Air Fryer Eggplant - Air Fryer Roasted Eggplant - Keto Friendly
Today we will be making Air fryer Roasted Eggplant. If you are bombarded with eggplants from your garden this summer or just love eggplant in general, roasting eggplant in your air fryer works great and it comes out delicious! And, it's quick and easy. You can leave the eggplant skin on or off, but it might be a little mushy if the skin is removed, so keep that in mind. For my low carb eaters out there, this is Keto friendly, Yay!...I hope you enjoy and thank you for watching!

This is great. You just gave me that light bulb moment. I love eggplant, but sometimes it just is blah when I have fried it and duh, never thought of the air fryer!!!! This would make them nice and crisp and a whole lot of less oil than trying to fry in a skillet. I love it! Putting eggplant on my grocery list this week and definitely going to try it. But if in a fry pan, you can put garlic and things in there that the air fryer, you cannot because it falls through the holes.

Good crop last year no crop this year. I will keep this in mind for next years crop. It looks great Kelly and I will do it. Also looks good for zucchini. That I have!

I do my eggplants, peeling it with a potato peeler, I leave them whole and place it in the fryer at 400° and 20 min. After it is done I let it rest for 10 more min, then I use it with EVOO and salt and parmesan cheese, or a no noodle lasagna.

This would be great for Moussaka. Especially with the smoked paprika added. The prep of the eggplant is the most tedious part!
