7 Egg Dishes, From Octopus Eggs to Ostrich Eggs | Around the World

Great Big Story

Great Big Story

3 жыл бұрын

Not one chicken egg was cracked open in the making of the latest episode of “Around the World.” Instead, Great Big Story senior producer/egg connoisseur Beryl Shereshewsky talked to seven people in seven countries to find out what other kinds of eggs they like and how they make them. In South Africa, massive ostrich eggs are what’s for breakfast, and they’re hard to crack. Teeny, tiny, juicy snail eggs are an expensive treat in France. In Japan, octopus eggs are a delicacy, and duck eggs are the main ingredient in a yummy tea in Indonesia.

The way Indonesian made it is different tho. They use a type of sand (?) and LOTS of salt, they mix sand and salt together, and they use the mixture to surround the egg (I hope that makes sense, lol). That's why there's a raw salted egg duck (need to be boiled first) and cooked version. I learnt the way to cook it when I'm in highschool. CMIIW or have other recipes. In terms of preserving, I think the salt helps a lot.

Here in the US, we use Emu eggs quite a lot in the food industry. Especially when it’s in a setting where there is a cafeteria type situation. There are several good emu farmers in the US and they’re actually quite easy to find and purchase from, and they end up being a cheaper and a more nutritious option to chicken eggs. I’ve worked in two cafeterias where we used emu eggs on a daily basis. We used them for baking as well as for typical meals. They’re especially nice when you have an omelet station, because you can beat up two eggs and keep them in an iced pitcher...they’re also great for French toast, quiche or frittatas. When you have to make 200 loaves of enriched breads....like challah, or 100 sheet cakes and 500 cupcakes they’re also extremely convenient. ✌🏻🥰😊

Cool eggpisode Beryl! 👏🏽🍳 Did you know that Ostriches have the biggest eggs of any bird? They weigh around 2kg each, which is over 20x the size of a chicken’s egg. But in relation to the female’s body weight, these eggs are the smallest in the avian world. Side fact: The female alpha does have a staggering survival strategy for her eggs. You should check it out, it's really smart!

It's amazing to see how different creatures' eggs are eaten around the world and how people lavish on them on certain ocassions or on a day-to-day life, appreciating the taste and richness of the nutrients they provide. Here in Nagaland, North-East India too, ant egg dishes are savoured with love and appreciation for its richness. We also eat bee larvae cooked almost the same way as ant eggs besides honey. I'd love to try the different eggs introduced in this video, sometime in the future. Great work, team Great Big Story! 💕

I LOVE salted duck eggs. Its very common here in Malaysia although the preserving method might be tad different but in reality there are many ways to make salted duck eggs. If you happen to tour the wet market in Malaysia, whenever you went to the shop that sells egg you will notice packed eggs, usually 6-8 eggs per pack but could also be bought in bulk. But what makes them different and stands out is the black coating around the egg (Most salted duck eggs in Malaysia used a method that used coconut ash as it was much easier to commercialise). Trust me, these eggs would always, ALWAYS be next to quail eggs in markets. Salted duck eggs are soooo good that it could make a plain rice porridge don't taste so bland and boring (perfect when you're broke). The best quality eggs would have light greenish blue shell and if you crack them open, the yolk would be a vibrant orange. I learned this from an old Chinese lady that lived in my neighborhood. Hope this bit of information will help you if you ever wanna try salted duck eggs ❤️
