Today I am going to perform a temperature test on my Masterbuilt Gravity Series 800 and not only show you how to test for hot spots, but also HOW WELL the Masterbuilt Gravity 800 performs! When I had my Masterbuilt Gravity Series 560 I had a couple cooks where I was left scratching my head.... its because there were some pretty significant hot spots. Now remember, I have the very earliest Masterbuilt Gravity 560 and I am sure that the firmware as well as the hardware has changes since then, but needless to say the temperatures were OFF.
Now that I have my Masterbuilt Gravity Smoker 800 I needed to do my temperature test, and what better way than to perform a BISCUIT TEST!!! Plus I ran my Thermoworks Signals to show you exactly what the temperatures looked like.
Now I do these tests on all of my smokers: my Camp Chef Pellet Grills, Pit Boss Pellet Grills, Masterbuilt smokers, Char-Griller Gravity 980..... ALL OF THEM! And remember you can do this on every grill you own, and you should even if you own a Masterbuilt Gravity Series 1050 or a Lone Star Grillz.
I run these tests at the temperatures that I run my grills. It makes the most sense. I plan on mostly smoking on this Masterbuilt Gravity 800 Series and so I ran my entire test at 250F.... If you do this test run it at the temperatures that you will run your grill at the most.

I got a 560. Smoked just about everything many times over. My hot spots are along the back top and near the heat source. Thanks for the video!

Put a probe on top shelf ran it 250 and it's within 5f of the built in probe.... not sure what the complaints are about bottom left is a Hotspot but one can tune it with a diy diffuser found on Amazon combined with the griddle manifold but I removed the top half of it to place the diffuser on works really well still tuning it

Enjoy your video, and thanks for the great video. I bought a Masterbuilt 1050 upon your review. I assembled it yesterday and did a seasoning this morning. Quick question. Why am I getting ashes along with smokes? What have I done wrong? FYI, I used the hardwood charcoals.

I thought about doing this myself and seeing how different it will cook. I’ve had my grill 2 weeks and have cooked every night on it. I love it so far and am wondering at what point will those swings or differences change from left to right over time. But maybe this will be my next thing to do. Then do it again in a year and see the difference.

in regards to the 560 running badly, you have to update to the latest software. The PID controller have changed/updated to gain and time delta to better hold consistent temps. But many have issues with the wifi being able to get the update. You may have to contact MB to swap and get a latest update controller.

How do you feel about using the Masterbuilt in wet weather (rain, snow). I want the 800, but I worry about the electric components and BBQing in the spring and fall with rain and snow. Do you run yours in wet weather? Any suggestions?

Mine 560 got a little wet a few times when I was cooking, but I always keep it in the garage when it isn’t in use. I’d get a cover for it and it should be fine

great video!. Great idea on how to see temp differences. Plus you can eat the results! I'm pretty new to this type of cooking. Will the unit extinguish the left over charcoal, if any, at the end of the cook after it's shut down?

Yes after you shut all the vents it smothers the fire.

Very informative video, however, woudlnt a wood fired offset smoker even have hotter and cooler spots during a cooking process?

It depends. The size of a smoker can make for a more even cooking experience… plus some of the offsets smokers (wood burners) have tuning plates

Have a 1050. Smoke everything on the middle and upper rack. If I have to use the bottom grate for a smoke I rotate. When grilling my hot spots are middle and left when facing the grill. Right side is my cooler zone.

@@AndersonsSmokeShow yeah, you're at a lower temp with that hotter right side. Grilling temp, higher airflow makes sense it would be middle and left.

Great video! I’m about to pull the trigger on the 800. The only concern I have is the smoke that comes from new charcoal burning. Is there any bad smoke that gets blown by the fan while cooking? For example, if you’re doing a low and slow will the fan blow on charcoal that hasn’t fully ashed over yet?

With the way its constructed it would be pretty hard to tell how much of the charcoal is burning and where the air is passing over. There are times where you'll see a whiter thicker smoke, but most of the time its running thin blue.

i am think about blocking off the top port and adding a chimney at grate level, maybe using the reverse flow thoughts be a simple mod but might pay dividends in getting the temps even. and I am thinking back right corner mid grates

My problem with that is voiding the warranty.... The 800 definitely runs better than my 560

Have you done this test with a drip pan? That would be interesting. I've found that using a couple of drip pans causes a difference of about 50- 75 degrees.

I don’t think it would be quite the same a griddle and pizza stone are quite a bit different. Doesn’t mean it wouldn’t be good, but the crust would likely be a little different

What I want to know is WHY does the factory temp probe report super steady temps but probes set in different locations ALL report pretty wide temp fluctuations? I think Masterbuilt has intentionally programmed the internal probe to report steadier temps than what is actually going on.

It depends honestly. The controller may be programmed to sample temperature on an interval rather than instantaneously.

I’ll be comparing the two very soon. Possibly even tomorrow if the weather doesn’t ruin that. I personally like the versatility of the 800, but I like the massive main cooking surface of the 980

@@AndersonsSmokeShow I had a Primo, but I need more room and versatility. I have a Weber gas grill so I do not need a grill in that respect. The Firebox is a game changer, without that feature, I would go Masterbuilt. Thank you for your input.

So. I'm going to be getting one of these MBs in the next couple of weeks. The real question is this: do I want the 800 or the 1050? Ideally I'd love to replace both my pellet grill AND my propane grill with one of these... I do routinely cook for 15 - 20 people, and a brisket of 16+ pounds is almost always going to be in the mix...can the 800 do a brisket PLUS other stuff?

It depends on the size of the brisket, but I’d say that likely the main grate will be completely consumed by the brisket. You’ll have those upper shelves but they won’t hold a ton…

Not sure. I’ve noticed that if I have a bunch of built up ash and little pieces of charcoal at the bottom of the hopper, it doesn’t seem to get enough airflow to get super hot

The problem you have is the LID switch. If that switch is malfunctioning, your MB will not get above 500 deg. Easy way to temp fix is short the 2 wires going to the switch with aluminum foil then crank it to 700 and see if it fixed it. Do the short at the wires underneath, not at the switch side. That way your fan will still work properly and won't run all the time. If the works, you can either buy new switches or bypass (short) your switches. I have had MULTIPLE problems with the 1050. Customer Service for Masterbuilt is awful. They promise to send replacement warranty parts and keep telling you over and over again their warehouse is behind and they will send an email when it ships. I have been waiting on a controller for over a month and they still haven't shipped. I will never buy another Masterbuilt product again. Good luck fixing your switches if you haven't already.@@AndersonsSmokeShow
