My favourite Indian dish is Butter Chicken. In a very close second place is this one, CHICKEN TIKKA MASALA. This one is DAIRY FREE! My daughter is allergic to dairy so, I needed to change the recipes that I seen online. Hope you enjoy this as much as we do at home.
Recipe:
Marinade:
- 1 lb chicken thighs (boneless skinless)
- 1 cup of Daiya Plain yogurt
- 1/2 lemon squeezed
- 1 TBSP grated ginger
- 3 cloves of garlic minced
- 2 TBSP garam masala
- 1/4 - 1/2 tsp salt
Sauce:
- 1 can of whole tomatoes (blended)
- 2 medium onions diced (small)
- 1-2T avocado oil or other neutral oil
- 1-2 T vegan butter or margarine
- 1/2 tsp turmeric
- 1 tsp garam masala
- 1 tsp coriander powder
- 1 tsp cumin
- 1/2 tsp salt
- 1T Honey (optional)
- 1/2 cup non dairy yogurt or milk for extra creaminess
- 1/4 tsp cayenne pepper (optional for heat)
- 1T minced garlic
- 1T grated ginger
