Today we’re making Ayam Masak Lemak Cili Padi, or Chicken cooked in a Spicy Turmeric Coconut Cream. This is a traditional Malay dish best served with rice. It seems hard to make but it’s incredibly easy to whip up, uses minimal ingredients, but is full of flavour and fragrance. This is spicy, so it's favourite in my books.

Ingredients:
- 300 grams of chicken
- Blend together:
- 1 Whole Red Onion
- 3-4 cloves of garlic
- 1 inch ginger
- 1 inch fresh turmeric, or 1tsp of turmeric powder
- 1 lemongrass stalk, hard outer layer and top part removed
- 10-15 Cili padi or Thai Bird's Eye Chilies
- 2 cups water
- 200 ml of coconut milk
- 1 tbsp of salt to taste
- 1 tsp of sugar
- Kaffir Lime Leaves (optional)
