Just curious if you have any interest in comparing notes. I’ve lived in Cincinnati all my life and never found a viable basis for a Skyline chili recipe until I found your videos. I’ve used your instructions and some other sources and made a few batches. Being in Cincy, I’ve been able to do some side by side comparisons and I think I have it dialed in. If you’re interested, let me know and we can share information.

Did you ever get together with ERS? I don't live there now but I grew up in CIncinnati and I love, love, love that chili. No matter where we've moved over the years we still make Cincinnati Chili routinely. At least 2 or 3 times a month. We do not make any super fancy version but whatever we make still tastes like Cincinnati Chili. I wish ERS would continue this channel. He really goes into a lot of detail. Thats what attracted me to his videos to begin with. If you have a channel please let me know.

I love Skyline Chili ever since my ex gf from Ohio made it for me... and she recently told me she uses Pluck Organ Base seasoning now... when I saw this vid, I just thought I'd offer it up... you may not go with it but oh well, just thought I'd mention it.

I know I’m a bit late to the party but, I have lived in Cincy my whole life. I’m a big fan of skyline chili and have had it all different ways. Canned, frozen and obviously fresh at various locations. I’ve never seen the little veiny bits at a restaurant. But, I see it all the time in the canned and frozen. I just thought it was a second rate meat mix that they could palm off to a consumer who really couldn’t complain to someone directly. Like you, I’ve butchered plenty of deer hearts and added them to the grind. Don’t tell my wife. But, I’ve never seen that veiny structure in my chilis. After watching your video, I think it’s tripe. That would be consistent with the old world Macedonian way. Nose to tail. Nothing goes to waste but, the (in this case) moo. It’s a cheap filler that they can use to boost profits and maybe they think it tastes better. Personally I pull them out whenever I see them. But, tripe is actually delicious. If you ever have a chance to try tripas tacos at an authentic taqueria do it. Truly amazing. Maybe I’ll just leave them in in the future.😊

I've seen them often in Empress, which lists "beef suet" as a major ingredient and has for decades.

I have made this for years and never added the yeast. That is going to be awesome in my next batch. I also add raw cacao, beef broth, and bay leaf. Then blend and simmer. Take out the Bay leaf before blending.

Cocoa not cacao! Skyline actually uses a 8 Oz Hershey’s Chocolate Bar for the average serving size amount a girl, I have known for yrs actually told me and, one my friends who had tried it for the first time, some use cocoa powder instead! Also, cinnamon is in the recipe! And, if one can not handle beef broth, you can do chicken broth and, Worcestershire Sauce helps give it the richness and, it gives it that restaurant flavor smell!

When we lived in Wisconsin, it was something I'd always wanted to go to when visiting Ohio. Now that we live here, they are super close.

Also it basically gets cooked twice, once before the stores and once at the stores. It comes in these cubes that we mix water into and cook in a vat at the highest setting for 15 minutes, not sure if this is important for the taste but I thought id let you know

Stores do not cook hamburger before you buy it, it’s raw! The Cincinnati Chili places or anyone who makes chili at a restaurant or whether you cooking it at home that beef only gets cooked once and it’s cooked in cooked water, the water heats up of course as you cook it and, you add the other ingredients in slowly and, the beef continues to simmer in more of what would be considered a chili sauce than a chili, a more heartier bowl of chili!

I don’t doubt that skyline puts beef heart in with the meat they grind, however I find it nearly impossible to believe that they would put a higher percentage of heart in with it than you’d get with a whole cow, because where is all the extra hearts coming from? I guess technically they could swoop up all the other unused hearts from all the other slaughtered cows that don’t get used but wow, 1/3rd of all skyline meat could be beef heart? I find that difficult to believe. But I am still curious about if this changes the taste or not.

Very cool, I work at a skyline and we take those little chunks out when we see them, but for my own good I leave them in and I don't even notice they are there, I bet your right about them using beef heart

Empress, still the original and best Cincinnati chili, uses beef suet (and they do NOT add yeast per their ingredient list; they do add whole seeded cayenne peppers, however). I guess that must've been something Nick Lambrinides came up with after he copied the recipe as best he could after working for John and Tom Kiradjieff. Also pretty sure bay leaves and worstershire (glorified fish sauce = umami bomb) are ingredients in a good version of Cincy chili; vinegar definitely perks up chili con carne, so I expect it does the same for Cincy chili. No real recipe is supposed to use chocolate/cocoa, per numerous newspaper articles where the Enquirer actually asked.

Empress also put dry chili peppers in their sauce, but, it isn’t in the frozen! Those dry chili peppers adds to the flavor to, wish Skyline would put them in theirs! Aka/ course the seeds have been removed!

@@sonyafox3271 They were because that's the only way i could find it for decades - frozen. I haven't had any in about four years after Remke closed all their OH stores and the one in Newport that was on the way home from work. I used to have to spit a couple out per batch made.

Ughh vein, membrane, bone, and HEART? Don't get me wrong, I like beef but eating hearts is off limits and just plain wrong! I'll pass on Cincinnati original chili.

Why would eating heart be wrong? It's a part of the animal, and if you're killing it for it's meat then you should eat all of it. Heart meat is delicious if prepared correctly. One of my favorites is pickled beef heart with onions.
