I love it on eggs! I put hotsauce on just about everything though. Great for chicken marinade, tacos, grilled burgers, chicken nuggets... the list is endless.

I see that you stated a 3.5 % salt ration for brine. I saw one of your older videos and you mentioned 2.5%. What % is preferred. Looking start making some sauces and want to make sure. Thanks. Love the videos.

I make hot sauce like this and even add fresh fruits and fruit juices when blending and Pasteurizing.

Thanks for the tip that frozen fruits can be used, as long as fresh are also added. Is the 3.5% salt calculated off the water weight, or is it supposed to be 3.5% of the combined weight of water and ingredients? New to this and getting mixed info, I think.

we use the following method. (3.5% salt to weight of water). So since 1 liter of water weighs 1000 grams we use 35 grams of salt for every liter of water. hope that helps!

@@ATXHotSauce Yes, that helps. I guess I had this recipe crossed up with recipes where a mash is created, with no water added, just the liquid from the mashed fruits. For those it sounds like the only the weight of the mashed fruit is used, but when the fruit is whole, as in this recipe, the fruit weight is not included, just the water weight. Learning! I have a batch underway.

How long do you let it ferment and what do you do after the process? Do you then cook it? Or just blend it up and bottle it? Very curious as to where to go from here

60 day ferment and then we use our VITAMIX blender to pasteurize the sauce (165F)

I just bought 500g of blueberries and some red habaneros to try this one out! Do you have any experience with smoked peppers inside a ferment? I have some dried and smoked poblanos that I thought I might add to a brine Is that a good idea or should I rather keep it simple?

What flexable press plate do you use. All the stuff I can find says the minimum needs to be 5in and the 1 gallon glass I have is the same as yours. Do you have a part number or something?

Cut the bottom off a plastic drink bottle about 2cm up Make slits round the edges then push down into jar and under the brine Brine will come through the slits and fill it to weigh it down Some people say don’t use plastic but for personal use I have no issue as it’s food safe

What is the ratio of fruit to habanero when making a sauce? To make sure it’s not too fruity or not too hot? 1:1?

I always thought if I would ferment blueberries it is gonna turn into alcohol, am I wrong? My mom always did this with berries and salt to make liquer. She uses fresh barries though, does this make the difference? Greetings from Greece

Yeast is needed to make the alcohol, but yeast cant live in the salty water.

Vodka is odorless and tasteless, so it will not affect the flavor or aroma of the hot sauce if it gets sucked back into the fermentation vessel. Vodka has a high alcohol content, which can kill any harmful microbes that might try to enter the air lock. Vodka does not attract fruit flies or other insects that might be attracted to sweet or acidic liquids like water or vinegar. Vodka is cheap and easy to find, and can be used for other purposes besides air locking.
