Today’s video it’s a fun but useful one. It’s all about beans and gas. We’ve all heard the wives tale and maybe even experienced personally how beans can cause us to be bloated or gassy. Sometimes this can be a really embarrassing problem. So embarrassing in fact, that people decide they never want to eat beans! Well friends, that I must say is a very poor decision. Beans and legumes are an important part of the Mediterranean diet, which has been found to protect against heart disease, dementia, cancer, and other chronic illnesses. Beans in fact are the only single food that has been linked to a longer lifespan. In this study, legume consumption was the most important predictor of survival in people aged 70 and older.
So, we really should try to get beans in our bodies every single chance we get!
Here we go, 10 ways we can decrease the bean farts.

Number one: 02:58 Start slowly. Beans contain fiber, and if we’re not used to having fiber in our diet our G.I. tract has difficulty adjusting, and we can get problems. This 2011 study published in nutrition journal, titled “perceptions of flatulence from bean consumption among adults in three feeding studies” took a group of subjects and Fed them half a cup of beans daily for eight or 12 weeks. Participants were part of three separate but similar clinical trials designed to investigate the effects of daily been consumption on markers of heart disease risk. By the way all three of those studies showed significant reductions in total cholesterol and LDL cholesterol concentration in the timeframe studied - so tip - if you’re wanting to lower your total cholesterol or LDL cholesterol - eat more beans! Anyways, back to beans and gas - most of the study participants reported that bloating and gas symptoms started to decrease by week three, and continued to decrease between weeks three and eight. The study concluded that “ flatulence will decrease overtime if beam consumption is continued, and that the nutritional attributes of beans and the diet outweighs the potential for transitory discomfort.” So, moral of the story, start slow and increase gradually depending on how you are feeling.
Number two: 04:19 try a variety of beans to see which ones you tolerate best. Some people can tolerate one type of beans, and not really tolerate other types.
Number three: soak your beans. 05:10
Number four: 06:01 soak and/or cook your beans in alkaline water. This can easily be done by adding a tiny amount of baking soda to the water, and studies show this decreases oligosaccharide content.
Number five: 06:30 sprout your beans. I know, this takes time, but may be worth it.
Number six: 07:09 Cook your beans with Kombu. Kombu, or Saccharina japonica, has alpha-galactosidases - the enzyme that breaks down oligosaccharides - the enzyme we don’t have. If you’re a fan of canned beans, some companies sell their beans after cooking in Kombu. I have no affiliation with this company, but Eden Foods is one brand that cooks their black beans with kombu. There are some other additives that have been passed down from generation to generation in certain cultures - these reportedly decrease the gas potential of beans - things like the indian herb asafoetida, the mexican herb epazote, cumin, and ginger. Add them if you like, but there's no real scientific evidence they work.
Number seven: 08:07 Take an over the counter product like Beano - it's basically alpha galactosidase - that enzyme that breaks down oligosaccharides - that enzyme we don’t have. Research shows it DOES work when it comes to preventing gas from beans. This study, from 1994, was a double-blind crossover study, where they fed everyone meatless chili. One group was given beano (alpha galactosidase), and the other group was given a placebo. They found a significant decrease in gas in the group getting alpha galactosidase. The study concluded that: “Oral alpha-galactosidase solution is efficacious, at least in some patients, for the prophylaxis of gastrointestinal intolerance of oligosaccharides.” So, there you have it. MOST people, should be able to tolerate beans after taking alpha-galactosidase.
Trust me - it’s worth it - eating beans is such an important part of a healthy diet! I really hope this video helps you find a way to successfully incorporate more beans into your meals. She is an M.D. and has references for what she advises: 1. Start slow - 1/2 cup per day. Flatulence will decrease between 3 - 6 weeks. 2. Try different beans to see which you tolerate the best. Chickpeas have the least gassy chemicals, yellow split peas the most 3. Soak you beans 8 - 12 hours before cooking. Don't cook with the water you soaked them in. 4. Soak or cook in alkaline water - add 1 tsp of baking soda per cup of dried beans 5. Sprout your beans 6. Cook your beans with a strip of kombu - a seaweed that has been digestive enzymes in it 7. Use a product like beano - enzymes that digest the gassy chemical

8. Add a small carrot to the beans when boiling. Fish it out when done 9. Cook with ginger 10. Cook with garlic. This one really works

I add all sorts of herbs and spices and vegetables to mine when cooking. Including those 3. Other good ones include turmeric, cumin, coriander (seed and leaf), rocket, celery, fennel (seed, flesh and leaves), zucchini, onion/leek, mustard seed and Chinese liquorice root. Yum!

