Wild boar meatballs
I used a hind leg - meat was 1.6 kg or 4 lbs
I added 400gr or 1 lbs pork fat
4 eggs
125gr crushed pork rinds (1 bag)
2,25 dl or 1 cup heavy cream
Seasoning
2 tbs basil
2 tbs garlic powder
1 tbs pink salt
1 tbs onion powder
1 tbs paprika
1 tbs black pepper
1 tsp cumin
1 tsp chili powder
Smoked at 225 for 2 hours until internal 160f
