Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I'll do my best to post a video on my channel periodically. I upload vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

Ok...I'm late in posting my comment; but, I just came across this video. And, I can see how Goldee's is unique. Those Lao elements in its menu really set it apart. Lao style sausage? Dipping sauce with fish sauce? Wow...and, a lot of attention going into smoking those briskets. Plus, a young woman "manning" the pit, putting what she learned at Franklin BBQ to good use. Wow...I hope to visit Goldee's one day if I'm lucky.

Spot a nice sized empty bottle of McCormick's Flavor Enhancer at 12:47 (repurposed for 16 mesh Pepper). So cool to see they're not hiding that. Would love to know more about how they're using it in their preparations

Pitmaster Chucky used only post oak for briskets. Pitmaster Jirby used mostly post oak and maybe a log of cherry? I'm not sure I know for certain as I was tired as they work from 5 am to 11 pm shift each day and I was beat after the first shift. A 60+ year old like me can't keep up with these 25 year olds after the first shift 😪 They shower, take a nap, and show up again at 5 am the next day. 🙄

Yes when you do 80 slabs in a restaurant, the labor costs to remove membrane is too expensive. For home cooking, I remove the membrane

I am curious, what ingredients do they use to season their brisket?...I saw pepper, maybe garlic, maybe MSG, I would assume salt as well...could you let us know? Thanks.

They do about 40 briskets a day. Others like Franklin do 100 a day. So the budget must be huge!

@@tacotom3492 Hard to tell as I've not taken Goldees class. The instructor and course focus is crucial. If it's restaurant cooking, then you can consider a restaurant-oriented teacher. For competition cooking, I'm not sure that Goldees is a comp team (at least not yet). The way I see if, if you're investing $1M to open a BBQ restaurant, then $1K is not a lot of money to spend to invest in knowledge. I teach in SoCal for $449 where you cook 20+ items from scratch with me in six hours in my zero-to-hero class once a month. I also have Pateon.com subscribers where I offer 1-on-1 phone and in person assistance in all matters relating to restaurant, comps, catering, and backyard topics.
