If you want a healthier alternative to vegetable/canola oil for baking, you can use virgin coconut oil. Just heat it slightly in microwave to make it into liquid state so you can measure it...same amount as vegetable/canola oil. I've used coconut oil in brownie and cake mixes in place of the vegetable oil, as well as homemade recipes. Everything turns out the same...brownies are actually better with it.

I just substitute melted butter for vegetable oil in my baking. I’m not crazy about seed oils either

I'll try it with melted butter too! I know for some breads and loaves, oil is better to retain moisture, but I'm excited to try using butter! 💕
