An Italian Tries Chicago DEEP DISH PIZZA for the First Time
Eva and I are back in the good ol' US of A. And that means it's time for me to expose her to more classic American food.
We happen to be moving across the country and, since it's more or less on the way, we decided to stop in Chicago for a much-requested deep dish pizza. Join us as we find more than pizza in Chicago and journey to our new home!

italian sausage (of which is slightly spicy with fennel flavor and a minimal hint of garlic) + basil. That simplicity of combination is beautiful and delicious. n_n

That wasn't real deep dish. Sauce is one top for real Chicago deep dish. Should have gone to Uno's or Lou's for the best deep dish🤦🏻‍♂️🤦🏻‍♂️🤦🏻‍♂️🤦🏻‍♂️

@@MobileCanal Did you watch her earlier reactions?... she doesn't like most American pizzas. The oiliness, the toppings, the excessive sauces and the flavor, especially the strong garlic flavor in American pizzas, I think that she also complained about the Domino's pizza being sweet.

I've been to Arizona and I was pleasantly surprised at how lovely it is. I've expected vast dry desolate desert, as far as the eye could see. Instead I found Pleasant High Desert and beautiful scenery. Sedano's absolutely stunning. Phoenix has a mall on every corner, and air conditioning everywhere. Of course there's the Grand Canyon, who can forget about that!

Very many Chicago Italians actually trace thier history to Sicily, so there's a very good chance the "Chicago pizza" actually is what Eva called it but the American audience just recognized it as a weird pizza and ran with it

Sicilians in Chicagoland often make granny style square/rectangular pizzas and something like scfincione too. My friend's dad used to make them for parties. Mmm

Ive been to Sicily and my family heritage is from there. I never saw anything resembling American "deep dish" "pizza". Detroit style is a little closer to Sicilian.

@@theouthousepoet Sfincione is not reminiscent of Deep Dish Pizza, at least the deep dish pizzas I have seen. I never knew the name Sfincione, but it was served as the bread at a Sicilian owned seafood restaurant here in Redondo Beach, CA.

@@jimandmandy ah, so you’re saying that what Eva made was not sfincione. Out of intrigue, I did a quick google search and it turns out Eva is indeed an Italian from Italy and knows what sfincione is. While there does appear to be many renditions of the dish, many of them are similar to the one she made.

As an 80% Sicilian whose nonno and nonna were from Around Palermo, you made me tear up with pride. You are a brilliant food artist and I bless the day that I found you and your wonderful dear husband. Again bless you both. Plus you both have wonderful sense’s of humor.

She's totally right!, it is a torta! Deep dish uses a completely different dough than a "regular" pizza, it's totally a torta

Except Italian torta salata is actually more like a quiche than a Chicago Deep Dish pizza which probably more like a hybrid of the two. It's also more related to the Sicilian style than the Napoli.

@@whodat9198 No, "torta salata" only means "salted pie", it can be many things. The "sfincione" she made has nothing to do with a "quiche" (french dish with eggs and cream). It's Palermo street food focaccia/pizza with dough, tomato sauce and cheese. It's very close to the Chicago Deep Dish pizza. A lot of Italian immigrants were Sicilians, so it seem very probable that they made an American version of it and called it Pizza.

@@IronFreee no you misunderstood. the torta salatas on youtube made by actual italians looks like French quiche. the sfincione she made is not what we call deep dish, it's what we call stuffed pizza.

@@whodat9198 I'm French and Italian... Her version of the sfincione was enclosed in dough with two floors of condiments, that's not usually the case. The ones I ate in Palermo were just a layer of condiments on the dough, very similar to the Chicago Deep Dish pizza I ate... A quiche is a "torta salata" like all the others salted pie. @@IronFreee Correct, her enclosed version is our 'stuffed' pizza. Most if not all the sfinciones (focaccia with tomato and stuff on top) I see on KZfaq are what we call Sicilian pizza, Detroit pizza or 'Granny' pizza which is more common in the midwest areas. Deep dish is quite an evolution of these various types. If you ate a Pequods, Unos from Chicago you wouldn't really see much resemblance to a sfincione. Sfincione would be closer to a Little Caesar's pan pizza. But a torta, sure seems more closer due to the crust and presentation.

