You have put a tremendous amount of work into your prep. I'm impressed. You mentioned you store your canned foods in your basement. I would love a tour of that space to see what you've done and how you store it. it's all quite impressive really. As you worked, I kept thinking what great gifts canned food makes. Especially around the holidays. Great work 👏🏻‼️👏🏻

More videos like this, please! Pro tip: next time you have a lot of kiwis to peel, cut the ends off, slide a spoon under the skin, and slide it around the kiwi. The peel slips right off in one piece and you’re left with a naked kiwi! I’ve been researching canning, and all of the experts recommend using bottled lemon juice instead of fresh lemons, because you need the correct pH level for water bath canning. Apparently, there is quite a variation between fresh lemons. Also, true dry canning is done in the oven. You vacuum sealed your maple syrup.

Just a note on the storage bags. If you turn the top inside out, its a lot easier to keep the outside of your bag from being contaminated. Then when they are all filled, wash your hands and flip the end up to vacuum pack. I’ve also learned to cook it up before freezing, and I can take it out, defrost it, and requires a lot less work. You don’t even have to cook it all the way, cook until almost done, and a quick pan fry, or microwave will finish it up quickly with a lot less mess. What a great video! Hope this is a tip that helps someone!

Vegetables don't need to be pressure canned. How do you think the rest of the world does it? We don't have pressure canners. The few people that do, have imported ones from the US. And yes, I'm very aware of the fact that English-language sources for canning tell you that you're going to die if you use water canning, which is why those sources are useless to us, because of the lack of available pressure canners. If you follow the rules when it comes to water canning, you should do just fine.
