How to make almond milk at home with just 2 ingredients, 10 minutes and a blender!
For homemade almond milk you only need raw almonds and water. It doesn't contain preservatives, thickeners and emulsifiers like store-bought cans of plant-based milk.
In addition, this recipe allows you to control the sugar content, choose the flavors you like, and play with the concentration of milk to your preference.

📌 Ingredients
200 g raw almonds
500-900 ml water (depending on how concentrated you want the milk to be)
a pinch of salt
1-2 small dates optional (optional, or other sweetener)
1 teaspoon vanilla extract (optional)

🔪 Preparation
Place the almonds in a bowl and pour enough water over them to cover them well. Leave them to hydrate overnight. The better hydrated they are, the creamier the milk will be.
The next day, drain the almonds from the water they have been in and rinse them well with fresh water.
Put the almonds in the blender bowl, add the water (I put 800 ml) and the salt. Optionally, also now put dates or other sweetener and vanilla.
Pulse on and off 2-3 times until the almonds are crushed, then blend continuously on medium until a smooth, opaque white mixture forms.
Strain the obtained liquid through a very thick sieve in which you put cheesecloth in 3-4 layers. I used a bag through which I strain the cottage cheese.
The strained liquid is almond milk. If not eating right away, refrigerate for up to 3 days.
Place the almond pulp remaining after straining the milk in a tray lined with baking paper and dry it in the oven at 100 degrees for approx. 60-90 minutes.
After cooling, store the ground almonds in a jar and use as a topping for yogurt or porridge or as an ingredient in cookies, cakes, smoothies, etc.