Then we switch off KZfaq and we remember who we really are and we cry alone 🤣🤣🤣🤣🤣 living abroad I realised how rich is our land and how unable to make it worth we are...here in the Nederland they had nothing,sand and water and the turn it into gold...in Italy we own 3/4 of the art in the world,excellence products,amazing landscapes and history and we’re not able to do nothing with that....if we sell Italy to China in sure it become a world nr 1 country

Lifelong Chicagoan here. So happy with Eva's reaction, and a good choice with Pequods, though not the absolute best. And pepperoni as a recommended topping is a joke...sausage all the way.

the only thing I don't like about deep dish is it's just too much dough, too much bread, but THAT looked fantastic. I mean some of them are like 8 inches thick of just dough,even after it's cooked, just a huge ass pie of bread. One piece will do me fine, thank you very much.(sorry as you can tell I'm a NY pizza lover or a neopolitan pizza.) I love it she says, "In Italy, we called that burned" but you have to have that crispy outer crust or it's not deep dish pizza.

I can confirm! I am italian, but I live abroad. Once I was traveling for work from Ohio to Dallas and I had a stop in Chicago. And I tried the Chicago style for the first and last time, I must admit that I really liked it! I personally would not call it "pizza" but is a sort of it ,and is GOOOOOOD! ;)

That's much the reaction I expected from an Italian: It's not a pizza, but it's good. Thank you for actually getting a freshly made one, instead of the frozen. So many reactions I see on KZfaq use the packaged stuff and that's just not as good.

I was holding my breath to see if she liked it or not. Chicago pizza is very different from traditional pizza, but it's sooooooo freaking good! It's one of my fondest memories from when I was in Chicago.

She mentioned on one video she just shampoos, conditions and go. She should use a leave in product like curl moisturizer or a thick Frizz Ease. I have wavy/curly hair that tends to poof out all frizzy like a poodle, so I make sure to use Frizz Eease to take care of my friz and define my waves/curls

I enjoyed Eva’s surprisingly positive reaction to the Chicago deep crust pizza, but I was shocked that we didn’t get to see Harper’s reaction to it. What happened 🤷‍♂️ I don’t think that’s ever happened before.

The Italians figured out every possible combination using a meaty sauce and cheese either in/on bread, potatoes, rice or corn. If you can imagine it, they have already done it but named it something you've never heard of most likely.

@@tristansmith5587 pesto means “grinded”, The most famous is “pesto alla genovese “ with basil etc but there are several other kinds of , eg pesto di pomodori secchi, pesto di zucchine, etc

I just discovered your channel and I'm binge watching. You two are adorable to watch and the recipes are fantastic! Hope you come out with a cookbook soon as I'll be the first in line. I grew up in Illinois so well-versed in deep dish pizza and was surprised Italy has something similar. We need more people like you to make us smile, especially in this dismal world right now.

This so makes me miss my Calabrian family! I'm first generation Italian American with family still in Cosenza. My parents were born in Villages outside of Cosenza, Aprigliano and Corto. Thanks for all your wonderful cooking and recipes.

I don't know why but I get the feeling it's job-related. I grew up in Maine and that's usually why people leave. It's pretty stagnant economically at the best of times - and these are not the best of times.

Deep dish is its own thing, usually only eaten on special occasions. Tourists always get it because we're famous for it, but we usually eat our own version of thin crust, usually cut into squares.

pretty much should go with good sweet sausage, mushrooms, chunks of tomato, some spinach - that's for deep dish. For neapolitan I go pepperoni, black olive and onion. Welcome back!!! Lou Malnati's, Pizzeria Uno, and Giordano's are tops in my book. When I lived up north of the Mason-Dixon line I'd routinely drive 4 + hours just to have a true Chicago Deep Dish Pizza, although I'd sometimes stop in East Chicago at Zel's for a hot dog and fries as lunch and bring the pizza home to have for dinner.

