Healthy, fermented foods are matured by time.
Every nation has its own fermented food that has been guarding the people's health for centuries. Korea's kimchi, in particular, is receiving the global spotlight as an enriching, well-being food.
At the start of winter, every household in Korea makes gimjang kimchi. The major ingredients are napa cabbage and radishes, seasoned with red pepper powder, various vegetables, and salted seafood. The flavor of the kimchi is determined by the level of fermentation. Over the course of the year, this kimchi will act as an important source of nutrients that are often lacking in the modern diet.
Kimchi is made in a large batch in winter. But aside from then, kimchi can be made anytime, with any seasonal vegetables, and appear in many different forms according to the local climate and preferences. Seaside regions use salted seafood in its seasoning, while warmer regions make kimchi that emphasizes spicy and salty flavors.
The most well-known type of kimchi is napa cabbage kimchi, known as baechu kimchi.
It has the shortest history of any kimchi varieties, and yet, it is the most dominant type in Korea and around the world. It was first made with red peppers that entered Korea in the 16th century and modified cabbage that appeared in the early 1900s. It has only been around in its current form for about a hundred years. Despite its short history, baechu kimchi has become iconic because it is the ideal type for fermentation. From the freshly made geotjeori to aged mugeunji, baechu kimchi can be enjoyed in myriad ways. In the past, kimchi was stored in onggi (earthen jars) buried underground because a stable environment was crucial to good kimchi. Now, specialized kimchi refrigerators that recreate the underground environment have become ubiquitous in Korean homes. For Koreans, storing kimchi is just as important as making it.
Kimchi is a Korean treasure borne from the breath of nature and the touch of humans. It's a quintessential part of every Korean meal. In this episode, we unravel the secrets of Korea's most iconic food.
김치
세월이 빚어낸 건강한 식품, 발효음식.
전 세계적으로 나라를 대표하는 발효식품은 어디든 그 민족의 건강을 지켜주는 음식으로 자리잡고 있다. 그중에서도 한국의 김치는 영양적 우수성을 인정받으며 세계적인 웰빙 발효 음식으로 인정받고 있다.
한국에서는 입동 즈음이면 집안마다 독특한 김장김치를 담근다. 배추와 무를 주재료로 만드는 김장김치는 고춧가루, 각종 채소와 젓갈로 양념을 만들어 버무리는데 숙성 정도에 따라 다양한 맛을 나타내고 또 겨우내 부족할 수 있는 영양소를 보충할 수 있는 귀한 영양원이기도하다.
하지만, 김치를 담그는 시기는 겨울을 대비하는 김장철 외에는 딱히 정해진 것이 없다. 제철맞은 채소에 따라 손 쉽게 양념을 버무려 담글 수 있기 때문이다. 한국의 김치는 대부분의 채소로 담글 수 있는데... 각 지역별 기후와 특색에 따라 주재료와 양념법은 조금씩 다른 특징을 보인다. 해안가 지방에서는 해산물을 이용한 젓갈과 양념을 하고, 더운 지방에서 맵고 짠 맛을 부각해 김치를 담근다.
한국에서 가장 대표적인 김치는 배추김치.
다른 김치에 비해, 가장 역사가 짧은 배추김치는 한국인의 밥상은 물론 전세계적인 사랑을 받고 있다. 16세기에 처음 한국으로 유입된 고추, 1900년대 초반 개량된 배추가 만나 빚어진 한국의 배추 김치. 지금의 모습으로 식탁에 오른지 100여년정도 밖에 되지 않았다. 배추김치가 이처럼 사랑을 받을 수 있었던 것은 숙성과 발효에 용이한 특성을 가졌기 때문이다. 갓 담가 먹는 겉절이부터 곰삭은 맛의 묵은지까지... 배추 김치의 맛은 숙성과 발효에 따라 다채롭게 즐길 수 있다. 과거엔 땅에 묻은 옹기에 보관했던 김치! 그만큼, 보관에 따른 숙성이 김치의 맛과 영양을 좌우했기 때문이다. 이제는 옹기를 대체할 수 있는 김치 보관 방법으로 김치 전용 냉장고가 한국인의 가정에 보편화되었다. 한국인들에게 김치 보관은 김치를 담그는 것만큼 중요한 조리법으로 의미되기 때문이다.
자연의 숨결과 사람의 정성으로 탄생되는 한국의 맛 김치.

I love South Korea. It's an absolutely beautiful country with an absolutely beautiful culture. However, I don't know if my mouth or my stomach is able to acclimate to the fiery flavor of kimchi, but it's worth a try! After all, it is the most essential food in Korea! 🇰🇷

My god, kimchi was given to me to try 20 years ago, I fell in love with it, I can't wait to make my own!!!! I have not been able to eat it here, now that I moved from California to Spain!! I miss kimchi sooo much!!!!!!FINALLY decided to make a bach, now let's see if I can find all the ingredients!!! This was a wonderful video, thank you so much!!

Great presentation and explanation. As a westerner I was not aware of the variations of Kimchi. I will now try the variety of Kimchi available. Of course, I will continue with my regular store bought version. Question... Does store bought Kimchi continue to ferment when stored in the fridge??

Does it have to be earthen ware? Can you bury a brining bucket and get the same result

Can you use Jamaican big leaf cabbage Similar to kale, or the cabbage used to make cabbage roles(canadian cabbage roles) How many different cabbages have you experimented with. What if something goes wrong with napa cabbage or there is a world wide crisis (God forbid)with napa cabbage.? You own kimchi because of 2 main ingredients radish and garlic and its leaf. Those two ingredients are the constant the other ingredients are adjustable. Please let me know. I am Jamaican but l love Kimchi and its health benefits.lol must be my Asian D.N.A.

In malaysia we called it acar or pickles combines of pineapple , cabbages , carrot , cucumbers and turmeric the mean spices followed by shrimp paste , shrimps and tamarind , a bit of galangal , onion , garlic , lemon grass and vegan can change the shrimps paste and shrimps don't mix , this is yummy

I am confused by the heating of the aged Kimchi, does this not destroy the "good bacteria "?

I'm not sure whether the bacterias get alive or dead, but the reason of heating or cooking Kimchi is for better taste. And also many people like to eat aged sour Kimchi raw without cooking.

Typically, rivers are fresh and clean since it is constantly flowing. If polluted, then it's nasty.
