The first restaurant Kitchen was the cleanest kitchen thus far all the dishes that were shown looked delicious I just can't get with the Chef using his feet with all the new technology of machines that have been invented keep up the good work

They were speaking Korean. I sometimes hear Japanese in the second half, but I don't know if it's really Japanese people. Koreans run Japanese restaurants all over the world.

All cooking method is Japanese traditional method. But they speak Korean. probably Japanese noodle shop in USA or in Korea. But they studied Japanese cooking as well. And ingredient is correct like using katsuobushi-dried bonito, and dried young fish and kelp.

When I see food not being touched directly with hands, specially after it is cooked, I know the quality must be amazing. Because that's how much they care about the quality and about their customers! I wish I had a foodie partner to visit Japan!

80%는 같음. 10%의 퀄리티 상승을 위한노력임. 요즘은 다 제품쓰고 그 시간에홍보를함. ㅋ 그래서 오래 못가지. 근데 웃긴게 자가제면으로 하는집도 오래못함. 몸이 망가지고 돈도 안됨. . 장사는 요리사마인드로는 힘들어 ㅠ

just a quick question, I know that the noodles were in plastic but why the need of stepping on it when you have a machine to flatten it?

Done to align the gluten in the noodle. Seems weird, but it makes the noodle more chewy and as a result, better for ramen.

you need to be more precise with your food names. the first dish from 16 min onward seems to be tantanmen, not ramen. and if that's in japan why are they speaking korean? korean tantanmen in japan won first place in japan?

ラーメンはかん水入れなくてもいい、というか、入れないほうがおいしいって誰か日本全国のラーメン屋に教えてやってくれ本場中国の面は入れないからね。ごく一部のかん水入り麺という種類の麺は当然だがかん水入れるが、ラーメン＝かん水入れるって訳じゃないから。ニラが入ってなくても餃子は餃子であるのと同じや

ASMRにこだわる必要が有りますかね？お店の方とのトークが聞きたいですね。何処のお店でもやってることはほぼ同じ、でなければ似たようなもの出来上がらないし、なんかもう少し見る側が楽しく、美味しそうでひきつけられるようなのUPしてほしいですね。因みに日本のおなじような題材で動画のUPしてる方このへんが良くわかっていて、お店の方に苦労話とか店の歴史とか諸々、動画の中身以外でも楽しめます。文化の違いなんだろな、只の猿真似から自分たちの形を作ってゆくのだろうけど、道筋が間違っている…と思う。正直こんな動画ばかりUPしていても...。
