LEARN HOW TO MAKE A CREAMY VEGAN MUSHROOM STROGANOFF RECIPE
LAY HO MA!! MAN, mushrooms are so great aren't they? They come in many shapes and sizes and have the most amazing flavours. The sound of a creamy, comforting, earthy mushroom pasta dish makes the world right. Join me in this episode and learn how to make a delicious vegan mushroom stroganoff recipe right at home. Let's begin
Ingredients:
1 cup cashews
1 1/2 cups water
few pinches of salt
300g mixed mushrooms of your choice (I used a mix of shimeji, shiitake, oyster, cremini, king oyster, and seafood mushrooms)
pepper
3 pieces garlic
1/2 red onion
1/2lb pasta
3 tbsp olive oil
2 tsp smoked paprika
1/2 cup whiskey
few sprigs parsley
Directions:
1. Add the cashews, 1 cup water, and a generous pinch of salt to the blender and blend on high until smooth (soak the cashews overnight if you don't have a high powered blender)
2. Bring a pot of water to boil for the pasta
3. Prep the mushrooms by peeling down the oyster mushrooms, slicing the cremini mushrooms, roughly chop the king oyster mushroom, and chop the seafood mushrooms in half
4. Finely chop the garlic and thinly slice the red onion
5. Cook the pasta to package instructions
6. Heat up a frying pan to medium heat. Add in the mushrooms
7. Dry sauté the mushrooms for 3-4min. Season with salt and pepper
8. Sauté for another 2-3min. Then, add in the garlic and onions
9. Add in the olive oil and smoked paprika
10. Give the pan a stir. Then, add in the whiskey. Sauté for another 2-3min
11. Add in the cashew cream and season with salt and pepper
12. Stir the pan. Then, thin out the sauce by stirring in 1/2 cup water. Cook for another minute and turn off the heat
13. Strain out the water from the pasta
14. Plate the pasta and ladle the mushroom sauce on top. Garnish with some freshly chopped parsley

Me too!!! I love all mushrooms! I'm even thinking of buying a mushroom log. Luckily, we had king oyster, seafood mushrooms and criminals! We have a great international market in the middle of Iowa lol!

Ok we made this for dinner! It also every but as scrumptious as my old from scratch stroganoff was but wow 20 mmin and done, so creamy and delicious and hearty!

I'll be making this one for sure! You probably should warn viewers about adding whiskey to a hot pan because it could flame. (1) never pour directly from the bottle (2) have a pan lid handy (3) always have a fire extinguisher on hand anyway. I don't mean to be a downer, just want everyone to be safe. This looks really delicious!

It can definitely happen with any other distilled spirit like brandy, vodka, tequila, rum, etc. With lower alcohol percentage like liqueurs, it still might but less likely. Wine will at most for just a second if you really try to light it.

Since I watch Wil's videos I try so many different recipes! Especially when you have the basic asian ingredients you can vary a lot 😊👍 I guess 3 times the same dish in the last 3 months is my maximum...and there is waaaaaaay more to cook 🤩

I tried this recipe and it it’s absolutely delicious, also tried for the first time the cashew cream, honestly you cannot tell the difference, I’m never going back to the regular heavy cream (with almost double of the calories ) It’s one of the best dishes I’ve cooked in a long time, highly recommend☺️☺️☺️☺️☺️

Also tried - agreed! I might use sweeter onions next time and a bit less whiskey to ease up on the “bite”. I had a case of mushrooms, and this was a great way to use them up!

Dry-frying the mushrooms before adding oil is a great idea I will use next time I make that dish. Using different mushrooms also sounds much more interesting. Thank you for those tips!

Whiskey? I'm in! I am trying to incorporate more mushrooms each week into recipes. I had the misfortune of eating rubbery, canned mushrooms when I was younger and I never got over it. Know I'm learning to properly cook each mushroom type and which ones I like. This looks absolutely delicious! Thanks Wil.

@@YEUNGMANCOOKING I made this yesterday for lunch. I had to tell everyone how DELICIOUS this dish was. I only had button and creminis available and had everything else. If someone had made this I wouldn't have even known there were mushrooms in this! The sauce became thick & creamy and coated the noodles and there is just so much rich, nutty flavor. This is going to be a monthly dinner in our home. And hubby LOVES cashews so I know he'll enjoy this too. Winner, winner mushroom dinner!

P.S. Someone has to say it, Wil - but your hair is always impeccable! I assume someone who pays attention to detail in his (or her) grooming will pay attention to detail in other aspects of his or her life, and so it seems to be with not just your cooking but also your filming of it. That film taking us behind the scenes was fascinating!

