The wire goes through the spinal cord which stops the production of lactic acid caused by rigor mortis. Then you cut the gills and near the end of the tail to easily bleed the fish. This method is awesome, its great to see u guys trying it :)

The easiest way of getting to it is to cut the tail off and just feed it through the spine at the cut on the tail instead of feeling around in its brain...

Hey Marlin, the Ikejime kit you are using is a taaadd big for the trout, perfect for larger fish like lings, halis, chinooks, chum and large cohos. Some tips in using the spike end, get it lined up with the lateral line of the fish, with salmon the brain is about an eyeball width behind the eyes, when you hit the brain you will see the eyes do the "death" stare right away and their might be some crazy wriggling going on so becareful, you don't want to push the spike to far as you are only suppose to "hit" the brain and helps with guiding the wire, ussually what is done is sort of like trying to get a screw into a cork of a wine bottle with slow twisting into the head till you see the "stare" and sometimes the fish freaks out wriggling like crazy due to basically being lobotomized. The wire should measure along the length of the fish from where the eyes are to the end of the tail but not counting the fin as to indicate how much wire you need to insert, it takes some practice to get the wire to go along the length of the spine but for the trout that wire would be a tad to thick but for larger species of 15-30+ pounds it would be perfect, you won't need much pressure to push the wire when it goes from the brain down the spine so if you are pushing anything harder than say a finger squeeze you aren't in the right spot. It's mostly done to keep fish from thrashing around specially larger fish cause it bruises the meat, helps with freshness as the muscles are totally relaxed and prevents them from releasing acids which reduce quality and degrade the meat. And greetings from Vancouver B.C.! Love the vids and stay awesome!

Hi ! you seems to be quite familiar with this method. I've been fishing with my g/f and i wanted to ethically kill the trouts. But they are rather small. Biggest was 13.5 in long. Rest was about 8in to 12in long. I prefered using the fillet knife to cut the brain in half from between the eyes but i was wondering if it was doing a good job. Seeing a couple of ikejime videos, i see they puncture the brain a little bit from an angle. I'd like to know what would be your option to humanly and rapidely kill a small trout ? and since its so small, how important are the cutting the gils and the vein in the tail part and the running the wire inside the spine part? Thanks in advance! From Quebec :)
@243pete
@243pete 11 ай бұрын
@@nicolasgirard6691 Hi Nicholas, in reguards to dispatching smaller trout a small knife point pushed in at a 45 angle from the side of the head or straight above will do the job quickly, it's harder to do the ikejime technique with smaller fish cause their spinal cords are very fine like .5 pencil lead. I will say just dispatching a fish quickly either with a bonk or a stab will always do, cutting the gills to let the fish bleed is important for freshness and meat quality and keeping them cool helps a lot as well. If you want to ask anything let me know. :)

@@243pete Hey Pete! Thanks for the answer! Appreciated! I've been stabbing my trouts but not with a 45 angle. I used to do it from the top of their head and doing a large cut going down between the eyes. On larger trout i saw Mouth mouvement after performing it therefor i thought there was something from. I'll definately try that 45 deg angle to see if it works better because i really despise watching the fishes suffocating while chained from the gills. Ill start cutting the gills too to let it bleed out! Never tried to bonk it too.. ill try to find a nice thing to club precisely to try it out too. thanks and have a great day!

This is a very old method of preserving fish and not just killing it. The spike is to kill and the wire is cleaning out of the spinal cord. If you cut the tail a little the wire will go through the spine. It really keeps the fish from spoiling from longer, and as you say it helps eliminate the lactic acid/toxins. The process is pronounced EE-KAY-JEEMA. You can find a lot of videos on it. For SUSHI it is a must. Love the content and the channel. Thanks

I think the long wire is supposed to be directed down the spinal cord to stop all nervous system activity immediately. If the fish was still wiggling after it wasn't quite done right. I am not really sure how they line up the spinal cord though to pass the wire down the cord to destroy it completely.

Over 20 years ago, my husband, our kids and I used to go to our cottage in Huntsville and we did fishing too, my husband showed me how to kill the fish in a human way, and this is what he did, used a long pointy Skinny sharp knife to do exactly that, he also ran a strong wire along the spine starting with the tail all the way up to the head to kill the spinal cord, so no more muscle movement and lactic acid collection in the muscles. It's an old way to kill the fish ethically, they just came up with a tool to do it. It surprises me that people who fish or hunt, are experts in catching the animals, but know very little about ending that poor animal's life humanly. Thanks for sharing, now few more know better.

The Spike goes in horizontally, just past the eyes and the wire runs through it and down the spinal column, destroying the nerves and stopping additional lactic acid from building and breaking down the meat prematurely. It will keep your fish fresher for a longer period of time, if you choose not to eat it right away. It’s a good kit.Thanks for sharing. 👍🏼

@@willdykema how hard is it to keep the long wire aligned with the spine and not swerve off into the meat?

I believe the wire is for the spine. Vox has a more detail video of this technique

Pronounced 'eekay-jeemay' The point of the wire is for running through the spine. It kills the nerve endings and stops it from secreting acids into the muscles like it would when you cut the gils and it starts spazing out, which is what causes a good chuck of the 'fishy' taste

Straight lobotomy for the fish, so icepick that sucker. then send in the egg scrambler to make it just right. Lol 😆

So the wire, as I understand it; goes down the spinal cord so less cortisol is released. This prevents the toughing of the muscle caused by the "fight or Flight" reaction of the fish. Therefore, the meat should be more tender. Same with bleeding the fish. I am not a fisherman, just heard it on a podcast about Japanese fishermen.

Are you buying fishing gear off of wish? Lmao that thing is crazy, on an Anime level... the spike did work great, but 3ft of cable? The hell are you gunna shove that much cable into? I'll stick with a good bonk and a slit of the gills 😁😁😁

The cable is supposed to be inserted into the spinal cord and run down the length of the fish, so it doesn't get rigamortis and release the toxins from the spinal cord to the meat

The long cord is to sever the spine so it doesn't keep moving, which would produce lactic acid

When you don't read the instructions on the inkejemi method. Lol. The spike is suppose to go through the brain and the rod through the spine. Then you have to make three cuts to drain the blood. But yo! That way you gut that fish was awesome. I need to learn that.

You’re supposed to run that wire through the spinal cord so they won’t keep flinching and releasing lactic acid to the muscle, yes they are dead as soon as you spike the brain, running the wire through the spinal cord will help the meat to last longer and taste better just like cutting the gills does

Couldn't this be accomplished with a common pair of tin snips cutting straight down through the brain? Literally just a fraction of a second and absolutely no doubt about any extended suffering.

Mm I know the cord is supposed to kill the spinal cord but I'd still probably snip the tail to manually disconnect the spinal cord and reduce acid buildup.

@@grant0410 true, but I've seen more videos of blokes missing the bonk all together but then you still get muscle spasm if you try and process your fish right away. I get more relief humanly killing my dinner this way than bonking but to each their own.
