The absolutely best way of cleaning greens straight from the garden I’ve found over the years is get a large bowl and fill with your greens sprinkled a large tablespoon of sea salt on top and cover with water for ½ hour or even overnight if you can’t get to it, it will stay bright and fresh in the water. Rinse and dry in a salad spinner. I pick for the week and store dried salad leaves in a ziplock bag. It keeps really well for the week. The salt kills the bugs and they float down to the bottom of your bowl.

Try salting the zucchini before grilling to start the sweating process, then grill. When done place them on a dish and drizzle olive oil and balsamic vinegar. Let marinade on the counter while you cook the meat or whatever main dish you’ll be having. So good the next day and something you can add to a pasta salad with fresh peas, roasted corn (on the bbq) and leftover steak, chicken or salmon (done them all and all delicious, plus using up those leftovers). We do the exact thing you’ve been doing with your grill when finish. Turn on high and let everything burn off, scrape and done.

Becky, for the grill this summer, try a Moroccan-inspired meal. Grill bone-in chicken, seasoned with a spice mix of salt, cumin, turmeric, cinnamon, and hot paprika. Throw on sliced eggplant, zucchini, red bell pepper and onion (or any fresh veg you like), tossed with olive oil, S&P, and oregano. Bring homemade chicken stock to a simmer to cook couscous. And throw in dried fruit (raisins, diced prunes or apricots) and toasted, slivered almonds when you fluff it with a fork. Put it all on a platter, and drizzle it with warmed honey. Trust me, it sounds unusual, but it's a crowd favorite!

Bone in chicken is the way to go. Love BBQ on with the skin on. It get the skin so crisp. I only put the BBQ sauce on the chicken for the last few minutes it's grilling. Best way to clean BBQ sauce off the grill burn it off so it's easier to scrape clean.

We use a cut onion to clean our grill! We do our best to give it a good scrape down after we cook while it's hot. Then when we start it up for the next time, cut an onion in half, stick it with a big bbq fork and just run it on the grill. clean and tasty :)

I was going to recommend the same. Onion to clean grill. We grill skirt steak. We marinate it for few hours with Goya Mojo Crillo marinade (you can make your own). The longer you marinate the more tender the meat. Use your burner to make baked beans. We do baked drunken beans. You add fresh pico de gallo (jalapeños, cilantro, tomatoes, onions, garlic and a splash of lemon juice), bacon and one can of your favorite beer. Mexican corn. Grill corn on the cob add butter, mayo, cotija cheese, cayenne or chipotle ground pepper, and a squeeze of lemon.

One of my favorite grill recipes: In foil sheet (good sized so you can close it up) put a few slices of butter, onion, slice of uncooked bacon, Cabbage wedge (not too big - so it cooks faster) & season salt. Now fold up edges to make it a foil pouch, then wrap again if needed with more foil so it won’t leak on grill. We usually make 5 or 6 of these. Put the cabbage foil pouches on grill & cook until done to your liking! The more cabbage you put in them the longer they take. I prefer my cabbage well cooked with burnt spots when grilling these. It’s so dang good!

Cabbage steaks are fantastic grilled! I would recommend getting a grill sheet since cabbage can get kinda messy and set it on the grill when you light it. Slice cabbage into "steaks" about 3/4" to 1" thick and cut out the core part. Brush with a neutral oil and season with salt, pepper and paprika or red pepper flakes on both sides. Grill on med-high for about 4-8 minutes per side. You can add balsamic vinegar or everything bagel seasoning before grilling also, so good. Top with butter for a simple side dish or you can add bacon bits, parmesan, blue cheese, green onion, or parsley.

Korean BBQ Galbi and bulgogi are some of my favorite grilled meats. Especially if you season the hot grill by scrubbing it with half an onion before grilling the marinated meat. Fire roasting eggplant for baba ganouche is the way to go, though I know you already enjoy salsa. Fire roast those ingredients first for a bold smoky flavor of summer canned for winter (Nobody can stop you from grilling in the winter time either ). I would recommend getting a huge 5 + gallon salad spinner since you are a fan of bulk prepping and have a green thumb. I am so happy for your successes! Thank you for sharing your experiences. You have given me the final push to start growing mushrooms and it has been so much fun!

Recipes: I like to make breakfast on the grill with a cast iron griddle heated for frying eggs and bacon wrapped in parchment paper and then wrapped in foil to prevent the paper from burning AND to contain the mess. Also, I'll reserve the bacon grease for future use. Pizza and calzones on the grill rocks. Lasagna in a casserole pan on the grill is better than heating up an oven indoors, same for Mac n cheese.

