Happy St. Patrick's Day! My friend Manny, from Manny's Made at Home, made this mouth-watering Dublin Coddle last year, and I've been dying to try it out!
This recipe is mostly traditional, with a few tweaks for some extra color and flavor, and is a total comfort meal for St. Patrick's Day or to keep you warm on a cold day!

INGREDIENTS:
½ tablespoon oil
2 onions, diced
2 garlic cloves, sliced
½ pound slab bacon, diced
6 Irish sausages, cut in ~1" pieces
5 potatoes, peeled and cut in ~2" pieces
2 carrots, peeled and cut in ~1" pieces
¼ cup fresh parsley, chopped
salt and pepper, to taste
32 ounces chicken stock

I may be biased but what a great recipe! Your coddle looks amazing, and your video has beautiful colours! I love the presentation and that extra sprinkle of parsley for a pop of colour is amazing! Love seeing more of you throughout too, excellent job! ☘️

Haha I didn’t mind that sausage burst since I was cutting it up anyway, but I feared that the sausage was just going to completely ooze out of the casing and leave me with ground sausage 😅 So glad you noticed and liked the changes too! It still needs some tweaking and extra practice speaking to the camera, but I’m excited for the changes 🤗

I like the back and forth between a voice over and actually seeing you talk. It's definitely a nice difference. There's one good way to reduce the amount of fat used. Cook the bacon first so that when it's time to saute the onions you can use some of the leftover bacon fat to cook the onions instead of using cooking oil. I love doing that whenever I cook at home. Cook the fatty meats first then use the leftover rendered grease for other food.

So glad you enjoyed it! A little more work, but I did enjoy the flow of the video more! That’s a great idea, I did think of it, but I worried the grease would soak into the onions and make it harder to separate out before adding it to the pot. Though definitely something to experiment with! The way I did it came out perfectly though! I didn’t feel it was too greasy at all!

@@Maikoh Yeah it must be difficult constantly filming videos with telepathy. Must be nice to actually speak with your mouth for once. 😆 I can see your point. Bacon grease is more likely to solidify at room temperature when you're cooling off the onions in comparison to liquid fats like oils. Glad to know your method still worked out in the end though. Greasiness can ruin a good dish.

That looks so awesome! But pro tip fryer bacon first then your sausages, then your onions and garlic. That way you don’t have to use any extra oil at all.😊

Si le preocupa que sus papas se vuelvan demasiado suaves, podría usar una papa con alto contenido de almidón como las papas rojas, ¡pero yo usé papas Yukon gold, que tienen contenido de almidón bajo y me encanto como salieron. Me salieron suaves pero no era puré, si me sorprendió que no se suavizaran tanto.

Onions? Garlic? Chicken stock? WHAT THE ACTUAL FUCK IS THIS? Coddle is potatoes, sausages, bacon, onions, water, pepper. Anything else is not coddle! There's no grilling or frying anything! Everything is boiled in the big pot! No grilling the sausages amd bacon first what the fuck!

For a start it doesn't have carrots in it & I have never had Guinness in it.. It's meant to be a white stew. Guinness would make the gravy dark... It's good old fashioned coddle. No browning of sausages, chopped bacon, onions, potatoes. Salt & pepper and fresh thyme... . Traditionally barley can be added to it sometimes.... Served with Irish soda bread... If you are going to call it traditional Irish coddle at least get the recipe right!!! ....
