I just read that some people in Norway used to use leftover porridge to make Norwegian waffles. Might be a way to use up that porridge someone doesn't want to eat anymore.

I dont think I'd like fried porridge. I bought some Norwegian waffle irons after Arne and Carlos previous waffle tube but they are upping the anti with an electric waffle maker.

I have an iron with this shape, that goes on the stove. It looks like an old krumkake iron. I didn’t know what it was for, but now I know! Thank you, I will be trying this!

Every memory of my grandmother is a good one, but having her waffles every time I visited her (& her Scottish shortbread) is one of the best. That’s probably why I make them for my own grandchildren now. I enjoyed your video so much! Carlos, you look in better spirits - I hope so!

The cheese reminds me of my dad who bought this cheese at Christmas. He made waffles every Saturday morning but the old waffle irons were not Belgian. I can see him making them now. He was born in Hamar Norway. T

At first I was so happy to see this video, thinking Carlos was better, then I remembered you prerecorded these since you were suppose to be traveling. You were really thinking ahead to do this. Hope we'll see you back soon. Things are better when we can watch both of you. ❤

@@marthablom5734 I may be wrong but go back and listen to the first of their quarantine podcast. They explain that they prerecorded a bunch of their Sunday podcasts because they were suppose to be traveling and they would release each one of those for a few weeks. They haven't been doing the daily podcast because Carlos got sick with a cold. But I do hope you are right and he is better. Lots of confusion for us all. Stay safe.

Hi Helen, I'm not sure whether this will help where you're located but both J&A Hartley's The Crumbly Cheese & The Calder Cheesehouse in Todmorden, Calderdale sell Gjetost. Hopefully, after quarantine is over, they may deliver across the country. Hope that's moderately helpful and enjoy xx :-)

@@helennorbury9765 Fab and yes, not far at all (I'm from S. M'cr originally!). Just had a look at Pennine Wine & Cheese in Hebden Bridge and they have Gjetost in too. A rich seam of brown cheese is present in the Calder Valley it seems! :-) Take care xXxx

The store I shop in carries Gjetost an undecorated version of your brown cheese. It is very good!

Every kid in Norway eats Brunøst with waffles, a bit sweeter than the gjetøst widely available here in the states

My relatives in Sweden all use those cheese cutters and I had always assumed that the Swedes invented them! It was so neat to learn that it actually was invented in Norway!

Just saw this video today. I made these waffles for our supper tonight. I had mine with cream cheese and strawberry jam. Delicious! My husband had his with his traditional maple syrup and butter (like they needed more butter!), and he had seconds. It gave me pause to use 5 eggs during this so called egg shortage, but it was worth it. Hope you are enjoying your current cruise. I sure enjoy the cooking videos.

My grandpa introduced me to the brown cheese. And we can even get it here in New Mexico. And of course I already have one of those cheese slicers and have had it for a long time. But I never knew it was invented in Norway. Thank you so much for the information

I would have never thought to put those things on waffles. I always just drown mine in maple syrup. Now I'm going to have to find a source for the brown cheese and give it a try. After my Opa passed, we were all asked if there was anything of his we wanted. My siblings and cousins wanted clocks and paintings and tools. I asked for the cheese slicer. I had watched him use it every lunchtime for years. There was more Opa in that one little slicer than anything else. So whoever invented it, thanks for my memories 😊

My Mother is a full Swede and I make Swedish Waffles - they seem to crisp up more than the Norwegian kind. We eat ours with Lingonberry Jam and butter - I must say I love the idea of sour cream and Strawberry Jam! Yum! BTW my wife is a Knitter and I am just starting to learn. My goal is to make a sweater for myself.

Great video and I love waffles. In Germany we make them like yours. The difference of Belgian waffles is that the gaufres, as they are called in Belgium, are made from yeast dough with coarse sugar which melts and caramelizes.

