After watching this video you will be able to use silicone moulds like a pro for cake decorating and all other types of baking decorating. In this video I used seashell molds to teach you how to use silicone molds for cake decorating but these 6 secrets can be applied to any silicone mold which are often found on Amazon, in Hobby Lobby, Michaels and many other craft stores just make sure they are food grade silicone molds. I used fondant in this video to show you how to use silicone molds but these tips and tricks can also be applied to gumpaste, modeling chocolate and marzipan.

YOU HAVE NO IDEA HOW HAPPY I AM YOU MADE THIS VIDEO. My little cousin requested me to make her birthday cake and she wanted mermaid themed. And you are using the exact same mold that I have been struggling with the past 24 hours. After 2 hours of trial and error, I can attest that candy melts only come out whole from the snail shell and maybe the starfish, small coral and seahorse if you’re meticulous about it. But I still had bubbles after tapping and shaking. 🤷🏼‍♀️

I tried candy melts in this mold once too and it didn’t work out for me either. 😂 I recently posted a tutorial on a full mermaid cake and another video on how to make a 3D mermaid tail cake topper with a 2D mold similar to the one you have in your mold if you don’t want a flat back on your mermaid tail. Hey ladybug, another wonderful video. I am going to watch every single one of them. You are the best teacher. As I said previously in another video. My question to you is how long does it take for the fondant to dry? I just bought a new dehydrator. Would this help to ensure that they dry properly? If so, for how long would I keep them in there and at what setting? Setting I am a beginner but I won't be for long. Thank you so very much!

I love your enthusiasm, you really can learn so much so quickly if you want to. I usually recommend letting fondant dry overnight unless you live in a really humid environment you may need longer. Placing the fondant on a piece of foam really helps it dry faster since the air can get to both sides that way. How quickly it dries depends a lot on how thick your fondant piece is. Thin pieces can dry pretty quickly. I have never used a dehydrator for fondant drying purposes. It could work great or it could crack from drying too fast or too long. It could also melt if the setting isn't low enough. Here is an article I found about it sunnylifemag.com/can-you-use-a-food-dehydrator-to-dry-fondant/ If you end up trying it out let me know how it goes. A safer bet is to just let it air dry at room temperature as it is more likely to dry properly this way. The dehydrator could be a nice hack though when you need something dried quickly if you are up for a little trial and error.

@@tastebakery my fondant was a bit sticky. I put cornstarch in mold AND when i tried to fill It with fondant, It didn't stay inside the mold (because of the starch. It acted as a slippery surface) It stayed in my hands. Had a hard Time placing It inside the mold.

@@bonita2004 Try putting vegetable shortening (Crisco) on your hands like lotion so the fondant does not stick to your hands. After you put the cornstarch in the mold flip it upside down and shake the cornstarch out so only a very thin layer remains. If it still slips out too much try not using cornstarch at all. Let me know if that works. 👍😊

Hi! I am happy to hear that, thank you for letting me know! It's called a fondant dusting pouch or you can cut a pair of clean nylons fill it with cornstarch where the foot would normally go and tie it in a knot. 😂

Hi, so I need to use a mold to do a crown, you say not to pick it up before it dries, but I need the crown to be able to sit around a can to make sure it's crown shaped - how would I go about doing that successfully?

You can pick it up right after you take it out of the mold and put it on the can to dry just don't touch it after you put it on the can until it dries. When it's right out of the mold it's flexible and won't break. When it dries it's solid and won't break. When it is half way between is when it willl crack and break. Like clay or playdoh. Also puts some books on either side of the can so it won't roll on you LOL

I’ve got to use a chain mould for a handbag cake, I’m going to have to put it on the cake straight away as otherwise it won’t dry in shape, do you think I would be better to use modelling paste? Thank you

I am assuming the chain is lying against the cake purse. I actually think gum paste may be best because it dries a lot quicker than both fondant and modeling paste. You may want to make a chain out of gum paste ahead of time for a test run because although it dries quicker it may be more prone to cracking or even breaking but it will dry faster so it is less likely to slide off the purse as it dries.

Hello! So when making fondant molds, they dont need to go into the fridge or anything to "form"? I can just add them onto my desserts just like that? So much quicker than waiting for chocolate molds to harden!

