ANGLO-INDIAN SPICY CHICKEN ROAST AND POTATOES / ANGLO-INDIAN CHRISTMAS CHICKEN ROAST WITH A TWIST
Ingredients
500 grams chicken cut into fairly big pieces
1 teaspoon ginger garlic paste
1/2 or 1 teaspoon chillie powder
Salt to taste
2 pieces cinnamon
4 or 5 cloves
2 Red Chillies broken into bits
1/2 teaspoon pepper corns
1 tablespoon vinegar
1 or 2 tablespoons oil
1 tablespoon butter
3 medium size potatoes peeled
In a bowl, marinate the chicken with the ginger garlic paste, chillie powder, salt and vinegar and keep aside
Heat the oil in a suitable pan and add the pepper corns, cinnamon, cloves and broken red chillies and sauté for a couple of minutes.
Transfer the marinated chicken to the pan and sear on high heat, turning the pieces around continuously.
Once the pieces become firm, add the potatoes and mix together.
Add around half cup of water and cover the pan with a lid
Cook on low heat till the chicken is tender and semi-dry.
Mix in a teaspoon of butter and let the dish rest for about 15 minutes before serving.
Serve with steamed veggies and Bread