The doctor in the video did not mention carrots or garlic. She mentioned ginger, astofeida, and a german herb, but said there is no scientific evidence they work.

Thanks for mentioning that Eden cooks their beans with Kombu. Good to know when convenience is desired. I tried baking soda and the beans I cooked not only were mushy, but they tasted very salty; I had to toss them. I make a great hummus with sprouted garbanzos though. After sprouting I cook, and drain them, I toss them in cool water to dehull, and use some of the cooking water I’ve set aside in the hummus recipe (along with lemon juice and tahini..sometimes dill, other times roasted red peppers). Way better than store bought. I’d add that it makes sense to soak dried beans, after all they’re only going to absorb water as they eventually will if put dried in the cooking water..Less energy use with the shorter cooking time too. I don’t see that there’d be any more nutritional loss. Have you ever cooked garbanzos? The cooking water is somewhat cloudy either way-dried or soaked.

This was a useful video. I used to be able to digest beans fine, but now they cause me gas pain and digestive issues. Beano has helped.

You left out a simple but effective trick to eliminate the GAS problem: BOIL your beans vigorously for ~1 Min. Rinse, go back to normal cooking from there - and you're in GAS-FREE business! Bon appetit! :-)

Why would you want to decrease the oligosaccharide content in beans? They feed our precious gut bacteria. You'll feel gassy initially, but you'll get used to it. And this is a good thing. It shows that your gut bacteria are getting better at digesting them And it improves gut bacteria amount and diversity as well.I used to get gassy from beans, but now I'm so used to it there's no rumble and tumble in my stomach.

You left out a time test way to eliminate gas while cooking beans. While soaking and cooking the beans you NEED to put a ladder in the pot. Just a small ladder but it has to reach the top of the pot. I know it sounds strange but if you think about it you'll understand. You have to make a way for the little farts to climb out. 😁 Okay I tried the baking soda while soaking a cooking my post of beans. IT WORKED! I just wish you had told us it would cut the cooking time down from 1 1/2 hours to about 15 minutes. I also wish you had told us to turn the heat down a little to prevent boil over. I NRVER would have guessed a little baking soda would make such a huge difference. LOL Dr. Van Dyken you could have saved me a big mess. 🤐😬😮😮😄

Any data on the amount of chewing involved before swallowing being a game changer? I'm of the opinion that most of us are almost in a race to devour each mouthful, much to our detriment. Another thing, I often consume mine with some oats for example, that I have soaked overnight with an acidophilus capsule. Throwing in some herbs like ground up fennel and cumin seeds are something, if not that I swear by, but practice on a regular basis.

Jason calton books say boiling your foods veggies and others loses like half of the micro nutrients not sure about beans. You said the oligosacharides don't get lost when soaking at least according to some studies. Are oligosacharides the only type of nutrients beans provide? Do they include other minerals and or vitamins?

Boiling for 1 minute, the changing the water is supposed to wash away some of the oligonucleotides.

Dr. Gundry recommends soaking the beans and changing water often ; pressure cook ( I do for for 45 minutes). Dr. Gundry books do work. How to cook beans and nightshades (and shield yourself from lectins, too)

You explained that cooking beans in water made alkaline by adding a small amount of baking soda will soften beans more quickly and help with the oligosaccharide-flatulance issue. You did not explain how these results come about. David Lixenberg

Why no mention of lectons? Beans must be soaked for days then pressure cooked to make them safe. I prefer just to have a steak