Thanks for this recipe. I made it last night with what I had on hand (white wine instead of whiskey, only 1 kind of mushroom -cremini- and a shallot in lieu of a red onion). It was so delicious! You make everything sounds so simple and easy to do. And well it was!

I made this dish last night. I modified it bc I didn't have enough mushrooms. I added zucchini and red bell peppers and used a bit more smoked paprika(oops). Amazing. First time to use cashews and I can see so many other uses for it: alfredo, mac n "cheese". Thank you.

Kay, I just made this for supper. I'm eating it as I type and it is sooooooooo delicious! I borrowed whiskey from my non-vegan neighbour and served him some of the stroganoff. He's didn't know it was all plant based and he's really enjoying it too! Thank for this kick-ass recipe, Wil :)

I just made this recipe and its really really tasty and good. All I had was regular button mushrooms on hand and it still came out excellent. Also Im grateful that this recipe was one that did not call for tofu because so many vegan recipes I have call for tofu. This was filling & good, easy to make. Thank you for sharing

I made it today using shiitake, King, oyster and maitake mushrooms and it was absolutely amazing!!! I used a white onion because I forgot to buy a red onion. This recipe is going to be on my dinner rotation. I loved dry roasting the mushrooms- hadn’t done that before. The whiskey and paprika combination pairs beautifully with the cashew cream and mushrooms. Thank you so much for sharing this wonderful recipe 😊👏🏽

I made this yesterday for the 2nd time, but used a mix of earthy and King mushrooms - but I also soaked .5 oz of dried porcini in 1 3/4 Cup of hot water and added the porcini to the mushroom mix. I then strained the soaking water through cheesecloth and used the porcini infused water to blend the cashews - this really took it to another level. Edit: I started with 1 3/4 Cups of hot water to soak the porcini, so that by the time the mushrooms hydrated and I strained the water, I would have the required 1 1/2 Cups of porcini water to replace all of the plane water in the recipe.

Looks good! I’ve made ‘shroom stroganoff with sherry and brandy and love it. Never made it with whiskey tho. Husband might freak out if I used his very expensive whiskey to make dinner but I’m curious enough about the flavor to give it a try.

I've been making this for decades & over time I started chopping my raw cashews for a quick soak. No need to overnight them especially when you crave this dish on a wintery night. I like it with egg white birds nest noodle, you can cover the best with boiling water from your tea kettle & cover it for 8 mins then I add noodles to my stroganoff mixture for Carrey over cooking so the noodles can absorb the flavor as well. I sprinkle with red chili flakes & parsley 😉

I guess we could substitute vegetable or mushroom stock for the whisky? I know it would change the flavour but hopefully not spoil it. This looks wonderful, Wil, and I can't wait to try it! You know the alcohol content burns off in the cooking process. You can buy a tiny bottle at the front counter of a liquor store if you don't want to keep liquor in the home.

The alcohol content burns off in the cooking process and you're only left with the slight flavor. Liquor stores carry tiny bottles at the front register so you don't need to buy much and have it leftover in the home. ✌

To Sandy Taylor A really good, intense vegetable broth is a good replacement if you do not wish to use alcohol. I use broth as we have children in the house.

Wow. Delicious Sunday lunch! We used bourbon whisky. And one thing I always do when I cook pasta is throw in some broccoli or peas the last minute of cooking the pasta. When the water comes back to the boil, it's done. Thank you Wil. Had peanut ramen a couple nights ago. Delicious.

I made this tonight with gluten free noodles (Banza Gemelli made from chickpeas) and even substituted rum because I forgot to buy whiskey...still sooo delicious! The cashew cream is truly a revelation and so simple.

Wow! This looks fantastic! I love mushrooms, but had problems with too much water in them. This technique, dry sautéing solves the problem. Thank you so much for your greatness in cooking and nice voice. I love how you crush garlic with your hand. Very cool. 😎

I love the fact that this is all vegan, yet the main attraction to this kind of cooking is flavor, quality and love of food. No one in their right mind would miss animal products when you cook like this. This is the future of cooking and eating.

I made this with a variety of mixed mushrooms my friend picked up for me at a local farmers market. I love mushrooms and this is absolutely my new favorite way to cook them, it is easy and quick to make and has a delicious rich and creamy taste. My new go to.

Never knowing about you until a few cooking vids yesterday, I like the simple steps and complex but complementary flavors. Straight and to the point, I couldn't put my finger on your unique style until I read that you're a violinist. Makes sense.
