Recipes
No-Waste Pulp Crackers:
1 cup pulp from making milk (almond, pumpkin, hemp, watermelon seeds, or any mixture)
½ cup extra virgin olive oil
1 cup flour of your choice (all-purpose, gluten free, oat, amaranth)
1 teaspoon sea salt
1 teaspoon baking powder
Seasonings as desired: herbs, chopped garlic, minced shallots, flaked salt, etc.
Preheat the oven to 350°F.
Combine the pulp with the olive oil and stir well. Combine the flour with the sea salt and baking powder and mix into the pulp-oil mixture. Add seasonings (or not) as desired. Roll between parchment paper to the size of a half-sheet pan. Using a knife, pizza roller, or bench scraper, cut the dough into squares or rectangles as you wish (it will be easier to cut ahead of time).
No-Waste Chocolate Chip Cookies
Makes 36
1 cup vegan butter (see recipes, page XX), room temperature
¾ cup coconut sugar
¾ cup brown sugar
3 tablespoons vegan yogurt or sour crème, (chapter XX)
1 cup pulp from making milk (any pulp)
1 cup all-purpose or gluten-free flour
2 tablespoons finely ground coffee
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon sea salt
1 teaspoon vanilla
10 ounces vegan chocolate chips
Preheat the oven to 350°F.
In a bowl mixer, combine the butter and sugars and beat until creamy. Add the yogurt or sour cream and mix well. Mix in the In a separate bowl, sift together the flour, coffee, baking powder, baking soda, and salt. Mix into the butter-pulp mixture. Add the vanilla and chocolate chips, and mix again.
Drop onto sheet pans lined with parchment paper using a small ice cream scooper or spoon. Bake for about 15 to 17 minutes until browned, noting that a little extra color for these will not mean they are overbaked - they need the extra time to hold together. Allow to cool before removing.

I'm a year and a half into being diagnosed with stage 4 metastatic esophageal cancer and have been making changes to my diet. Since having over a year of chemo I'm having a difficult time getting protein into my diet. I've been on so much ensure and the like that I'm having problems even driving that anymore. I've been more able to eat primarily plant based foods and have become almost vegan I guess. I've never made anything like cheese before and I think it could help in my diet. The cost of having cancer and all I'm not able to afford one of these machines. I have to stay on what my disability check can afford for the least amount of cost. I have so been enjoying your KZfaq channel. Thanks for all you do!!

I'm sorry to hear about your condition, and am so glad you are taking charge and doing what you can by making changes to your diet. I know it seems hard. Don't worry about protein too much -- you will get plenty as long as you eat a wide variety of whole foods from plants! There's protein in everything. And avoid processed foods -- dry beans, whole grains, and veggies are inexpensive and healthy!

The first being "The Homemade Vegan Pantry: The Art of Making Your Own Staples". found it so easy to read and many ingredients are everyday pantry ingredients. I've made several items; was lucky when finding a Dynapro blender at a local thrift store about a week ago. I've had to relearn a lot of tasks that involve using my hand. The chemo| was on caused neurological with my hands and feet. have absolutely no feeling in my hands and cutting items is a challenge. I've got some little tools to protect my fingers when cutting and my husband is benefitting. I'm able to make some of the foods from his home country of Vietnam; however it's an all day task for me. I look forward to watching more of your videos. Will you ever be doing a live?

Praying for you whether you believe in those things or not - also plz check out dr. Esselstyn jr.’s KZfaq content on vegan diets. It’s not a panacea, but helps to manage erratic glucose levels and side effects of meds. Green teas and mushrooms are now showing researchers to have efficacious benefits during cancer treatment at any stage. @@SooperToober thank you so much! I've been doing a lot of praying myself. My husband believes so much that he has booked a flight to Vietnam in September. We have talked about going many times and it's supposed to be our celebration trip that I have gone into remission. It's so encouraging to me and I cannot wait to see his home country and be cancer free!

I've discovered as I've gotten older the importance of reading ingredient labels. The added ingredients in everyday things like alternative milk can be overwhelming. Making my own milk helps me to be sure of the ingredient list.

