Wow, simple, yet amazing food from Mexico! Three of my staff are from Mexico and the food they would bring to work and share with us with no reservation or hesitation! Amazing food and kindness - just like the Filipinos 😎

Mexicans are genius cooks, even just technically, nevermind their creativity. Some of the best restaurants in NYC are run by Mexican cooks. But in terms of Mexican cuisine - they innovated everything. Nothing is similar to Mexican food in the world. They put together so many insane creations, texture combinations, spices, ingredients etc. It's on the same level as Thai, Japanese, Chinese, Indian, Italian etc in terms of taste, complexity and originality.

Hi! Chef JP, Camille, in this episode/vlog it's nice to see an amazing upgrade type of cooking but still from wood fire method. The complexity(makes it) of the ingredients makes it umami as you said... Bravo!.. It's seafood... Thank you for that vlog.. Halong always you two...:-)

Chef, not sure if you're still in Mexico but try to go to a restaurant that serves really good 'mole'. In my opinion, 'mole' is the best Mexican dish.

Mexico… (northern most parts) are just in our backyards…. California, Arizona, New Mexico ang Texas). Ours, in San Diego, is Tijuana…. Although, I think the southern parts have the most scenic…. IMO only. We have held medical missions in Tijuana, Ensenada, San Quintin, Tecate and Ciudad Juarez thru our Lions Clubs….
