How do you like your steak cooked?
Results:
Well done: 163F (16% loss)
Medium Well: 153F (12% loss)
Medium: 143F (10% loss)
Medium Rare: 133F (8% loss)
Rare: 123F (5% loss)
Blue Rare: 113F (2% loss)
As a rule of thumb, fattier cuts can be cooked to higher temps while leaner cuts more rare.
Note: these steaks are all sousvide meaning there was no carryover (carryover is the additional rise in temp once taken off the heat source which ranges from ~10-20F degrees). Meaning if you want a medium rare steak as seen in this video (using a pan or grill), you will need to pull the steak off the grill 10-20F degrees prior to 133F degrees.

I grew up with a “well done” type of family. I had an obsession with Gordon Ramsay cooking videos and it’s the only reason I tried medium and medium rare cuts. Best choice ever, I love the look of disgust my family gives me when they see me bite into a medium rare steak

Depends on the cut. Ribeye caps do well up to 135F (mediumish) Filet Mignon around 131 or so. Leaner cuts, lower temps for sure. Regular ribeye (not the cap) is good anywhere between 130 and 135, depending on the fat content, more fat, higher temp.

From where I grew up, everyone eat well done only here, anything below it, we perceive it as still "Raw". Would love to try medium rare in a western steakhouse one day, but it is not cheap 😌

You must've had a fiorentina steak, then. It's so good, isn't it. Here in Italy there's this common sense that every meat under well-done is literally raw. As a blue rare to medium rare type of guy, it hurts me so much.. everytime my family is making steak I have to discuss with them. At least here in Florence they serve excellent blue rare steaks.

It's beef that's been lightly seared so there's just a tiny bit of cooked meat and a bit of a crust, sliced really thin, and served in some sort of sauce that I forgot with shallot paste and things like that. I'd like to see you make that, I've been wanting to learn how for a while.

It is excellent. Obv the steak is warm you usually heat it to 125 or so and just sear the outside. Takes about a minute on each side, plus you retain all of the texture of the muscle and most of the hemoglobin

My dad had a Russian buddy who would order... Either his steaks or his burgers, can't remember which, as just straight up raw. When he was asked exactly how 'rare' by confused servers, his response was, "I want you to put it on a plate, and walk past the grill." And the funniest part is, it's not an anecdote like "I want to hear it mooing" he meant it seriously.

I didn't get it for a while because family from out the US so we're bred on well done, but living in US I'm the only family member to want to understand the different cuts and cook, never understood medium rare but that size difference compared to the amount of juices lost, this was one of the coolest side by sides I've seen, my man can really cook! Honestly, I grew up with Well-Done, and despite people saying it's the worst, she cooked steak pretty well nonetheless. Medium-Rare is good too, honestly anything above Blue-Rare is a win for me.
