Ingredients
- 200g toor dal
- 1 tsp turmeric
- 850ml water
- 4 cloves garlic, crushed
- 1 thump size piece of ginger crushed
- 1 long green chilli, crushed
- 4 tbsp ghee
- 1 tsp cumin seeds
- 1 tbsp coriander seeds
- 2 cloves
- 1 red onion, diced
- 4 tomatoes, diced
- 0.5 tsp coriander powder
- 0.25 tsp garam masala
- 0.5 teaspoon Kashmiri chilli powder
- 1 bunch coriander, finely cut
- 1 tbsp Kasoori methi
- Salt to taste
Method
1. Start by cooking the toor dal with the turmeric and 700ml water in a pressure cooker on high for 8 minutes.
2. In a heavy base pot or dutch oven, add 1/2 the ghee and place on medium heat. Add the cumin seeds, coriander seeds and cloves. Saute for 30 seconds.
3. Add the garlic, ginger and green chilli and cook for 2 minutes.
4. Next, add the onions and cook for 4 minutes or until they are soft.
5. Add the tomatoes and season with salt. Cook this with the lid on until the tomatoes are soft, roughly 10 minutes.
6. Now add the cooked dal.
7. Add the rest of the dry spices and stir well.
8. Heat a charcoal over a flame and place it into a metal bowl, add the bowl to the centre of the dal pot and pour in 2 tbsp of melted ghee, put the lid on and leave on the heat for 5 minutes.
9. Remove the bowl with the coal and stir through the last of the coriander.
10. In a separate pan, heat 2 tbsp of ghee and once hot add 1 crushed garlic clove, and 2 dried chillies and cook for 1 minute before adding 1 tsp of Kashmiri chilli powder.
11. Pour this over the dal and stir through.
12. Serve with rice and naan or roti. Enjoy!

That’s perfect and as an Indian I love that a mortar was used it just makes it so much more earthy well done sir as someone who watches what all u cook judiciously and having never commented before today I just had to 😊

buddy...you need to pick up a book. I like this andy guy cause you can learn recipes from him but all he does is cook well established dishes. The only neat feature here was the smoking but everything else was standard. IDK why he's so idolized just for cooking by the book. You deffo can learn dishes from him tho no hate there.

Tel mai jeera sabud laal mirch fir onion ko white hone tak paka, fir usme chopped garlic and ginger and also add 3-4 curry leaves then add spices then tomatoes and cook them well... then add your daal into tadka and stir properly and let it simmer at last add garam masala from top and pinch of nutmag powder then squiz half lemon over the daal... mix thi once and enjoy with rice. Trust me try karna aacha aur different taste lage to aa ke comment jarur karna idhar😉

As an Indian this warms my heart. In addition to this what you can do is lightly press the lentils very lightly with the back of a ladle (this is completely optional) it opens up the lentils and looks gorgeous. This is something I used to see my mom doing it.

Being and indian inl can tell you that he did an amazing job. Exactly how its done. Infact he did everything that is required making daal. We may sometime skips couple of steps snd keep it simple. Because daal is something which is probably made 3 to 4 times a week.

Firangi ki gaand chatna band kar. Usne dal ko gala diya. Iske steps sahi the lekin poore dal ki khichdi bana di. Faltu ka overrate mat karo sirf isliye ke wo ek gora hai.

Maaaaaate. Look I’m Pakistani by blood and I’ve eaten every type of daal going in my life. I’m super duper duper impressed with the authenticity and complexity of your daal. People think it’s a basic easy dish. To make a proper tadka daal takes time and expertise. This looks absolutely delicious 🙌

Take a piece of charcoal and burn it a bit. Place it in a small bowl into the pan on top of the dish. Add a spoon of ghee and close the lid immediately. Take off the lid after 30 -40 seconds max a min. It will have a smoked flavour 😊
