Chef, I follow all your videos here from US and love your cooking. I have a question, whenever I make Seek Kebabs on a seek (similar to the think square seekh that you have), they always faal off the seekh. I do it in a BBQ and not a Tandoor. So wanted to check how I can make seekh kebabs on a BBQ without breaking them.

The secrets are to grind twice or actually do the chopping everything together. Then when you are mixing the stuff up, do it in one direction. This makes the strands of protein coil around each other and the fibers in the vegetables and if you add any, the bread or grains.

Hello Chef, maine jab bhi chicken ya mutton ka keema banaya to wo itna geela hota hai ki seekh pe lag hi nahi pata aue seekh se gir jata hai. Chicken ko mixer-grinder me mince kar ke bhi wo geela hi banta hai. Please bataiye ki aisa kya karu jo keema aap ke videos jaisa bane. Please help.

Sir apne 3 galti kari hai 1st-chicken kabab machine me sirf ek hi bar peesna chhye isse kabab blkl maheen nhi hoga aur juicy b hoga aur kabab khane me zada maza ayega.(maine b ye kabab blkl maheen kia tha jisse kabab me maza nhi aya tha.. 2nd- kabab me pyaz nhi dali maheen karke aur na grm masala add kia jo ki must hai... 3rd- hamesha wo equipment use kariye jo kitchen me almost sare viewrs k paas available ho..