This is incredible! I love the idea of combining ingredients to make a cashew + oat or a pumpkin seed + oat-those are the first two I would try. And then making cheese and crackers from this!! I was so excited when I saw you try the Almond Cow since I have been eyeing it for the last three months. I love making oat, cashew, and/or almond milk (with vitamix and nut bag) but would love the opportunity to try the Almond Cow to make coconut milk (along with others). Fabulous to know a new cookbook is in the works! I love your kitchen geekiness.As far as what type of "milk" to make, I'm thinking a combo of hemp,almond, black sesame seeds and oats. The idea of making that goat cheese with the Almond Cow is exciting! Use to be a favourite before I ditched dairy almost 20yrs ago. Those crackers are the answer to my freezer nut pulp stash! I was throwing it into random things but never quite satisfied with the results.

Being able to make my own nut milk would be such a game changer! So much less waste from cartons at the store! Almond milk is an everyday staple for me, so using the pulp after making the milk is a great way to reduce waste!

Love how natural you are in the kitchen and relaxed about measuring (when appropriate). Love the idea of mixing nut milks! Almond is too thin and I never liked soy milk. I love the taste of oat-milk. Those crackers look lovely! I'm much more of a savory fan than a sweets fan so cheese and crackers sounds really good right now. I would love to have the Almond Cow sooo much because I'm always making my own vegan milks and oat milk is really hard to make smooth without over-blending and heating up. Always making a mess with the process too, and it's so time consuming. Thanks so much for the video, those cookies sounded so light and crispy when you bit into them, I'll have to try them. (I have been making your butter for years now, such a life-saver!)

I'm getting more into a vegan lifestyle after learning the health benefits, especially as I age. I've made my own almond milk for years, and made crackers from the pulp using a nut milk bag. Tangy vegan goat cheese sounds amazing! I just watched your yogurt video and I’m going to make cashew oat milk for it. Definitely want to try the crackers as well. Thanks for teaching us how to make our own food. Being vegan and gluten free gets expensive so making DIY foods especially dairy products is so helpful

Thanks for the Awesome recipes ...I make crackers, but the tips on the crackers with getting the dough to fit in sheet pan and also trimming the edges and moving that extra to where needed was great (thank you!!). I'd make an unsweetened oat & cashew milk first ...yum!

I’ve been making mostly cashew based cheeses because I love the texture and it doesn’t require separating pulp, so I would love to have a machine like this to make almond, oat and everything else that normally needs a nut milk bag! ❤ Looking forward to your new cookbook!

I'm a big fan of all nut/seed milks but prefer a good cold cup of almond milk! We've learned that different milks are better in certain recipes so having the ability to quickly make an oat or cashew milk would be incredibly helpful. We also love making as much as possible from scratch so we know exactly what is in our foods! Keep up the awesome work!

Love your creative ideas. When making milk, no matter how much I spin it it is never completely smooth. Even so, it makes me happy that cows are happy so I carry on. Your idea of combining oats and almonds sounds yummy and if I had a Happy Cow machine I’d be much happier too.

I love the idea of making my own milk, crackers, and cookies. I would try almond milk first, but the combinations would be next. Then cheeses, butter….endless ideas! Thanks for all you do to help us eat healthy.

Oh my goodness all those cheeze's look so good! I would probably start with almond and then try some combo's! Having ideas and recipes for the pulp is amazing too!

I've been experimenting with yogurt, but you've got me excited about coconut oat yogurt and making crackers with the pulp. I can't wait to try! Looks delicious.

Thanks for the inspiration! I’ve been making oat milk with either sunflower seeds or cashews and found the pulp to be well, unappealing so compost them. Now I’ve got a way to use them and stop feeling guilty! I’d use the machine if I win to make almond oat milk which I haven’t tried yet. Looking forward to your new cheese recipes!

Hello Miyoko. I really like the idea of mixing almonds and oats to make my milk. My go to milk is oat but I'm ready for a change! Your cracker recipe might be a good start for morning cerials. Add a bit of cinnamon and raisin and yum. Thank you so much for turning the "on key" to so many imaginations.

What an incredible thing to give away and something I’ve always wanted to get, so I know exactly what’s going into the nut milks I’m drinking, and so that I’m not throwing away so many bottles and cartons. I’d love to try making some cashew and almond milk, maybe even a combo, the options are endless!

Hi, I just recently found you and am loving your show! I have made different plant milk a few times using a blender and ..... well it's a process for sure. I did bake the oat bits once and used them on my yogurtbut i love your ideas for crackers and cookies, WOW! Thanks for these amazing new ideas! I would love to make blue cheese. I have attempted to make blue cheese dressing but it sure seems like using your blue cheese in it would put it over the top. thanks for your channel!
