Recipe:
1/4 cup of extra-virgin olive oil
3 small or 2 medium onions, finely diced
2 large ripe tomatoes, skin off and finely diced
4 - 5 tbsp. tomato paste
2 - 3 tbsp. red pepper paste
1 whole lemon juice
1 and 1/2 tsp. ground coriander
1 and 1/2 tsp. ground cumin
salt
ground black pepper
2 cups hot water
1 cup / 155g / 4.94oz fine bulgur #1
Note:
I love to serve Eech with grape leaves, pickles, green peppers, radishes. Instead of grape leaves you can serve with lettuce too.
