When I saw your baby wipes, I actually remembered that you had a baby 😂. I’m so happy you don’t feel pressured to show your baby or make him a part of your channel. People can become entitled online and bring unnecessary negativity into your space, especially when it comes to raising a child and that just not something that anyone, especially now, needs more of. So I’m happy to see you thriving and enjoying life and also freely choosing to decide how you want your channel without some of the pressures some mothers would feel when having a platform. 💕

Becky this funnest thing happened this morning... I've been watching you for years... I have been telling my daughter about your canning and gardens for a long time, and how much I have learned... Now I live in Alabama and she is in Vermont. She’s a travel nurse. she calls me this morning, telling me about acres Homestead... I told her oh I know Becky I’ve been watching her for years, and by the home... She's moving back here and we’re going to Living on aa farm!!! We can't wait to start our garden and we will be using your ideas the whole time.... Keep making your wonderful videos!!!!

If you let the tomatos from the freezer defrost when you are ready to use them, the skins come right off! It’s such a time saver!! 🍅🍅 Love your videos 🩷

I just put the unpeeled ginger in a small freezer bag. When I need ginger, I just pull out a piece, scrape a little peeling off, and grate what I need. Grates easily while frozen. Just put the rest of piece back in bag and back in freezer. Haven't wasted any since I started doing this.

As a fellow Washingtonian (living along those fault lines like we do), you really need to secure your shelving and jars to withstand earthquakes. It would be a shame to lose your food storage…and it wouldn’t take a very big quake to cause everything on those shelves to fall off.

We had 2 huge earthquakes in Dec 2022 and Jan 2023. Everything in my kitchen cupboards crashed to the floor! We put those rollers on the doors with the accompanying closure. My husband built the lips for our food on shelves in the garage. I also bought museum putty to hold things down. It was a sad and expensive occurrence.

I love watching you preserve all your fresh produce. For pepper abundance: Roast the peppers Peel off the skins Make a brine of lemon juice olive oil and vinegar Add peppers to a jar add brine Water bath can them It's great for snacking, adding to salads, or making cheese

Save the peals from the ginger and add it to your tea especially if you're having colds or stomach upset. Just place it in a tea ball . I mince it up and stick it in the freezer . I do green tea, ginger, and honey

Use binder clips to secure your parchment paper to the baking sheets. Keeps it from slipping around. The new website is so nice. Thanks Josh.

Hi Becky, I have been watching your videos for a few months and I always enjoy them. I just wanted to share something that might be helpful. Growing up in the carribean my grandmother always grew her our ginger for tea and baking. If you plant a piece of the ginger it will grow and you can also use the leaves to make tea.

Becky, you don't need to peel ginger, just grate it, the skin doesn't come through. I keep my fresh ginger in the freezer and grate as much as I need straight from frozen and put it back in the freezer, Ginger peels is also good for your chickens, it aids their digestion. By the way, WOW to the new website, love it.

Becky! I preserve my ginger like you freeze your garlic pucks and I don’t peel them at all!!! The skins actually hold A LOT of nutrients and don’t change the texture or flavor at all! Saves you soooooooo much time

I freeze my ginger all the time. Sometimes I peel, other times not. Putting whole ginger (turmeric too) is a great way to preserve a great sale on these!

1/ month vs every 2-3 months: You have more food storage space and it is better organized than it was in the last house. I think the past couple of pantry challenges have also taught you what you use in which quantities plus developed more of a "use what you have" approach. I think that some of your current food preservation effort could/ should reduce some of your Azure purchases as well. So yes, it doesnt surpise me that your Azure hauls are smaller and fewer.

Oh Becky, I just watched your L&D, post partum videos. I am a retired Ob/gun. Last baby delivered 10 years ago. You were awesome and experienced most of the complications of your experience except seizure and stroke. Even as a physician, I think delivery is traumatic. Your doctor and nurses were awesome. Most likely, your next delivery will be normal😮. BTW, we have grown much if our own food. I am amazed at your garden yields.

Website is great! I really appreciate the print recipe button. I am English and sometimes need to work out equivalent ingredients that I can buy here (or measurements) and call me old fashioned, but I like a paper copy 😁

For anyone interested in making the farmhouse style cream cheese at home, you can strain yogurt to become the texture of cream cheese easily. I make homemade yogurt by culturing 1/2 galon of milk with 6 Tbsp of purely cultured yogurt (look for something with JUST cultures like Faye or Costco's Greek Yogurt). Let this cultured milk sit in a warm place for 6-8 hours to get thick (the longer it sits, the tangier it gets). Once you like where the yogurt is at, you can pour into a cheesecloth lined strainer and allow to drain in the fridge overnight. You'll get a texture very similar to cream cheese that tastes so delicious on toast, or just eaten as is.

I typically buy ginger and will freeze the whole root and grate as needed. Processing it all at once and freezing it into little pucks is brilliant!! Thank you to whoever suggested it and thank you Becky for showing us how to do it :)

I like to make a garlic ginger paste and make cubes to freeze. Then store. Some people will add onion to the paste but I think it makes it a little watery. So I just use ginger garlic paste and add onion if needed. Also grandkids not fan of onion...but don't complain of just garlic ginger. 😂

Peeling ginger with a spoon is definitely the easiest way for small amounts. I’m loving the idea of making them into pucks, but I would have saved even more time and whizzed them up with the skin on as well. The ginger skin adds even more spicy flavour 😋

We made cucumber chips in the freeze dryer this year, just sliced thin and seasoned and they turned out crispy healthy chips, You can also do the zucchini like that too!

Just took plain yogurt organic bananas, and peanut butter and made ice cream for my dog. You put it in a ice cube tray in your freezer. She loved it but I made sure I used everything organic. Yeah it’s expensive but she’s worth it.

This year I watched Jag at Daisy Creek Farms showing how to grow your own ginger, and I did it! I haven't unearthed my treasures but the plant itself smells amazing in the garden and hopefully I will get the amount you purchased, from planting a few pieces in my zone 6B garden! It's very similar to growing potatoes.

I tried Azure’s cheeses recently. I haven’t tried them all, but the ones I have, the melting quality is amazing! And their prices have gone up in the last two months. I tried the Graziers brand from them. It’s not as vibrant in color, but it is still tasty and costs significantly less.

Just a tip about cheese storage. Open your cheese... cut it into ~1 lb chunks ....seal individual chunks in Foodsaver bags ... refrigerate....the individual packages will last about the same amount of time as the original unopened package would...no shredding or freezing necessary. Hope this is helpful 😊

Last year I got so many cucumbers and I didn't want to throw them away, so I sliced them in my food processor and froze them. Then when I made a stir fry dish, I would thaw and fry them in with other veggies. More homegrown and organic veggie goodness to add to a meal!
