I have much gratitude to you for featuring how palm sugar or jaggery is made . Palm toddy is fermented in the Philippines for vinegar or as "tuba", cheap alcohol sold in corner stores for drunkards .The alcoholic palm toddy was used too for leavening rice cakes but replaced by yeast or baking powder. Here in South Texas border, sugar cane piloncillo is popular. Asians prefer palm sugar in a lot of dishes and sweets . I drool over your delicacy with nuts and cardamom. Edit : your son delights and amuses me in trying to master that coconut grater . Not easy .

Today, I learnt, how coconut palm jaggery is made.The way the rope is tied to the tree to enable, the climber to climb safely is really fantastic. A method which others must learn. It is the first time, I am seeing a climber using this method. Making the dodol is a very tedious process. It was so nice, of your two little darlings assisting you. I would give them a big hug if I am there. You must be very tired. You reminded me of my grandma and my mum, who were very persistent, in preparing cakes which were very time consuming. You are so hard working, patient, clean and admirable. May God bless you and family with good health, longevity and happiness. All the best. God bless.😍🙏

I really admire how the man bows down to the tree before climbing it, before taking the basket on the tree, and after coming down...true love for nature and things that nourish us and help us (I heard traditionally people also bowed down to their tools before starting work)...these folks know how to live in tune with the Mother Nature....wish entire planet was like that
