I've done the bucket thing for a few years but recently found clear totes with gaskets in the lid that latch. They hold my mid term bulk items in my spare bedroom on those big chrome shelving units. Once I need to open a bag, I transfer what's left into half gallon mason jars and vacuum seal for short term use and store the jars in my kitchen pantry. I've done this for five years now and haven't had any issues with pests

It seems to me that a lot of people are overcomplicating food storage. There's a big difference between short term and long term storage. If you're only going to keep the food for a year (maybe two) all you really need to do for most things is keep the bugs out of it and keep it from getting wet or too hot. A box of pasta that has a sell by date of a year from now will be just fine on the grocery store shelf for a year. If I buy it and take it home and keep it somewhere cool, dark, dry and protected from bugs, it's being stored in a much better environment than it would be at the store I bought it from. It'll easily reach it's expiration date without going bad or being compromised. For short term items, I just leave them in original packaging and put them in a 5 gallon bucket with an air tight lid. Usually I'll foodsaver the rice, and I put sacks of flour in a ziptop freezer bag just in case the package of flour leaks or something. Longer term items? Yeah, they need special treatment, but I think that storing rice for 20+ years isn't quite the point. If you have rice or pasta or anything sitting around for 20 years you aren't following the basic rules of eating what you store and rotating through your stores. Food storage is meant to be rotated through, eaten, and restocked. People that are stacking away buckets and buckets of food that they only plan on eating "when shtf" are not really following the best practices. I remember 2020 and the explosion of new prepper channels all of them had "prepper" somewhere in their name so you knew they were serious (sarcasm). These channels would show their basement, spare room, whatever FULL of newly bought items. They would spend $4000, $5000 or more filling up the shelves with food. Taking a uhaul to costco for food? Kinda ridiculous. All their videos were "hauls" or what the bought (look how much we spent), updated "pantry tours" (look how much we have) and regurgitated content from other channels that had been around for years (we have no original information and no discernment as to what info is legit or not). Most of those channels disappeared or stopped uploading after about a year or two. The ones that didn't had videos where they "cleared out expired foods" and restocked them. I daresay they missed the point of food storage entirely. Sorry for the novel of a reply.

I moved into a house with a basement last summer. The room I call "canning room" is where I have my canner and other things stored. I wanted food kept there, but my landlord has paint stored there and I heard food shouldn't be near paint. So on the other end, near my washer and dryer, there are lots of shelves. The humidity is decent, so I'm starting to store food there. I'm hoping to build up a good supply, starting with canned meat I'm making! Thanks for all your info!!!

Freeze all the flours, baking mixes and rice! Then store air tight. I lost a lot because I didn’t follow my own rule.

I freeze for minimum of 7 to 10 days. Then I spread bags out on counters for another 5 days to “dry”. Then I vacuum seal or place in Mylar bags with O2 absorbers. Store according. Short term or long term. Flour, rice, beans and pasta. All the above go through the process above.

Amen! I have never frozen any grains or flour, and I've never had any trouble with bugs whatsoever. I immediately put it into jars with tight fitting lids as soon as I bring it home, and it will stay on my shelf for years and years and years if necessary.

About seeds, the small seeds like sesame, flax, and chia - if left intact they should last at room temperature for a few years. I buy a 50 pound bag of whole flax seeds about every 5 years, and I've never had any spoilage, keeping them at room temp.

I have an oscillating fan going 24/7. The air circulation reduces dead spaces ripe for mildew and mold. It also cuts down on spiders as they hate air movement.

Decades ago, I kept getting mealworms. Although all I had was tins, some saran wrap over the top before closing prevented those stinking buggers. There are work arounds even if income is low.

Hi Leisa, I really went to town today. Actually I went to city today. An hour away to Costco and to Walgreens. I was at Costco to drop off my new eyeglass prescription and order new glasses, and to shop. Tomorrow I'm going to town to get chicken breasts that are on sale. We're in that swath that's supposed to get snow Monday and Tuesday. I'll be inside by then canning chicken. And I'll be canning bean and ham soup during my temporary incarceration during the snowstorm. I'm going to be making the most of my confinement.

