John, my grandmother passed away in 2011 and no one had her caramel cake recipe. I made your recipe for my mom this Mother's Day and we all agreed that it tastes just my grandmother's recipe. Thank you so much for giving this recipe back to our family!

Made this recipe (5/23/24) it came out great! Two things to be aware of when making this cake: using three 9" baking pans can cause timing issues in an oven if they all can't fit on the same rack. I fix this by letting the "odd man out" sit in the warm oven (oven off) for 5 minutes to firm up a bit more. Secondly, If you cook the caramel for too long it will start firming up in almost a candy like fashion and it will be delicious but hard to spread. If using the "softball method" when you first start getting solids in the water you're done. Also, I only ended up using about 1/3 of the confection sugar that I made because the caramel was so stiff from me over cooking (no candy thermometer) but it all worked out. Taste: this cake was echoing and my mother's mind calling her back and she's not a cake eating person😂 Thanks for the great recipe. I always enjoy your great personality.

Please remember that many of us don't have fancy kitchen equipment! A basic whisk and hand tools work for everything. Although it takes longer, many will say they get to put the love into their creations by spending time on making them.

I really appreciate all those tips John gives in the videos! Not many recipe videos explain the details or cautions with delicate recipes like caramel or using butter+flour instead of baking spray for whiter cakes. I reeeeally like John's tips, recipes, and your video! Thank you John so much!

I made this cake and OH MY GOODNESS!!! First the cake mix was the bomb then the frosting caused me to have a out of body experience 😋😋😋 It almost didn't make it to the cake 😕

It's not just the air in that caramel that thickens it when you beat it, you're building the sugar particles like in fudge. I've made a lot of caramel and definitely over stirred some of it, and it just turns to fudge/ no-bake texture. Which is useless as caramel but amazing to just eat with a spoon.

My mom often made brown sugar caramel frosting. She was a master at the cooking technique, and she used to hand beat the frosting. It always came out at the right consistency. It is delicious on chocolate cake as well.

3:58 In Sweden, our cake recipes use fine breadcrumbs instead of flour when buttering our cake pans. Glad to know flour is also an option!
