We've been asked how sugar free hard candy is made, as hard candy is usually made of sugar. Without sugar what would you have? The answer is in this video. We are making our Nectar flavor in sugar free hard candy. Our Nectar flavor is a secret recopy from the 1800's that we got from the Mullanes candy store in Cincinnati. It was open from 1848 to 1988.

Nectar tastes like if honey was made out of fruit when you first taste it and then when you suck on it the taste becomes like you took the honey-fruit and made it into a cake.

I ordered some nectar candy a couple months ago because I was curious, and honestly was surprised by the difference in opinion on what the flavor was. My dad said it reminded him of butterscotch, my sister said it reminded her of honey, and the first impression I got was of cream soda. So if you like any of those types of flavors, go for it. It'll probably be right up your alley.

Yes! Butterscotch and honey are the 2 flavors I got from it. Very delicious. I also like the black currant, it's my favorite.

They've been making sugar glass bottles since olden days. Unfortunately people watching a movie bar fight don't always realize the "glass" is fake, and probably think you can smash a bottle over someone's head and they'll be fine.

The color of this version of nectar reminds me of the nectar syrup used in the old soda fountains of New Orleans. It's vivid pink, and tastes of almond and vanilla. Yum!

Same flavor, K&B invented nectar flavor. He didn't fully research it. Cincinnati got it from NOLA.

Actually it was in Cincinnati about 40 years before it was in New orleans. The flavor profile seems to have come from montreal. So yes I did fully research it. K&B was founded in 1905. They had it in Cincinnati since at least the 18thr s

In 1866, Isaac Lyons, a native of South Carolina, moved to New Orleans and went into the wholesale drug business. He began selling his nectar syrup to K & B Drugstores in the 1880s, who made it into nectar sodas, nectar cream sodas, and nectar ice cream sodas at their fountains'

The first artifical sweetener was actually lead acetate used by the Roman's. For obvious reasons it didn't stick around.

As long as the artificial sugar cane naturally from a plant aspartame is a chemical and is cancer if you drink diet coke your it doing yourself any favours by drinking this and thinking it's healthy

Yes, and just like the romans the usa food industry do know how to f up your health. Aspartate, sucralose, manitol, maltodextrin, isomalt are all very bad artificial sugars that should never be consumed by normal humans. Use allulose, stevia, monkfruit, or erythriol. Not all the toxic artificial sugars.

Very entertaining and informative videos as always. So many people forget candy was originally made by hand in small batches (and still is thanks to folks like you) and not mixed, dispensed, pulled and wrapped by automated machines in a huge factory

Is Isomalt easier or harder to work with? Again, thank you for the entertaining and informative videos, will consider visiting you if I ever travel near your area (I'm Brazilian)

isomalt isn't as sticky as sugar (which mostly comes from humidity or is added during some processes) which means it is harder to use for image candy and it is harder to cool without causing it to break, meaning it requires almost constant stirring in order to not cool down into a chunk with almost liquid core. It is very good for drops as the shattering effect and non-stickyness actually makes it easier for that job but hard to work with for image candies: source, I worked with both substances in a summer job back when I was a kid, although the 'image candy' we did was nowhere as elaborate as the ones done in here.

At least for drops I found it easier to work with then sugar. And I've never made image candy with it just because of the amount of waste but I do make candy canes with it every year and I find them no more difficult to work with. I want your third different types of ice a malt and I just found a good one?

@@LoftyPursuits Did you ever consider making Isomaltulose candy? It's also very similar to succrose, bit they use yeast to turn one of the molecules around, so that you don't get a sugar rush because your intestine doesn't pull it into the bloodstream as quickly. It's half as sweet, but still has the same energy/metabolism after it's split into fructose and glucose. Also it doesn't harm teeth, because those bacteria can't digest it. So candy you don't have to brush your teeth after ;)

You accidentally gave away part of the secret you didn’t want to give away in the rose candy video lol. I’m willing to bet the clear part was isomalt, you even said in that video that the rose candy would cost more and come to find that the same is true here.

Actually no. And we solved the issue with the rose production issues. It costs the same now. With the roae, originally we got about 15 lbs of good candy from a 25 lb batch

Well at least you use the laxative sugar replacement, not the one that makes your eyesight blurry. You really shouldn't undersell the laxative effect tho. It can get pretty bad for some people.

@@nielsf Aspartame(E951.), and probably some others too. They are in some chewing gums. Cyclamates also can affect your vision, but (at least for me) its nowhere near as bad, unless exposed to bright lights. I generally avoid any artificial sweeteners because the long term exposure to them is not really that well documented (and I generally tend not to trust some of the studies referenced), and I don't want any liver damage, or led poisoning alternatives (led used to pe a popular sweetener, before they discovered it was poison). I mean sure, in small doses they are probably fine, but i am bad at keeping track of how much stuff I eat, especially when combined with serving sizes being like half a packet and multiple foods use same sweetener or something.

@@mapu1 If you can't spell lead correctly, I hardly think that you'd be able to comprehend the results of a study and be able to determine if they'd be valid or not. It's widely understood that in reasonable doses, artificial sweeteners are perfectly fine for most people. Excluding those with phenketonuria and the like.

Anon ymus It is quite misleading to say that Aspartame causes blurry vision just because it happens to you. Negative reactions to Aspartame have been reported, but as the vast majority of people seem to have no issue with it, it is rightly considered safe. Also, what does Lead have to do with modern artificial sweeteners? Lead (II) acetate hasn't been used as a sweetener for hundreds of years, and in that time we have learned how to test chemicals for toxicity. I also find it funny how much people go on about "the dangers of artificial sweeteners", and instead consuming sugar, which SCIENCE has shown is isn't exactly benign in large amounts.

I've been watching you for a few years now, your videos are close to perfect, the slow-mo that you now implement I am very impressed with, it shows an ever self aware and improving self. nice to see. The tone of narration, the music type and volume, the narration volume. the video cuts and differing video clips and timings are all high grade. keep it up, your changing little, but when you do its the right choice. - UK viewer.

Gave this video a thumbs up because its 1.) Right to the point; 2.) Jam-packed with info while at the same time, being concise; 3.) The clips of the candy being made are compelling; 4.) The music and narration are on point; 5.) No unnecessary dialogue, personal opinions / quirks, or annoying intro / outros. I was looking for a video on making candy without sugar, but with all the trash on KZfaq, I have to commend this video, not just for its content, but its production.

I agree, narrator voice is easy on the ears. I quite enjoy the videos, hopefully some day we'll get to try some of the candy.

I remember when I used Isomalt in Culinary School for a candy sculpture. My chefs said it was one of the most beautiful they had seen by a student my age. This was explained just as I was taught, very nice job :)
