It is called “ Otoshibuta(Drop-lid cover). We use a drop-lid cover to make the Japanese simmered dish.

I have lived in a japanese family and learned to use this process for cooking: "otoshi buta" which means "falling lid". I use it for example to cook carrots. I put the sliced carrots with spices, a few oil and a little few water, then cooking paper, then a plate a bit smaller than the pan pressing on the paper, then the normal lid of the pan and very small fire. The vegetables are cooked in their own juice. Delicious!!!!😋

Les couleurs sont magnifiques en automne...le jardin est toujours aussi beau! Eytant a plus de 9000 km de vous a la meme latitude, je constate que le paysage, les plantes, les fleurs sont pour la plupart similaires à ma region en France. Par contre les saisons evoluent beaucoup plus intensement et plus rapidement...Merci de vos partages.
