a meal later on.

That is awesome! for 14 ppl i think you will need to double the corn pudding and add an extra meat and more dessert. but the greens, dressing, and the rest of the meal will feed 14 ppl for a side dish.

Everything sounds delicious...but for me no can soup in my Cornbread dressing, oh nooooo! Slices of toasted bread with the Cornbread is epic. Fresh oranges or mandarins in the cranberry sauce is a must....orange jello? Heck No. Love the Apple tart idea... much better than a soggy bottom apple pie. Not a bad budget meal.

I use fresh orange in my non budget cranberry sauce. but i still use strawberry jello, its actaully really good. its taste nothing like jello. for a budget meal or any meal i can promise ppl will walk away very satisfied.