Reminds me of Swedish pancakes that my mom use to make! Also... I’m American.... and when my mother went to visit she brought me back some cheese like yours from our famous family cheese makers there is Norway! Tissebotten is one of the towns and the cheese comes from there... thank you for your recipe and all your sharing!

That cheese is so interesting. If ever I have a chance to try it I certainly will! I was surprised by how many eggs are in the recipe. Like the idea of adding cardamom. I hope you are both feeling well and happy.

I love the cooking videos. I also use cardamom in my coffee. Grind one pod ,or more to taste , in with each measure of coffee beans.

Hi Arne & Carlos! I'm from Argentina and here we have something called Dulce de Leche (like milk sweet) maybe you've heard of it, it is very traditional here. I would say it is very similar to your brown cheese. I had no idea this existedbut it was very nice to hear that cultures sooo apart like yours and mine have this similarities. Here we usually fill our pancakes (we make them sort of like waffles but more like creppes) with dulce de leche and it's a lovely tradictional dissert. 😉😘

Dulce de leche is nothing like gjetøst, or brunøst except for caramelized milk in the cheesemaking process... it's not a dessert sauce at all.

Good morning from Texas. Thank you for sharing your waffle preparations. The cheese descriptions sound very delicious. My son moved to Wisconsin a few years ago, which is 1280 miles north of my home . I was able to try some very different cheeses when I visited. I especially enjoy that your recipe includes milk, sugar and butter. So many times in the USA, people are trying to substitute products that are not naturally produced in the name of losing weight.

I love all the different waffle types around the world! Especially Belgian, Dutch stroopwafel, and I also consider Italian pizelle a cousin of waffles. You’re both looking more rosy today. I’m comforted to see you well. I am a world cheese lover and cheese maker, but I have to say the time I tried Gjetost was the first time I ever hated a cheese.

I’m used to eating waffles in Sweden. Have never tried with sour cream. I’m used to having it with jam or fresh berries and whipped cream

thanks a lot for the lovely vid! I'd never have thought of putting cardamom in the waffles batter. I only know this from kanelbullar but I'll try this for sure next time I make waffles! Btw, here in Germany it's popular to eat waffles with sour cherries and whipped cream or simply with icing sugar on top.

I love the Norwegian waffle maker it makes 5 little servings :) Im also going to find some brown cheese..I like learning about Norwegian ways to do things,, but the Norwegian pearl looks very difficult,, . Thanks for the great video.

i grew up with real belgian waffles with sliced strawberries and whipped cream . oh my goodness I have not had that since i was a kid . I can still taste it

Oh dear, I wasn't very frugal at the hostel breakfasts in Oslo and Bergen! We were talking just yesterday about dusting off the old waffle iron for Pancake day, ours makes hearts too. Great video!

As a Belgian (living in Ireland), I had so much fun observing your waffle culture in this episode and learned a lot. I'd say the toppings are very exotic to me: the brown cheeses especially, but even the sourcream. The sculpted cheeses remind me of the Dutch/Flemish speculaas cookie boards, and wooden paddles for shaping butter. And even of the shapes/dimension of French brown soap! The cardamom in the batter is completely new to me but sounds VERY exciting! And I love your traditional stovetop iron. My greatgrandma, whose nickname in the village was 'the waffle baker' made waffles the slow and traditional way on a stove, using beer to get yeast in the batter (instead of baking powder). Very few Belgians still make waffles at home, it's mostly eaten in a coffee house, or from a roadside stand. Our most popular toppings for waffles are any shade of sugar (white-medium-dark), butter, or the 'deluxe' version with sweetened whipped cream and strawberries. On the Easter podcast I heard you talk about crab everyday... your channel is mouthwatering! Greetings from a very hungry Belgian..

@@ARNECARLOS I am guessing because of the work involved in making a yeast based batter, which is usually a big volume so someone has to bake for two hours while others eat. Or perhaps it's just out of style. Also they are easily available from street carts or in restaurants. Perhaps the artisanal waffle will return like homemade sourdough has become fashionable again...I hope so
