Awesome job dry aging your beef I did not know that it lost that much weight as it aged. When you pulled it out of the sous vide And seared The beef and cut into it my mouth was watering it was cooked to perfection

Thanks Tommy. Interesting process. Next time i will make sure to have some charcoal for searing. Had no alternative now since the boys were visiting when home :)

That looks fantastic Lasse! A fair amount of loss, but I’m sure the flavor was excellent. Dry aged beef is delicious and has that deep funky flavor. So good. Have a great weekend brother!

Awesome cook Lasse, perfect steak. My only issue is all the loss. That is why I havent attempted a long dry age. Ive done 14 days before, but didnt have to trim nothing.

Thanks Kirby. I checked it during the first part of the process seeing nothing happen, so googled it amlot to make sure i had not done anything wrong in the sealing process, but it was as it should. Yes it lost a lot, but intensified in flavour so less were needed. That said we were five and finished all but ome slice so that comes to 1 lbs bought meat pp lol
