Striking up conversations with strangers takes practice but in time you get good at it. You got to be quick witted and always smiling. I do it a lot now, it's kind of a hobby for me and a way to brighten my day and hopefully for others. I just had several people laughing with me in the line at the grocery store the other day. I work as a cashier and the chairs we have are terrible, except you can lean back just the perfect amount in order to be more relaxed in a conversation. I do it all the time and not just with women and it really works wonders. You relax and at a counter people won’t lean in, so you create more space between the two of you, which normally is a bad thing, but in this case it’s great, because you usually don’t have the time to get accustomed to the customer. So what you do is create more space, which subconsciously gives both of you more time to answer and because you are more relaxed by leaning back the other person/people will feel that and do the same, thus making the conversation more organic.

Consider also the way Captain Kirk in the original Star Trek sits in the captain's chair: William Shatner affects exactly the same kind of casual confidence. Always worked for me.
