I bought the Fissler Original-profi Rondeau after watching your review. It is best piece of cooking ware I own. Such a versatile tool. It has really transformed our cooking. Today it went into the oven for the first time. Perfect result! I also bought the 3QT saucier from Made-in which is also very versatile. Together they cover all our frying needs.

So happy to see you! I bought a few D3 pieces during an All-Clad sale. I didn’t buy the sauté pan because I found the sides too shallow (I went with the Demeyere Industry). One of the All-Clad pieces I did buy was a 10” fry pan. The cooking surface area is pretty small in comparison to the 12” which was way too big for my gas burner (they addressed this on the Everyday collection and made an 11.” They also changed the long handle to a different shape). After hearing so many complaints about the All-Clad (regular) handle, it doesn’t bother me. What does - the handle on the lids get super hot (not the case with any of my Demeyere pieces, but sometimes I find them unwieldy). I wonder if the handle of the lids on the D5 are cooler (they are made and assembled in the USA whereas D3 handles are made in China, though assembled in the USA…or perhaps there is a difference in performance between the polished (which I have) vs. the brushed…or the Everyday addressed this issue. I can’t wrap my head around the D5 price unless you tell me it’s far superior. I think for my purposes, I’ll save my moulah. Great review, as always!

Thanks! Yes good choice to go with the D3. I don't think All-Clad managed to significantly differentiate the D5 line from the D3. If the D5 was thicker, then it would offer a more compelling argument over the D3.

Welcome back! I've been in love with the Apollo 7 saucier but the lack of rims is making a mess. I've been looking at surprisingly affordable tri-ply ss and welded handle cs from Hendi as advertised by various online supply stores: could you consider a review of those?

Thanks! Personally I would spend a little more and get the Atlantis sauciers. They are better built. If I can get my hands on the Hendi pans I'll review them.

I’m also in NZ and have slowly gathered a few all clad pieces from Amazon. I have the d3 version of this pan and like it a lot. To address one of your nitpicks, All Clad does make a 4qt version of this pan. It has the same diameter but slightly taller edges. Sounds like that would have been the one for you.

I just checked the All Clad website and I don't think they are the same diameter. The 3QT version is 11 inches, and the 4 QT version is 13 inches. Within the D5 range, only the 3QT version is available. Anyway I didn't buy this pan because I needed it. I only picked it up to have a play with it, test it, and do a review. Having said that I'll probably keep it, considering how hard All Clad is to get in NZ, especially at reasonable prices :)

​@@mq46312 The official All-Clad site lists the D3 4qt saute pan as 13 inches but on amazon it lists it as ‎53.34 x 28.58 x 14.3 cm. Not sure what the 14.3cm is measuring. Hard to know which is actually correct. Would probably pay to ask all-clad directly, if you cared enough. You're right about good cookware being hard to find in NZ. My collection is a few All-Clad pieces from Amazon, some Essteele pots, lodge cast iron and a Staub dutch oven/casserole.

@@julianvickers I suppose you can buy anything if NZ if you are willing to spend the money.... It's more that good cookware are hard to buy at reasonable prices in NZ.

If you were to assign a percentage, what part of performance is cooktop and what part is cookware? Will all the Demeyere in the world matter if my burners are small and my cooktop is underpowered?

Very good question. Hard to put into numbers, but I would say 50/50. The cooktop needs to provide an adequate amount of heat (both low and high), and the pan needs adequately respond to, distribute, and maintain the heat provided by the cooktop. If you burners are far too small then I think a pan like the Demeyere Proline might indeed be "too much pan" for the burner. You also risk the pan warping if there is a bis mismatch between the size of the pan and the size of the burner.