The first few weeks of January is organization sale times at big box, lowes and home depot. It is the best sale of the year for the racks, and totes. Also Costco has chrome racks available in store, but their heavy duty are online only. We put the wheels on them, but we chained them to the walls. They have large carabiner that can be used to unlock them and move them, oh so very carefully, if need be. In a few places I have shelves 2 deep, which is a reason why we have wheels on them.

I learned by rial and error on flour storage. Luckily I only had 5 5lb bags that turned rancid. They were in mylar, oxygen absorber, bucket with gamma lids but stored in the garage. Dark and fairly cool but didn't work. They were in there for just over a year and 3 months past BB Date.

I use a chamber vacuum sealer with mylar bags, I'm converting an old pressure canner into a vacuum chamber for larger mylars and gallon glass jars. My small freeze dryer does an amazing job of vacuum sealing quarts or smaller jars and recycled pasta/pickle/jam jars (that have the original lids)...using them for cheese or vegetable powders is a benefit! Love to freeze dry any vegetable, powder it then mix into a meal is an additional benefit of freeze drying...you can custom mix!

Yeah, Florida, we have our own unique issues here. No basement or cellars. Humidity through the roof. Cockroaches galore. Ants everywhere. And sun. Today was a nice 71 and sunny. All not conducive when it comes to food storage. We drink coffee, lots of coffee. Everything, rice, beans, flour, grains, any dry goods go into those empty coffee containers. I wipe everything down with alcohol including the outside of the bagged goods like rice, and stuff them in with an oxygen absorber. We also use a moisture eliminator. We get them by the case brand named The Home Store.

my spare room is my pantry--one window with blinds and two evergreen trees in front--stays cooler all year round--i keep all my rice and beans plus my flour in food grade buckets with gamma lids--i put bay leaves in with the beans and rice--my flour i go through quickly so i do not worry so much about it--other things i put in plastic bins that seal --eg pasta and oatmeal--no problems so far!! but i learned most of this from you --so i thank you!!!-- store some things in jars--keep my yeast in the freezer so i think i am doing ok-- never quit learning from you -- your truly an angel !!!--i do not get the lines--whatever!!!

I use 4 color yard sale stickers to label my cans, bags & boxes. Pink stickers for the month since there's twice as many pink as the other colors & assign the Yellow= 2024, green=2025 & orange=2026 "best by" years. Makes it real easy to spot items that need used sooner than others.

I use my vaccum sealer to seal flour in 5 gallon buckets. The flour bag is not air tight so instead of using a Mylar bag I just put in the whole flour bag along with a 3000cc oxygen absorber and a bay leaf (discourages insects) The bucket will hold a 22lb bag of flour. I buy used buckets. They are food grade (held pickles) and were used only once. I get them off of Facebook Marketplace for $3 cdn with the lids. Thanks for the storage tips. I have a question about using these Muscle racks for store bought canned case foods. Many of the cases of veggies/meats still have the bottom part of the cardboard to hold them together. Can I leave them in those boxes (just like on the grocery store shelves) and stack them on top of each other for maximum use of each shelf? Some of these aluminum cans don't stack on top of each other very well without the cardboard container. If I leave them in the cardboard case box, I can get more on the shelf without them falling over onto another row of a different food category. What's your take on this please Leisa? Thanks in advance!

I think I have it right on the 5 gallon buckets...no more than 3 stacked high so the weight won't push down on the bottom bucket. Have a great weekend!

I found folding plastic crates at a local produce company. They are all the same size, but some have different side wall heights. They vary from 8 to 24 inches. They stack perfectly. Each crate holds about 2 cases of cans or canning jars. I can leave the end of the crate folded in so you can see the contents.