I've never watched Healthy Junk Food (I've heard of them though), but I agree about them doing a collab with Max from Tasting History. He actually did one with Frank from Proto Cooks/Epicurious about lasagna, so it would be fun to see him do an early version of some other Italian dish (maybe pizza?) and Eva do the modernized version.

You made a good choice with Pequod’s-and I agree that you should have gone with sausage instead of pepperoni. I usually introduce out-of-towners to deep dish at Gino’s East, but my all-time favorite deep dish is Lou Malnati’s. I got excited that you were “moving” to Chicago. Our loss. I hope you get acclimated to Arizona.

As someone who lived in Chicago for nearly half his life, I have to say -- good job going with Pequod's! -- Pequod's conforms to one of three major subcategories of deep dish. Namely, the type with the burnt cheesy edges. The other major styles include the more "well-known" style popularized by Uno or Lou Malnati's, and then the stuffed pizza from places like Giordano's or Nancy's. The stuffed pizza, at least if you believe the Giordano's founders, is supposedly derived from a pizza rustica/pizza ripiena. Also, if you are actually interested in Chicago style pizza, you need to be aware that "Chicago style" originally was an ultra thin cracker-like crust, usually cut into squares, which we generally call "tavern style." Deep dish has more notoriety among tourists because it is so non-conventional, but the tavern style (as seen at places like Pat's or Bartoli's) far outsells the deep dish among the locals. I can also add that the hugely thick deep dish pizzas are more popular during the colder months of the year -- which should make sense. As much as I will consecrate altars unto the irrefutable supremacy of a good deep dish/stuffed pizza, I also am not drawn to it when the weather gets hot.

The go-to staples for Chicago style pizza are Gino's East and Pizzeria Due. It takes around 45 minutes to cook a Chicago deep dish pizza at Gino's East, so it's best to order ahead and then show up a few minutes before it's ready to get a table to eat it or take it with you.

Not really. In Arizona the Southwestern/Mexican food is fairly mild. I lived in Tucson, AZ for 5 years. While one can find spicy hot Mexican food there if you try, it is not the milder authentic Sonoran food indigenous to the area. Here in Chicago, the pie that Eva made is what we call a “stuffed pizza,” The second crust on top makes it different from the “deep dish pizza.” I only eat either of these when out of town folks visit. Otherwise, I stick with the thin crust pizza.

As a long time Chicagoan, I would say that you could spend a well planned out week in Chicago eating pizza and filming. There’s a lot of variation in the city as well as in the suburbs. In the northside Ravenswood neighborhood there’s a place called Spacca Napoli. There is a local chain of pizzerias called Aurelio‘s. There are a few of the Detroit style pizza places. In the suburb of Elmwood Park where I now live (it used to be all Italian), there is Spizzico, geo‘s Pizza on Harlem Avenue, and probably a Lou Malnati‘s pizzeria somewhere. Also in River Grove there is Da’Luciano‘s. A lot of the traditional Italian neighborhood in Chicago was gutted when they built the Kennedy Expressway and the UIC campus in the early 60s. As a result many of these families and businesses moved out to the west side of the city at the very border at Harlem Avenue. There also still are some small import and specialty grocery stores we can find Italian goodies. A block north of my workshop is grand Avenue where there is a specialty store called Tempesta which actually sells the closest thing to real N’duja. Further east along Grand Ave.: Salerno’s, Mart Antony’s (just off the ave.), and Oggi. So many food possibilities, so little time!!

I'm with Eva on bringing back the cheese from Italy. When my Nonno visited us, one suitcase was always dedicated for coffee, cheese, salami, and chocolate. My American friends were always perplexed why...until they tried the stuff. Then it was, "Oh. I get it now."

I'm living abroad (not in the States but still) and I'm doing the same. Every time I go to Italy I take back home as much food as possible. And Eva is totally right, 3 kilos of parmigiano is not that much. If you cook Italian you use it not daily but almost. 3 kilos don't last that long.

@@elle1530 just bring the whole wheel parmigiano is so expensive here… it's not practical to cook italian food that contains parmigiano at all, we leave that luxury to the higher classes. imported pasta as well. dececco is like six times as expensive as national brands so i can't even find it in my local supermarket because nobody would buy it.
