Welp, made this just now and it was awesome! The tweaks I did to make it LA-style were to include a seeded/minced serrano chile with the aromatics, served with lime wedges instead of black vinegar, and also fresh cilantro with the tops of the green onions. And the Taiwanese knife-cut noodles were a great recommendation, which I was able to find at H-Mart. This is going on the rotation!

Amazon. Sempio brand. Just a few days ago they had their big container (32oz) reduced to just $6! Normally it's like $14.... so I bought 2 cause I've been easily burning through Gochujang paste like crazy lol. Compared to the smaller container I found at a local Kroger that's nearly the same price, too good to pass up :)

I made this for dinner tonight and it was great! It was similar to another recipe I use, but this version was both easier and more delicious. The bok choy really brings it together. Now I'm going to make this all the time. I added some dark soy sauce for color (just .5 tbsp), mirin instead of wine, a sliced green chili pepper for some extra spiciness, and I used pappardelle noodles. Yum.

I made this today and it was amazing!! I added crispy tofu instead of pork for a vegetarian twist! But here’s a warning… if you use common crushed red pepper, use WAY less than he uses. I didn’t realize how much spicier they are compared to Korean chili flakes. I used 1tbs and it was still reallllllllyyyy spicy. I would suggest going down to 1tsp of chili pepper for it to be more enjoyable.

I just made this. It was excellent! It was certainly spicy, but I wouldn’t consider it hot. The sugar gives a balance to the spicy, and the oyster sauce, and Gochugaru flakes gives it a unique “Asian” flavor that makes it stand out from your typical western chili noodles. I was so excited I forgot to give it a splash of black vinegar. Thanks, Aaron!

OMG these were so good, cooking spicy food to try to get my daughter to go into labour, (worked for me, had a massive meal of chili crab before I had her 😁) I found these noodles in my newly found local H Mart (heaven) and we decided to give them a go. SO delicious. Trusted the garlic, and went the full amount. Every last bite was eaten and we have officially called this dish, Korean spaghetti bolognese!

I just happened to have bought a 600g package of sliced noodles yesterday because they were on sale and then BAM! this video showed up! I thought this was fantastic, and 15 cloves of garlic was not too much at all! Thank you so much.

The first time i´ve tried this i wasn´t blown away BUT that might be because i used ginger (which i hate xD) and my garlic got burned . Now i gave it a second try and made it without the ginger and with a LOT of attention to the garlic (saddl only 5 gloves because that was everything i´ve had) . And i added a red chili pepper as well since it was in the fridge. Yup, it taste SO much better. really delicious and SO easy . And btw, i really love all the ingredients substitution, it´s a really rare thing for cooking videos , reall appreciate it :D

I just tried making this with crumbled tofu, and it was just as good as the pork. (I froze the firm tofu, defrosted it and then crumbled it in the stir fry). I love this dish. Of course, I use a whole large clove of garlic ;)

Just made this today. I substituted Impossible Burger for the pork. Not for any special reason, just because we need our ground pork for dinner later in the week. Gochugaru is hard to find where I am, so I used a mix of chili powder and smoked paprika for the sauce. The impossible burger doesn't release as much juice as actual meat, so I used more oil than I might otherwise to sauté the aromatics. I used round rice noodles that are a little like a thicker spaghetti. When it was all done I was genuinely surprised by a couple of things. It's amazing how much it looks spicy, but really isn't, and it's much sweeter than I would have thought. The side of blanched bok choy is brilliant. It cuts through the oily chili sauce and serves as a very refreshing palate cleanser between bites of the chili garlic noodles. I really enjoyed this, and will be trying this again sometime. Thanks for the great videos and recipes.

For Americans who only have regular grocery store red pepper flakes instead of gochugaru, be warned substituting 1 for 1 will turn out very spicy. Still delicious, but when I make next time I will use maybe half and I'm a fan of spicy food. I looked it up and the reason gochugaru is such a vibrant red is that they take out the seeds before grinding, making it significantly less spicy

Thanks. I want to try making this but I can handle spicy foods because I'm never sure if my indigestion will act up. I might look into getting some gochugaru since it doesn't have the seeds in them. Whenever I'd made anything with just a little bit of red pepper flakes, i almost always feel the heat right away.

Saw this video and thought I will save it, because "one day I will make this dish". That was 2 hours ago and now I have just finished eating it. It just looked way too good and couldn't wait, which is rare because I tend to get very lazy when it comes to cooking. Now I can safely say that it doesn't just look good, it also tastes great and it doesn't take much time. Thanks for the recipe, I have immediately subbed too.

Love your recipes, my friends. I served this recipe to friends last night with yakimandu and bulgogi. This was the star. Since I watch my carbs, I ate the leftovers today with finely diced cabbage from one of your other recipes. I spent a year on the Korean DMZ almost 50 years ago.....but I learned Korean cooking from you.