We, and I before we, have used cardboard of different sizes, shapes, and types to stack items in the pantry. I have only had problems with this in two instances. I lived in a part of the county that pretty much everyone had cockroaches one one typecof another whether they were aware of it or not. They were in the city (and county) water system, they or eggs came in on paper (and cardboard) food containers, they or eggs came in on paper bags from the grocery store despite the stores' warehouses having an aggressive pesticide spraying program of grocery bags (ugg...). Meally bugs were another problem. Pretty much every bag, box, and package from the grocery store went into a glass jar, coffee tin, or other when I lived there. All extra paper nd cardboard went out, the garbage was taken out after each meal, every time I left the house, and often was the first thing I did upon returning home. In another area I lived, they flushed the water systems (sewer I think) on a three year cadence. They would begin at one end of the city then return in the other direction which did kill a bunch of the vermin (primarily rats) but also had them climbing up and out of the system. Having recently come from the roach and meally worm area, I was already in a lot of glass and metal but we did come to have a problematic rodent which I will assume was a rat. Most of the food storage was on shelves decorating the living area but, I did have a few things in what was either a small bedroom or large closet that had clearly been visited by said rodent. For myself I out a little more in there 'cause i didnt want it in the general living space whike I secured plastic buckets, glass, and metal containers. That thing chewed holes in plastic containers and left gnaw marks on metal; partocularly in the pursuit of popcorn. I ended up putting the popcorn in heavy glass Vallasic pickle jars with old school metal lids. That thing actually gnawed and broke the glass just under the metal lid of one of those jars filled with popcorn. That was the last we saw any indicator of said rodent and even the big 'ole, inner city, mouser/ ratter cat became less interested in that room. (I knew it was big and although the cat was big and great, I had t been prepared to pair them off.) A friend of mine also had an invasion of those white grain moths in his big pantry closet in the kitchen. What a flipping mess those were to get rid of. It took him about 6 months. He had much of everything in open bags, boxes, and packets from the store and one day he opened that closet door to be met with a cloud of white moths. They eat through plastic bags, cardboard cereal containers, live in the garbage disposal, and vrryblikely quite away down the drainage pipes beyond the garbage disposal.

@@terryhenderson424 Thanks for your input and experiences with mice/rats/roaches. I'm stocked up on vaporub store brands to Vicks. They all hate the smell of eucalyptus, menthol and other ingredients in it. I'm just gonna take the tops off of the jars and set them into a spare bedroom I'm using as a pantry. It'll irritate their lungs and either die or leave my mobile home in the country. Very few people live in my neighborhood community and the other mobile homes are spaced far apart. Cinnamon and whole peppercorns work good too, but vaporub/chest rub is easier to handle and move around. Also lining shelves with aluminum foil or around the 4 legs/posts of the Muscle racks. Mice can't stand the smell or sound that foil makes. Sounds like you had either a field rat or opossum to chew through those metal lids. I've got about 10 jars but just a few will smell up the room with the door closed.

Leisa, great instruction. Keep teaching. I only disagree with you over nuts and cornmeal. Vacuum-sealed nuts in a jar will last several years. Nuts are harvested generally once a year.Those you buy 6 months after harvest are the same as those you bought AT harvest time. If you freeze them for a long time, you need to vacuum-seal them or they taste 'off'. Also, cornmeal.I have had no success keeping critters out of cornmeal without first freezing it.I let it stay out for a week after removing it from the freezer and have had no problems since.

Do you have tips / charts on which mylar bags to use (size/weight) and O2 absorbers? (I'm in the UK so they're not as common over here, so any tips before ordering them would be tremendous) Thank you 6:03

Well, I must confess I've been following the "freeze it for three days, then rest at room temp for three days, then vacuum seal" school. Especially rice and flour. Now I wonder where that practice originated? 🤔

I just had to pitch out a can of Italian bread crumbs because of bugs in them, because I kept them in the original container. You can bet the bread crumbs I'm making a special trip to the grocery store will be stored in a mason jar that's been vacuum sealed!
