Also, people saying you can actually taste differences between pink, sea, regular, and kosher salt.... no, you can't. Blind tastes tests have proven this over and over. You just think you can, which is fine.

Although rock salt (the purplish looking stuff) smells like farts and has an interesting taste that's more than just salty. But yes, everything else does taste the same.

+Food Wishes ...you can taste the difference, if you do have Indian black salt (which is actually rather pink). On its own it taste really awful - kinda sulphury pretty bad... but in some recipes it does quite well and it makes all the difference!

It only matters in things like baking, as he mentioned. For most things you season to taste.

+Brian Bock It's still more accurate for things like spicing, brining, etc. And sure you can season to taste, but what if you want to replicate a recipe later on? If you weigh and record the ingredients then it's dead easy to replicate.

Let me try this one last time.... If you take any of the salts commonly sold to season foods (not including obvious exceptions like ones with additives, or loaded with sulfuric ash, which I don't believe is sold at the grocery store), BUT if you take salts from the market -- grey sea salt, pink Himalayan, kosher salt, plain salt, pickling salt, rock salt, or whatever -- and use it to season a pot of soup, no one, repeat, no one can tell the difference. People love to think that they can, but they can't. This is not a theory of mine, but has been proven by countless taste tests.

I find some salts have different times before dissolving, For example I have sea salt that is really big crystals, you need to wait 5 minutes after adding it to the pot before tasting as it doesn't taste like you added any till it dissolves. Normal table salt dissolves rapidly and you can taste it almost instantly. So if you're not careful adding "crystaly" salt and don't give it time you can end up adding too much :) coz you taste and be like needs more then boom fuck it's too salty :)

Sorry, but table salt has iodine in it and iodine has a very distinctive metallic off-taste. While Himalayan and Kosher do taste the same, the table salt taste is distinctly different.

Oh please, no one can taste the difference between iodized salt and pure sodium chloride when it's used in a stew or baking. Maybe, maybe some people can taste the difference when crystals (that haven't dissolved) are sprinkled directly on something that you immediately eat. I even doubt that situation because Kosher salt or any flaky salt adds texture, just being able to identify it doesn't actually change what a product tastes like.. I use Kosher salt just so I can use my hands while cooking. It pinches better because the flakes are larger. For those of you that claim otherwise, please present a double blind study to confirm your bias. $100 says you can't. Keep up the good work Chef John - you've got at least one loyal chemist watching your videos :).

Since Chef John didn't even bother to post the recipe, I was able to put this together by slowing down the video: KOSHER SALT Ingredients: 1/4 cup kosher salt Method: Mix all ingredients on a fancy plate. Season to taste. Allow to cool/warm to room temperature. Serves 2.

I went out and gathered up as many different salts as I could for a taste test. And I gotta say, other than bath salts(which tasted horrible and resulted in me running naked through my neighborhood), all salt tastes the same. I buy pink salt just so I feel like I am being health conscious when I sprinkle it on my double bacon cheese burger and caramel glazed donuts. And I'd like to think I am helping Punjab cave dwellers(chiseling my mineral laced halite), put flat bread on their table. It aint easy being a great human being.

Of course, using weights in recipes (whether metric or pounds/ounces) is always going to be way more accurate, but that's not the point here. The point is there are already millions of recipes that use tablespoons/cups etc. and so this video is about understanding you can't measure the same amount of both, and expect the same results. That's it. Sure, if you're developing new recipes, by all means, use weight, but the vast majority of home cooks don't currently use recipes written in weight. By the way, you Euros can calm down with the metric love, since using milliliters and liters is the same thing as using cups in this context.

That's one of my favorite takeaways from learning the cooking habits I have from Chef John, usually the only salt I add to dishes is in the beginning while sweating the veggies, I don't tend to add any salt until near the end, as he mentioned, to taste. Definitely a habit I think people should follow.

That moment you realize this is more than a cooking chanell. My mother is a great cook, like all mothers should be, the other de day I used your baked apple roses recepie and she was delighted! It may seem like to some like this is just for fin, but this man is teaching you much more, he's giving you the chance to impress people and to have a new ability up your sleeve. I didn't pay much attention to how much work can go into cooking sometimes, buy I appreciate my mother much more than I used to, I hope someday my kids feel the same way. Thank you chef!

