Hi guys. My name is Cristian and I live in Italy. I have seen a lot of videos with this salesman of japanese kitchen knives . I can assure you that here a knive like this you can't find or maybe you have to pay a lot of money. Is really very cheap and a reason must be. Thank you for your post!!!!

@@faverodefavero Sakai Naojirou. I assume they're made in Sakai (legally a knife cannot bear the name Sakai unless it's made in Sakai). It really looks like it's a completely stock removal knife, doesn't seem like there's any distal tapering (a step that contributes to cost), and the fact that it's not san-mai and made from mystery steel is probably why it's so cheap.

to easily think of it, maybe like the solid carbon steel used for replaceable boxcutter blades; quickly made, economic, sharp, but attracts rust like nothing else.. well I sharpen Olfa pen knife blade for carving and modeling and see no problem with the rust as long as its used often, holds sharpness, natural 砥石 is sold for like 50-500 yen in my country, using single blade for years because there's no reason to buy 1000円 replacement blade pack
Watched again an all steel or mono steel knife would be fun to try one out. Good price to.

Basically a knife made using stock removal. A very low-tech technique, but nonetheless effective, and doable for a hobbyist. The steel is probably very cheap, but since it's carbon steel it's going to be somewhat decent and could withstand abuse. We knife hobbyist can get snobbish about steel, we often forget that quite often performance difference could only be noticed when used in a professional environment. I think the best things to buy in Japan isn't the "good" knives, but specialty knives that will never make it into the inventory of western knife importers. Knife importers can and will buy all the nice knives, sometimes even commission exclusive lines from companies, but they wouldn't import specialty knives. They don't import whale knives, katsuo knives, or knives used at the local or wholesaler/processor level, because these knives aren't well known in the west so the market is very small.
