Handmade soy sauce takes at least nine months to brew, compared to mass produced condiments, which takes days. How will one of Singapore’s only sauce breweries keep their traditional methods alive?
That is what host Elizabeth Boon wants to find out, during her week-long stint at ‪@NanyangSauce‬. Founded in 1959, this family-run sauce brewery still uses the same recipes and laborious methods passed down through the generations.
With a third-generation owner in charge, Nanyang Sauce is finding new ways to do old things, turning an eye towards attracting younger customers. The company has dipped into new technology, using non-fungible tokens to give chefs a taste of bespoke sauce making.
Is there appetite for their new ideas, or will it leave a bad taste in the mouth?

Who is this chick? Don't need to be a genius to know that hair net is to stop hair from falling into the soy sauce product. It's not that difficult to keep all hair nicely tucked in the hair net.

She’s more concerned about her image. She always shows so much skin. She doesn’t need to do that. She can host quite well.

Didn't know traditional soy sauce need so long to ferment, definitely going to try the 12mth aged sauce.

Now i know the difference between commerical hydrolysed soy sauce vs traditional soy sauce..thanks CNA! I will definitely support the latter.

It says it on the bottle it should say traditionally brewed and the back should have only four ingredients which are soybeans, wheat water,koji.

Cuisine is possibly the greatest internationalizing institution around. These ethnic Chinese Singaporeans use Japanese terms such as "umani" and refer to the starter spores as "koji," a Japanese term that is "qū" in Mandarin Chinese.

Traditional soy sauces is definitely nicer. Till today I still love my Bidor and Sg Siput (located in Perak) sauces.

the refusal to properly tie up the hair and tuck it into the hairnet really disturbed me. she looked really sloppy and not to mention it defeats the entire purpose of wearing one?

Did no one noticed that the tool they use to scoop the soy beans are chipped? I definitely will not buy this brand because of this. They should use other non painted scoop or change the scoop frequently.

Nah, I don't buy it. The only thing that is actually beneficial is the fermentation using koji, which includes the manual inspection of the vats for quality control. Everything else that they were doing could be done by machines faster and better with less variability and thus better and consistently good quality. But no, they need to do it by hand. Even the bottling process? That's just inefficient and we are paying for these inefficiencies just because they slapped on the "artisanal" label? I don't buy that.

Many People believe that whatever we do in our real life, the Nature is involved in it. So, our actions or movements shouldn’t adversely affect Nature. And, some people believe that Nature is God. You are in communion with Him when you are doing your actions or Karma. Therefore your actions should not be repulsive or against the Nature or God. But now a days the people are acting so much hostile to Nature. They are so much belligerent to Nature. They don’t respect the Natural laws such as the Nations constitution or Privacy of apartments. Going to Offices is just to make the attendance & take the Salary. The evasiveness is the cornerstone of office’s activity. In addition, they neither respect the natural relationships nor the mutual blue relationship. Both ways are OK. But they like assaults & forcible relationships. These hostile action as described above in a pithy way have started adversely affected the Nature. The Nature is getting slowly & surely intolerant of these actions of human beings. The Science appears to be oblivious of this Truth. However, the literature of many languages support this. Not only support this but also admonish you to not to tread on this but retrace your steps. Those who are not paying any heed, have started seeing that Nature is revolting these days against the treachery of human beings. Glaciers are melting, extreme hostile weather conditions are there which results into extreme Food shortages, rise of Sea waters at different-2 places, extreme biting Cold & sweltering heat so on & so forth. These Nature’s conditions are resulting into food shortages. It implies Nature doesn’t approve of foul actions of foul people. In other words, this oncoming ugly situation is of our own making. The hidden unnatural duties of mankind for a great length of time are not acceptable to Nature. However, this is not being comprehended by arrogant society these days. The Newton law is riding high on us. It teaches you one thing in a simpler way.You go against the Nature & Nature’s retribution will boomerang on you. The only remedy to retrace & acknowledge His judgment or Orders or Verdicts. In short, we disrespect Nature or give bamboo to Nature or it’s rules & we get also bamboo.