Hi! If you are putting fondant molds on a flat, horizontal surface (basically somewhere gravity won’t warp them) then yes you can put it right onto your desserts and they will harden as they dry. If you are putting them in any other position they may have to dry first (drying time depends on how thick they are and the humidity where you live) or they may bend and warp as gravity pulls on them before they are completely dry. Just use your judgement it will depend on the position and size of the fondant mold. Think of fondant like clay; it starts as a solid flexible form and hardens to an inflexible form once it has dried. Hope that helps! 👍😊

Yes, although fondant does not work for the cakesicles themselves you can always put fondant decorations on top of them.👍😊 I think chocolate tastes better but fondant molds tend to be more detailed and easier to make multicolored molds when the colors need to stay separate since the fondant does not start as a liquid.👍😍

If you go to Google Shopping and search Wilton silicone mold - sea life you will see the mold I used in this video under Joann Fabrics and can add it to your Joann cart from there. If I were you I would check online at joann.com and see if it is available at a store near you and buy it in store because they may accidentally send you the wrong mold.

You are very welcome! I do not recommend these particular molds for melted chocolate because they are made for fondant, gum paste, etc. so when you try to get the hardened chocolate out they usually crack because the molds are flexible and thick so they flex the hardened chocolate and crack them (you may be able to get a few of the shapes out of it like the starfish but it’s not ideal). Although a lot of chocolate molds are flexible they are super flexible and really thin so you never flex the hardened chocolate you only flex the mold around the hardened chocolate to get it out by turning the mold inside out. You can also use hard plastic molds for chocolate. Hope that helps! 😊👍

How long do you leave them in the mold before unmolding?

You take them out of the mold just as soon as you finish putting them in. It’s just like Play-Doh or clay, you are just “imprinting” the fondant while still flexible. The sooner you take them out of the mold the better because we want the drying process to happen when the mold is sitting out to dry and done being handled. 👍😃

Hi! I have never tried that but I could see how it could. Fondant is like playdoh so it will get a little harder as it cools which could make it easier to come out of the mold. You would definitely want to cover it with plastic wrap to keep it from drying out though. There is a chance that it being cooler and harder may make it easier to break while getting it out of the mold. If you try it let me know how it goes. I'll have to try it sometime. Good thought! You are very welcome! Most people buy fondant at craft stores (Michael’s, JoAnn Fabrics, Hobby Lobby), Walmart in the craft section or bigger grocery stores usually in the baking section by the sprinkles, etc. I used Satin Ice brand fondant in this video because I like how it tastes. I bought it at Michael’s craft store but any fondant will work just fine for this purpose. Michael’s has a nice assortment of different sizes and colors of fondant so I suggest going there if you have one near you so you can buy just a small packet and see how you like it. They also usually have a 20% off coupon on their website as well. Welcome to the world of edible decorating! It’s so much fun! I needed this exact video! If using these for cupcake toppers, could you put a lollipop type stick in them before they dry? I don’t have much experience with fondant so I’m not sure how to guarantee they will remain standing up on top of the cupcake. The toppers need to be added at the event after frosting. Thank you!

@@tastebakery they will be regular size cupcakes with a good amount of buttercream on top. I’m using the pink mold you used. I was thinking even toothpicks but I wasn’t sure it would be sturdy enough.

@@baileyteschendorf2598 It sounds like toothpicks would not be long enough and can sometimes cause more problems because they are so small sometimes they just cut right through buttercream and cake. Is there a way for you to get one sample cupcake ahead of time?

@@baileyteschendorf2598 In this situation I usually use a mermaid tail lollipop mold (where there is a space for the lollipop stick) and make the mermaid tail out of candy melts making sure they are long enough to push through half of the cake part of the cupcake but not too long that they reach the bottom and cut the cupcake in half and not too long that the mermaid tail is sticking too far out of the cupcake where you can see the stick and you do not get the support of the buttercream. But if you want to stick (no pun intended🤓) with fondant I would try making one tail and see if it will stay in the buttercream of the sample cupcake (after it’s been sitting a bit since the cake toppers won’t be put on the cupcakes right away) so you don’t have to mess with the lollipop sticks. If you do find you need to use the lollipop sticks then yes you can push a lollipop stick in the middle of the bottom of the tail. I would try to get the stick about 1/3 of the way up the base of the tail (not including the neck and tail) but make sure not to push it too close and definitely not into the weak point of the tail (the narrow part right under the fin). You also have to make sure you don’t push the stick out of side of the tail and try to avoid the fondant getting distorted in the process. The best way to do this is to cup the tail in your left hand (assuming you are right handed) and put a little pressure with your fingers on the side of the mermaid tail also supporting the back (flat side). This will help you feel if you are off track with the lollipop stick as you push it in so it does not come out of the back or front and it also helps you fight back a little from the mold being distorted. Though, make sure you do not put your fingers on the front of the mold or you will lose the details of the scales. “Screw in” the stick by twisting it ¼ turn to the left then the right repeatedly which helps it go in easier so the mold doesn’t get squished. Make sure you insert the stick immediately after the tail comes out of the mold and make sure it dries COMPLETELY (at least overnight depending on the humidity where you live) before you pick it up. I would never pick it up from the stick, neck or fin. (I would also make extras in case any break.) You are going to have to cut the lollipop stick to the correct length, remember to do this before putting it in the tail. I have not had luck using candy melts for these molds most would come out cracked maybe it’s the brand of candy melts I use. I use Ghirardelli brand because they taste so good. I’ll have to try out some other brands. Thank you so much!!👍😃

I am using chocolate and I too am having a devil of a time getting the tails out from the mold without breaking at the narrow part. I gave up on the sea horse and smaller more delicate shells because they do not come out in one piece. Am I doing something wrong?

