I was thinking about the honey-soaked lemon, ginger, clove and cinnamon discards. I would put them into the bottom of a tea pot, add some black tea leaves, and pour boiling hot water over all of that and let it steep. A mug of those results would make an afternoon watching the rain and listening to my favorite music even more exquisite.

I would think you could make a larger batch and freeze in one TBL ice cube tray and pop them out as you need and put in warm water to melt or just in a small glass for straight serving I bet for sore throats might be good to suck on the ice cube of it the Clive and Cpl will help numb the throat and reduce inflammation

My Gma made that every Winter. She would add a bit of Cayenne Pepper. One thing she always added was a 2 Tablespoons of Whiskey to help the Sore Throat. It always worked well. Some times she made a Separate Jar for the kids. 😂

My mum made similar syrup back in the 1950ies when I was growing up. She made it in a casserole type dish. Layered lemons, ginger and raw sugar crystals (4 layers). left it sit overnight and by morning she had a quart of syrup. I will try your recipe now with the honey and additional spices. Thank you!

Great, tip! I also was reminded recently that metal kills the enzymes in your honey so you want to use wooden spoon (as u do) or plastic spoon for the honey.

Hi Jinne, I'm going to make this. I'm easing into homemade remedies. Tonight I'm canning beef since we got it on sale this week. I have stopped picking apples for the year. There's a lot left on my trees but I have to call it quits. I'm still going to can applesauce and apple pie filling, and I have plenty to supply the deer all winter.

I love these natural flu/cold/cough medicines that we can make ourselves. I make the garlic snd honey and onion and honey which can lady over a year and still be good. Does this recipe only lady for 2 months? I usually like to have these medicines made up in advance so they are ready when we need them. Thoughts? Thanks for sharing.

I buy local honey and sometimes it’s really good, but, sometimes it tastes….rotten. I know honey doesn’t go bad, but can’t figure out why it tastes this way! Any ideas? (I buy from my local Mennonite community.)

Because the bees collect pollen from different flowers during the season, it changes the color and flavor. Spring harvested honey usually has a lighter taste than fall harvested honey. If they collect honey during the goldenrod bloom (late summer), it is much more pungent. You can smell it when you get near the hives. I'm not sure of your location or the plants there, but that has a big effect on color and flavor. If the flavor is off-putting, I would mix it with another jar or two to tone the flavor down. 💕🇺🇸
