I love this video. You dig your potatoes differently but same outcome. We use to dig carefully so we didn't disturb the stems that were not fully developed. But you reaped just one crop while we use to revisit many times. Thank you so much for sharing. See how great God is. Planted just a slip and look at the yield. This is very nice and well explained, but i would most definitely use fresh coconut and add some grated ginger to it as well....the spice in the ginger will give it that extra kick😉thx auntie June

Wowww my grandmother use to make this. I don't know what all she put in it but it was thinner and very good and sweet. She would fix this for us as an evening snack after school. The sides were a little crunchy because it was thinner than Miss June. Looks real good.

For me you have to use the real coconut milk, brown sugar instead of white, a few golden raisins and a half cup of sherry for a nice flavour that brings up the potato, two spoons of butter and definitely a half tablespoon of sea salt...oh and less we forget just a handfull of that coconut trash after blending...

I think the problem is that you used a liquid measuring cup to measure a dry a ingredient. Should have used a dry measuring cup. Nevertheless it came out great and I'm going to try it

This potato pudding is prepared similarly to the way we make sweet potato poon in South Carolina. We grate the raw sweet potatoes and add spices, melted butter, orange or lemon juice and flour. Our mixture has less liquid and less flour.

Hi Auntie Junie! Thank you for sharing this great recipe! I made it yesterday. Since I was only making one pudding, I used 2 sweet potatoes (just under 3 pounds), 2 cans of coconut milk (I forgot the water), 1cup of flour and 1 cup of sugar, and all the spices you listed. I downsized the spices from tbsp to tsp. The question I have is how long do I bake it in the oven for 1 pudding? I didn't get the cooked texture right because I wasn't sure how long to bake it, and I watched a few other videos that said bake at 350 degrees, so I ended up switching the heat back and forth. I baked it for a long time, but not 6 hours as your video suggested. Even though I didn't get the texture right, the flavor was really good! If you can offer any tips that will help me be more successful with the baking temp and time for one pudding, I would really appreciate it. Thanks!

Traditional sweet potatoe pudding is gluten free, dairy free and vegan same as ducuna, conke and cassava pudding. Jamaica sweet potato pudding is different from the other islands i have visited , if i find this rose water I will try it and the flour.

Good effort. But my mada use the grated coconut for the milk and by adding a little of the coconut flakes and a small coco makes it really really good. Also a dash of salt brings out the sweetness more.