The problem is that you’re using chocolate. These flexible molds are only good for fondant or gum paste. You’re going to want a chocolate mold for chocolate, something that is not flexible.

You can buy a dusting pouch at a craft store or you can use what I used in the video which is a cut off nylon...unused of course. 😂

I have made them up to a month in advance stored in an airtight container after they completely dry with no problems but I am sure they would last much longer than that.

No, gum paste holds up well in the refrigerator as long as you don’t put it in the refrigerator before it is completely dry.👍😃 Also, the only time I ever put gum paste in the refrigerator is if the cake it is already on has to be refrigerated otherwise there is no reason to refrigerate gum paste.

Oh no worries it’s really simple. If you are sticking it to the side of the cake you just put a little buttercream on the back and it will act as glue and stick to the cake.👍😃 If you are putting it on top of the cake and need them to stick up you can put a dollop of buttercream behind the mold or stick it directly in the dollop (you may need to let the cake chill in the fridge so the dollop hardens a bit for it to stick up). I have never tried this but I think it's worth trying. The butter may change the color a bit so if you want to try butter Land O' Lakes unsalted butter is not very yellow so it's a safer bet. Let me know how it goes and if you have any other questions 😊 (p.s. If anybody readling this comment has tried this with butter please let us know how it went. Thanks!) One of my subscribers reported back after trying it with coconut oil and said that it wasn't as gold as she hoped. She said a slight film covered the drip and when she scraped it a bit then it was golder. She thought maybe she didn't add enough gold dust. I have not tried this but my guess is that she warmed the coconut oil to make it liquid so it looked good until it cooled again and coconut oil is white at room temperature so I think it turned white and muted the gold after it cooled. Does that make sense? Maybe try mixing the gold with the coconut oil or butter as a solid at room temperature before warming it to make sure it is gold enough in it's final solid form. I have not tried this so I am just playing a scenario in my mind so I could be completely wrong.😂

If I am understanding correctly I think the problem is that you need to “scrape” the fondant off of the flat part of the mold. There should only be fondant inside the 3D, shaped deep molds. (Like how an ice cube tray works.) Does that make sense?

I have a sea-theme cake to make in 3 days and I started preparing the mold shapes today, using gumpaste. What can I say... I took so much care and effort - I even made two-tone corrals in a coral colour. Even though I dusted the mold well with cornstarch and left them out to dry for hours, the corrals broke, and I had to glue the pieces with edible glue. It was the first time I'd used Wilton silicone molds. I wish I had sprayed non-stick grease instead of cornstarch. My greatest worry now is, how on earth am I going to lift them up - overturn them and stick them to the cake? Sorry guys, but personally don't recommend this mold!!!!

I am so sorry this happened., how stressful. Those coral molds are so narrow they do break easily. I am not sure if this eases your mind at all but if you put the coral pieces against buttercream on the cake the buttercream will act as glue and you can put the pieces on the cake separately just right next to each other and it looks as though they are one piece. If you are puttting them against fondant same thing but as you probably already know you have to wet the back of the mold with water or edible glue. Hope this helps but I understand you not recommending the mold to others. They don’t sell this particular mold anymore and have replaced it with another sea life mold, hopefully that one works better.

I use these moulds on a weekly basis, perhaps you didn’t add any cmc/tylose to your fondant? It depends on what fondant you used too, but the only thing that isn’t a variable is the moulds, they’re fine.

Yes you can use gel icing color such as Wilton and mix it with a little Everclear, vodka or lemon extract to thin it out making a paint consistency and paint it on the fondant and let it dry. It should dry pretty fast because the alcohol evaporates pretty quickly.👍😀

You can try using buttercream in an extremely flexible silicone mold by freezing the buttercream while it is in the mold and peeling away the mold without putting any pressure on the buttercream. It will most likely crack but it is worth a try. Let me know how it goes.👍😀

@@hershekissed I do not know what the candy decorations are made of. I have never used gel food coloring but I would imagine it would work similarly to gel icing color unless the consistency of the gel food coloring is more liquidy which may vary by brand. Just make sure to taste it, some brands and colors (especially red and other really dark colors like black) can taste bitter. I use Americolor which can only be bought online or Wilton no taste red.
