Being Armenian, I grew up eating this version, but honestly didn't realize this was actually an Armenian thing until now! My grandmother (God bless her soul) used to make it all the time, but she didn't cook off the onions but that's not surprising because she wasn't a great cook (sorry, Nene). I'm going to have to try Chef John's tip and make it for the next family bbq.

An easy way to denature onions is to place them in cold water after slicing or dicing and let them sit for a few minutes. Drain, rinse and they are ready to go.

I have made almost the exact recipe for years. What I do to tame that onion is to leave it in the lemon juice for an hour or so, then add the lemon juice and onion to the potatoes. Then just proceed as usual. (I also don’t use cayenne because I have smol ones.) Amazing.

German Potato Salad also meets the no-mayo criteria, but this looks and sounds more summer-y with the lemon juice and fresh herbs.

Bacteria will not grow in commercial mayo, despite what your grandmoters told you. This from the USDA: KNOWLEDGE ARTICLE People often think mayonnaise is the cause of foodborne illness from chilled foods such as chicken, tuna and egg salad or when spread on bread with luncheon meats in a sandwich. However, because mayonnaise is made with acid (vinegar or lemon juice), it tends to prevent bacterial growth. Usually it's the meat, poultry, fish or eggs in a sandwich kept out of the refrigerator for more than two hours that is the medium for bacteria to grow.

I'm in the same boat. My partner hates mayo and vinegar, so he rejects all potato salad. I can't even bribe him with the bacon in the German potato salad. This is definitely going to be given a try.

You could do a modified vinaigrette! Coarse mustard, lemon juice, oil. Has a nice flavor and a thicker texture. Vinegar and Mayo free :-)

This looks great! At a bbq, you can get overwhelmed by mayo, what with the potato salad and coleslaw. This is a great alternative.

Personally I might mayo this anyhow. But we're all the something of our something. Or, please do overwhelm me with mayo at a BBQ. Just not every day. The richness and the BBQ spice complement and moderate one another. I put mayo on barbecued pulled pork buns.

Yes coleslaw doesn’t need mayo but USUALLY coleslaw does have mayo. What’s important is that we now have an alternative. This salad reminds of some Mediterranean dishes.

Chef John, this is amazing. I’ve never been one for mayonnaise based salads, so this was wonderful. I love the crunch of the slightly cooked veggies, the tang of the lemon, and the bit of heat from the cayenne. Fantastic.

Thank you chef John for this great recipe. I am going to use mix of herbs there not only mint. As an Armenian from Armenia, I didn’t know about this recipe. We used to make it Russian style, mixed with cooked beef, carrots, green peas and pickled cucumber, all that mixed with bunch of green fresh herbs, which Armenians use a lot. Probably this came from Armenians spread in other Middle Eastern countries.

Thanks. That's one of the best potato salads. And while it is not "soft and comforting" like the east-european inspired ones (with eggs, mayonnaise, cream, sausages etc.) it is so much "happier". It's like "Teenage jumpy" with all the flavors stringy and stingy. Both nutritious and healthy - and yet - much lighter on your mood and stomach. Thanks for bringing Armenian, Greek, Israeli, South-Italian and other mediterranean style recipes to America. You do good Chef John.

Chef!!! I’m super grateful you included the “boring juicing of a lemon” because I’m middle aged, been cooking for 40+ years and I just realized I’ve been putting the damn lemon in the wrong side up!! I always wondered why the lemon would drip the wrong way. Arrogant me thinking someone designed a stupid contraption and the whole world just kept accepting it. I think I always assumed it should be place in to match the shape of the squeezer cup. I will forever remember you and this beautiful Armenian salad whenever I squeeze lemons ! Salut!

Ooh! Ooh! The issue with the onion you mention around the three and a half minute mark is something I'd solve by giving the onions a soak in hot salt water, maybe with a little vinegar or lemon juice. But now I want to try frying -- it seems like a good way to insert oil into the mix.

You could also rinse the onions with cold water to mellow them out. That’s what we do in the restaurant.

I think that the one experience I’ve had with this potato salad made by an Armenian, the onions were quick pickled in lemon juice as you mentioned.

Your videos are absolutely the BEST! I love your lilting voice, kitschy jokes, tips and tricks. Have you ever heard of the Russian salad? it sounds like something right up your alley and would love to see you prepare it and put your own unique spin on it. The dressing is simply mayonnaise (no cayenne!) and it sounds like something you could spice up and make even more delicious.

I have made so many variations of potato salad through the years. They are all good. I keep coming back to the canvas I like the most. it has hard boiled eggs, bacon, celery, parsley, onions, mayo, mustard, celery seed, s&p, and a bit on the dry side. But what I like the most of this recipe are the serving dishes. The pottery is beautiful.

I’m an islander (Guam) we have our own signature POTATO SALAD. But this ARMENIAN STYLE POTATO SALAD looks so much better and DELICIOUS AND WONT SPOIL because no mayo and eggs. Also if you make the REGULAR mayo and egg potato salad NEVER I REPEAT NEVER MIX WITH YOUR HANDS you will spoil the dish FASTER ALWAYS use a spoon or mixing utensil.

I'm so happy you created this video of one of the best, healthiest potato salad recipes. I am not Armenian, but have many Armenia friends- I lived in Glendale- someone here knows what I'm talking about. One of my Armenian friends is from Lebanon. In Lebanon, they use a spice called sumac. It's a red, bitter-sweet spice with a bite- and it tastes FANTASTIC on Armenian potato salad. So, if you haven't tried this, get some sumac. Ever since I tried my friend's mother's Lebanese potato salad, it's my goto and I try to keep sumac around. Chef John's German potato salad is a hit too!

@@4ll1d0155m0k3w33d My kids didn't like the veggies. They're used to egg and potato. But the mint was different. They liked it.

If I were to make this salad and adjust it to my personal taste, I’d have to adjust the mint down to zero because I really don’t like it. If I were served this in someone’s home, I would eat it and not say anything, but I wouldn’t subject myself to mint on purpose in my own house. Life is too short. I’d have to experiment and see if I could swap the mint for another herb, like rosemary or dill. I might be able to deal with tarragon, although that has a anise-like aftertaste and I don’t like licorice, either. Still, even if I never make this, it’s wonderful to discover cuisine from other places. I never knew Armenian had its own potato salad!

Chef John, you can also try the Russian/Ukrainian version of potato salad. Its mayo based but besides potatoes and eggs, it also has pickles, peas, cooked carrots, and bologna (optional).

I just can't seem to get on board with fresh mint in savory dishes. Just makes everything taste like mouthwash.

I wholeheartedly agree. I love lamb but if you try to put mint with it, it ruins it for me.

There are different types of mint. Don't buy the one with pointy leaves, it's spearmint and does indeed taste like mouthwash! You want rounded leaves.

When I make potato salad, if I am using raw onions I let them hang out in some water spiked with a little salt, vinegar, and sugar for awhile and them drain them. Also a good way to de-fang them.

If you'd like to try another potato salad without mayo or egg, you should definitely try out swabian (german) potato salad!

This is very similar to Italian potato salad recipe that may family makes, Italian potato salad is spicy, delicious!
