Korean's soul food, kimchi
- Indispensable part of Korean cuisine.
- Korean's soul food, kimchi.
- Kimchi's potential and competitiveness tempt the tables around the world.
Kimchi is an indispensable menu on the Korean table.
It always accompanies Korean meals, whether it be Korean food, Japanese sashimi, or barbecued meat. Why do Koreans enjoy kimchi so much?
What appeals do kimchi have?
This episode tells you everything about kimchi.
The host visits a rural village in North Chungcheong Province to learn about the cabbage harvest, communal kimchi-making event, the making of the kimchi filling, and how to make dongchimi, the clear watery radish kimchi.
Made with assorted vegetables and salted fish, kimchi is unbelievably rich in protein, calcium and minerals. Koreans were able to survive the long harsh winter of the past by eating kimchi, the main source of nutrients during the times when there wasn't enough to eat. The episode highlights kimchi, the Korean's food of wisdom.
Experts also tell us about the amazing efficacies of kimchi, from fighting cancer and preventing influenza to helping with hyperlipidemia and weight loss.
As the popularity of Korean pop culture mounts around the world, more and more foreigners profess their love for kimchi. They come to Korea to learn more about kimchi and the make-your-own-kimchi program has become a favorite of foreign tourists.
Professor Connie Deady of Woosong University saw kimchi's potential for globalization and came up with a variety of kimchi fusion recipes that are easy to follow.
Kimchi embodies the life of Koreans from long ago. Kimchi is definitely the Korean's soul food, the essence of Korean's affectionate heart and the spirit of sharing.
To learn this and more, tune in to Kimchi, the Korean's Soul Food, the fourth episode of "Taste of Wisdom," the documentary series about Korea's fermented foods.

I have just made a large batch of Kimchi a week ago. To me a large batch is only 2 Napa Cabbage worth. My husband's friend, Mark, just loves those foods. I'm Japanese but I had learned many Korean cooking from Yutube.

When Asians eat they take the whole portion in, and chew, while Westerners, take bites. and chew, lol. Perhaps it's food on chopsticks, vs food on forks/spoons. Which makes sense. I would drop my food if I used chopstick. Large batches of Kimchi, is similar to our canning summer harvest for winter. Americans need to get this into their diet.

Implying every Koreans favorite food is kimchi jjigae is racist. I'm Korean and it is my favorite food. So I don't know why I stated it was racist. I know no other Korean in which it isn't their favorite food. My daughter who is half I guess who has never had it.

I miss my mothers cooking. Arthritis keeps her hands immobile now. Shoulda paid closer attention. Ate Korean food everyday growing up. Chop chey, ja ja myoung, yacky mondu, karbee, bullgogi, and of course Kimchee with everything! I dont know why im telling you this. She always wanted me to go there. Im turning 50 in ten days. I think im going to plan a trip. I got family over there. My dads Irish/Native American, my mom is from Busan, South Korea. Im 6'2 260 lbs. go figure. Anyways, im Billy. I’m a chef that teaches in a uni ...... She used a ravioli folder! It’s great she is spreading knowledge of a dish but if she truly want to teach her students should she not at least teach them hand made pasta folding because, it’s not that hard if you put in the practice and she is teaching these kids how to cook! Also her pasta dough was kinda thick! Not being bitchy but if you’re going to educate cuisine of any kind you should teach it. My mum sent me round to Rosina’s every Sunday after church and she taught me how to make pasta and those little fried biscuits served in Venice during carnival. She was an angel and if you can teach your kids anything she said “teach them to cook, teach them to swim. One is life the other saves it”! Frikin loved that little lady xxx