This is indeed helpful. As you say, most people would probably season with salt after taste, but it's good to know the difference anyway. Before I started following international chefs and their recipes, I had never heard of this ''Kosher salt'', it's not really in use in my home country so I never knew what difference it makes. Now I do ^^ Thank you!

Another option to avoid confusion is to give measurements in grams and not by volume, like in the civilised world. I really like the video and wish you publish more videos about techniques and concepts along side the regular recipes. BTW: What is the best way to avoid salts with "anti caking" agents? Only recently I discovered that such agent is added to salt and the manufacturers don’t have to mark it as an ingredient as the amounts are below the threshold. Personally I don’t like additives in my food. I want my salt containing NaCl only. Is it true that kosher salt does not contain such additives?

Excellent comparison, sir! You nailed it when you compared weight to volume. I personally like sea salt, and I buy it coarse and grind it *to taste* as I use it. I find it gives me better control, because I "feel" like I'm adding more salt than I really am, so I'm less likely to over-salt. Hey... If it works, run with it. I use table salt only when I'm tossing a random amount into a pot to boil some pasta. LOL

So, looks to me like kosher salt is what we call sea salt in the UK? This is something that has confused me for a while as there don't seem to be many good explanations online, so this video with a close-up on what kosher salt actually looks like was really helpful. Thanks!

Rock salt. But all salt has melting properties, of which decreases as temperature drops. Other chemicals such as calcium chloride or magnesium chloride have even greater melting ability at lower temps, beyond that of any form of salt.

+Kairasu no, there is nothing NON-kosher about ordinary salt. It comes from the size of the grains, which are better for curing meat in hot climates aka "koshering" so in other words it's what the Jews used to use to draw blood from meat and make the meat Kosher. The large grains allow more blood and juices to flow through the gaps without dissolving away the salt, and also imparts less salty flavour to the meat itself for the same reason.

Kosher salt does not have anything to do with it being kosher it actually has to do with the fact that it is used to draw blood out of carcasses at kosher slaughter houses, since table salt is too small and just gets dissolved and rock salt is to big and cloggs everything up, or something like that

I expected table salt to weigh heavier because the grains are spherical and regular thus making it dencer, but I didn't expect the huge difference in weight. Great video.

I only see the point of using Kosher, sea or hymalayan salt in cookies because it is undissolved. The salt has to be finely grated to distribute the taste evenly. More lightly salty grains equals better taste. Great videos, thanks a lot. My cooking has improved !!!

And this shows why recipes should use weight rather than volume for solid ingredients because a even a slight difference in coarseness can make a difference in how much air is trapped and thus how much a cup (or other volume unit) is, but that air isn't weighed, so the weight doesn't have that problem. even for liquids, weight is much easier because most people have a scale that will tell them how much it weighs, but if you have to read it from a measuring cup, it can sometimes be hard to tell, and when scaling things to make it for more or less people, having to guess where the point between 2 measuring units is becomes very inaccurate.

So for marinades and brines, it appears that you would use around half the amount of table salt as you would kosher if you didn't have kosher salt on hand. Other recipes are generally to taste so it's easier to feel it out.

I have found the Himalayan Pink Salt to have a sweet kinda floral taste to it. I prefer it on tomatoes and fresh veggies. I disagree when you say all salts taste the same. They may all taste the same if you adding them to a pot for simmering but using them on raw fresh ingredients I can tell vast flavor differences between different types of salt. That disagreement aside, love your videos!

Thank you, Chef John, for the info on different salts. I agree that in cooking, you season by taste; however, I've recently started converting to kosher, and I now wonder about salt in baking. If I substitute kosher for regular salt in a cake or cookie recipe, I can't use the "taste" feature. Do you have any suggestions for kosher in baking; or should I just keep table salt around for that purpose? Thanks for any insight.

I've always replaced (when I needed to) kosher salt for half as much regular salt, then salted to taste! Looks like I wasn't far off =D
