I usually use used baby potatoes with almond milk and vegan butter but I am looking forward to trying your suggestions!

I love making "gravy" from veggie stock and potato starch. With a little Real Salt. :D Thanks for the tips - now I can use my miso instead of scratching my head, wondering what I an use it for besides vegan cheese.

I have always made mashed potatoes with milk and butter, the way my mother did, but we have cut out almost all dairy in our diets so this is really helpful with the holidays coming up. Thank you for these tips!

Don't you use plant milk? You don't need to use dairy. Soymilk or fresh almond milk to me is essential.

I’ve just recently made the switch to vegan and boy am I unprepared for thanksgiving. It looks like you have really perfected the vegan mashed potato! I just recently tried to make vegan cupcakes and it was so much work to try to get them right . I can only imagine the hard work with the trial and error to get to this point so I really appreciate you sharing this . You really seem to know what you’re doing here ! I research a lot of cooking channels..but yours is exclusive. You really know how to bring out the heaven. I like the way you deliver the instructions. You also present as lovely! Wow. I am getting experienced with the instant pot now! YAY!! I tried your Ginger carrot butter!!!YUM. I also made the cabbage recipe -I am adding vegan ground meat and jasmine rice. The cheese sauce was incredible. Its been awhile since I got so excited about food!! Especially VEGAN!!! I'd love to learn some recipes for Passover ( no legumes alowed..but Quinoa is ok)..can you help?

It never occurred to me to use more than one type of potato and I’ve always been torn between which type to use. My mother always used russets yet once I started looking at recipes, Yukon gold are almost always recommended. Now I can’t wait to use both.

Hi!! First of all, thank YOU for providing several recipes that we used for Thanksgiving! They were AMAZING. Your stuffing is incredible!!! We made this recipe and it came out SO good. The only issue we had was, it turned a little soft and runny once we warmed it up later. Any ideas why that would happen? The only difference was we used regular coconut milk bc we didn't have what you had. Thanks again!

Thanks for your advice. I've been having issues with the watery potatoes or pasta after cooking them. Putting them back in the warm pot is an awesome idea :)

I add two stock cubes to the water before boiling to add a lovely base flavour! I also find that adding some dill at the very end gives it a lovely smell, however, i dont think that dill reheats very well so I only add it to the portion that I eat. I would like to have a ricer but i have been using a whisk for years and it turns out great, just takes a little more effort than normal

Just did a little test run for thanksgiving and tried this recipe! It came out amazing! Especially because I was a little Leary because I HATE coconut! Like you mentioned though definitely couldn’t taste it ! Glad this was the first recipe I found and didn’t have to try a bunch of different ones ! You seem to really know your stuff ! Just made this recipe for Thannksgiving. Came out wonderfully! I didn't have coconut milk so I used a little oat milk and then some veggie stock that I had handy. Also, I will do a tad less miso next time. Great great recipe - thank you!

Ahh this is similar to how my Dad would make non vegan Thanksgiving potatoes, with the roasted garlic, fresh cracked pepper, chives, and buttermilk. He would sometimes use redskin potatoes & leave some of the skins on so you would get some texture, we loved it.

Aww that’s so nice! I love it with roasted garlic and chives too! I used to make them with red skinned potatoes and left the skin on as well, but they are low starch potatoes so they don’t get fluffy, so depends on what kind of texture you want :)

They are more creamy and thicc than fluffy. 😉 Some people aren't a fan of the skins on either, but a lot of the fancier steakhouses in the area did theirs' like that so that's where we got the idea. I will get him to try half red and half russet this year thanks to you. 😊

What would be a good miso replacement? I'm allergic to soy. I'm still learning this new way of cooking. I went whole food plant based about 4 weeks ago.

Nora Abraham I have a soy sensitivity too! I’ve found a delicious chickpea miso at my local grocery store in NE Wisconsin. I believe there is also a barley miso. Both are soy-free and AMAZING!

Hi Nora. I would either omit it (it's not a traditional ingredient in mashed potatoes and you can still make really good mashed potatoes without it) and add more salt at the end. Or as Amber recommended, you can try chickpea miso, which is soy free and delicious.

When I ate dairy years ago my dad used to make mashed potatoes with sour cream. So I started making mine with vegan sour cream. I'm telling you they are the best I've ever eaten. Try it.

Something I found interesting: @05:36 Rather than slicing the top off the head of garlic, slice off the bottom. Then continue with the recipe. Since the aperture at the bottom is larger than the top of the roasted garlic clove comes out easier. Isn't that cray?

Well these look perfect. I'm pretty easy to please but haven't been 100% satisfied with mine (there's always a soy or almond taste from the milk I've used, and though I love both in most things, not in potatoes so much). Even though Thanksgiving was yesterday, I'm going to get a ricer and try these!

Thank you! I feel you - I don't want my potatoes to taste like the milk. I don't notice a taste with the light coconut milk, but but if you are very sensitive to coconut, you might. Another good option would be oat milk, which has a pretty neutral flavor too. And hope you'll enjoy the ricer - i LOVE it!

I think one important added Info should be how much you should salt your cooking water. For pasta it’s salty as the sea (1g per 100ml) but for potatoes it has to be even saltier (Water tastes almost too salty) because other than pasta, potatoes have moisture and don’t infuse so much of the salt.

I have a question- can you make these and then put them in a baking tray and bake them or will they be yucky and dry out? We are traveling this year for thanksgiving and gathering in a very small space that I think will be competitive for cooking spaces. Any ideas?

Hi Alyssa, My advice would be to add the mashed potatoes to a baking dish or ovenproof bowl and spread out in an even layer. And add a bit of moisture back in since they tend to dry out once refrigerated - either some plant-based milk or veggie broth and/or a bit of vegan butter. Cover the pan and heat in an oven at 350F until warmed up again. You can also microwave them as well. Once they're hot, you can add a bit more plant-based milk and/or vegan butter as needed and stir it in to add more moisture. Hope that helps!

You can try unsweetened, plain oat milk or cashew milk!

Yes, that should work, might affect the taste slightly but overall, fine! Just be sure to use a variety that doesn't have sugar!

I would either omit it - it’s not a traditional ingredient in mashed potatoes and while I love it in them, you can still make really good mashed potatoes without them. You will need to add more salt at the end though because the miso brings in a good deal of saltiness. Or if you can find a chickpea-based miso in your grocery store, you can use that instead.

Hi there, yes you can, but almond milk is less creamy than the lite coconut milk, so the potatoes might not be as creamy. Another good option would be unsweetened soy milk, since it's creamier than almond milk. Hope that helps!

For 2 1/2 pounds of potatoes, that's roughly 2 large Russet potatoes and 3-4 Yukon Gold potatoes. If you were to use just Russets, I'd say 4-5 large potatoes.