I recently started playing on our grill. I LOVE grilled veggies! And my husband doesn't really, so he never grills them. A really wonderful marinade I did recently (sorry, I don't recall where I got the recipe): 1/4c (42.5ml) Lemon Juice, 1/6C. (42.5ml EVOO, 1 tsp white sugar, 1 minced garlic clove, 1/4 tsp Salt & Pepper, 1/4 tsp basil, parley, oregano & thyme, 1/4 tsp chili flakes if you like spice. Marinate for a couple of hours & grill. It was delicious. Fabulous for salads the next day (I think I did Zucchini, red pepper and onion). I've been sous-viding my chicken (in marinade) to 158degrees F (I am a microbiologist, I take no chances on food pathogens). I then sear both sides on the grill to 165 F. My current favorite marinade for chicken is: 2# chicken, 1/3 - 1/2 C EVOO, 3 TBS fresh lemon juice, 3 TBS Soy sauce, 2 TBS Balsamic vinegar, 1/4 C brown sugar, 1 TBS Worcestershire sauce, 3 cloves minced garlic (or 1/2 tsp powder), 1.5 tsp salt, 1 tsp pepper. I also threw in some red onions. I loved the sweet/ sour taste of it, though, it was a bit much soy sauce for me. After I marinade/ sous vide it, I cooked the marinade into a lovely sauce.

I love grilled or roasted corn on the cob. Just rub with a little olive oil and sprinkle on sat and pepper. Just grill until starting to brown a little. No butter needed as the olive oil is enough.. love your channel and have been watching for a while. Love all you freezer meals and your gardening. So great that you are sharing the progress on the new house, and what a beautiful view you have to sit and eat your meals and relax. Thank you for sharing ❤️❤️❤️

Becky- a grill is like an outdoor oven- I put my chickens whole on the grill inside a jelly roll pan. I usually just cover my pans in foil. Cast Iron pans work so well on a grill. In Italy I would buy my Pizza dough from the baker and make grilled pizza and calzones! I reccomend a flat top grill grate to add to your grill. My husband just refurbed my grill with new burners and grates. I have 2/3 grates and 1/3 flat top. I saved the third grate and can switch it out if I need grates for a crowd. Also you can usually buy a rotisserie motor for your grill as well. Lots of fun stuff. Wood skewers work really well on many thing to keep foods from falling through and together- sausage, shrimp, veg of all kinds.

It's fun to watch you and Josh get your new house ready. For oiling and seasoning veggies for roasting or grilling, toss everything in a gallon baggie. it takes no time at all to coat the veggies, and you use less oil. Your hands stay clean too! For cleaning the grill, you really can't beat a wire brush. Before you put items on the hot grill, put some oil on a folded paper towel. Then wipe the grill with the towel using tongs. Less stick and mess to clean afterward.

Grilling side dish suggestion -- Romaine Hearts sliced lengthwise, in half, sprinkle garlic between the leaves and drizzle olive oil on cut side - then put cutside down on the grill for a couple minutes to get some char. Remove and eat as a warm salad on the side! (Don't have to chop it up, just take bites as each should still be intact:) Edit: sprinkle with salt after too

Hi Becky, I absolutely love, love, love watching your videos. You are such an inspiration to me. I used to can a lot of things when I was in my 20-30s. Then for some reason I stopped. You have inspired me to start again, I can't get enough of your videos. The only freezer meals that I have done, is hamburgers and meatballs. They freeze so well and you can make a ton at once. I usually do a large bowl of thawed burger and add in whatever I feel like. Generally onions(minced), garlic, eggs, oatmeal, salt, pepper, and spices. Then after it's all mixed up, I use a fork and a Canning ring. I press the meat tightly into the ring, leveling with the top, and you get a perfect burger. If you use large mouth, they are bigger and gem rings are fatter. Then I push them out onto a plate and freeze in a container, with waxed paper between the layers. You can take out one or two or cook them all. Thought I would pass that on. For the meatballs, I love cooking them for about 20min in the oven and add to spaghetti, or sweet and sour meatballs.

Grilled Portobello Mushrooms with melted blue cheese on a toasted brioche bun. Oh, yeah! Use the top shelf for toasting your buns, buttered or not, wrapped in foul or not... Grilled peaches or pineapple with butter and brown sugar. Add ice cream for peaches, or whipped cream with some coconut for pineapple. DESSERT! Soak ears of corn in water for about half an hour. Put the un-shucked ears on until outer leaves are crisp. Cut off stalk end and squeeze from the other end onto your plate. SO good. No silk and cooked perfectly.

However, I wasn't very happy either! From Australia, our Weber gets used six days a week year around. If I plan correctly, I find I can harvest my herbs and kale, wash thoroughly then salad spin dry, the put in an aluminium baking tray, and after the grill has been used, put the greens in the Weber to dry out and make dried greens using the residual heat, works best in winter when there are fewer insects in the Italian flat-leaf parsley. Love your vlog Becky, you are really switched on!

I use my side burner on my BBQ to make batches of soup and curry sauce etc during the summer to save heating up the kitchen, I keep them in the freezer for the winter months. My absolute favorite thing my husband makes on the grill is his potatoes. He cuts them in half, cuts a cross hatch pattern taking care not to cut through the skins, he takes hot chili oil, (or butter) salt, pepper and sometimes garlic powder on the cut sides. He takes a double layer of foil and places them cut side down. He closes the foil tightly and places the packet cut side down. They get crispy on the cut side and the inside is soft. It takes at least 20 minutes depending upon the size of the potatoes so he puts it on first. They are good hot or cold out of the fridge. The whole family loves them and they rarely last past morning. Because he makes so many, it can be time consuming so they are a great treat for us Oh yeah, rotate them 1/2 way so one side doesn't cook more than the other. You know they are done by giving them a little squeeze to make sure they are soft
