My theory on the OP world races is that Humanity has lots of recessive genes and all of the bizzaro traits like Moria or even more subtle traits like Usopps nose are a result of latent Fishman and other race genes. I also believe this is why certain humans are capable of superhuman feats like Zoro and Sanji, because they likely have latent Giant strength or Fishman power. My theory/headcanon obviously explains people like Whitebeard, as having latent Giant genes. Although I believe that some very special humans have not just latent genes from another closely related race, but also perhaps express ancient and powerful genes and my theory is that men like Edward 'Whitebeard' Newgate have latent Ancient "Continent Puller" Giant genes and that makes him as strong and capable as an Oars style giant if Oars was the same height and size as Whitebeard. I believe that the range goes from the bottom level mixed genes like Usopp who probably has very little Fishman or other blood giving him an odd appearance, but also slightly higher levels of durability and strength potential which we have witnessed multiple times. The top end of the scale are men like Whitebeard, Moria, and those caliber who obviously have much higher levels of powerful blood and likely have a large quantity of Fishman, or Continent Puller DNA giving them much more obvious traits like size and appearance in Morias case, and a much higher level of potential in WBs case. This is my headcanon until proven otherwise and it makes a lot of sense to me, especially since we've been told that most of the races can interbreed with no issues and most of them likely share a common ancestry. Similar to how many modern humans have Neanderthal genes, but they don't actually do anything for us.. for the OP world people... it's a different story. That's just my personal theory.
